  1. Celiac.com 08/20/2020 - I am afraid that the following article might not make me very popular—if I had any popularity remaining after my last one! If you saw “The Paleo Template” here on these pages, you’ll recall that its ideas rest upon the theory that humans are healthiest when eating the types and classes of foods we’ve been consuming for the overwhelming majority of the roughly two and one half million years we’ve been on this earth. It wasn’t until very, very recently, in the grand scheme, that we’ve been consuming the products of agriculture: wheat; dairy; beans; and any foods that required more than the bare minimum of processing to make them edible. To greater or lesser degrees consuming these new foods isn’t good for us. As paleo nutritionist Ray Audette put it in his book Neanderthin (St. Martin’s Press, 2000), historically we’ve only consumed those items we could get if we were “naked with a sharp stick”: meat; certain vegetables; low glycemic; high fiber fruits; and certain nuts: hunter gatherer foods. Modern diseases are reactions to those foods that have only recently been added to our diets, gluten-containing foods being the most immediately obvious to this publication’s readership. Well, here’s one modern food that may deserve the same level of scrutiny as gluten-containing grains, even given its worship by what appears to be a totality of today’s nutritionists: our beloved chocolate. Now wait a minute. What kind of sadist would want to find fault with this giver of pleasure and apparent health panacea? Well, before we go there, let’s step back a moment to the naked with a sharp stick idea. Would chocolate, cocoa, cacao—or anything remotely similar—have been consumed by our paleo ancestors? No. Even in its purest commercial forms, it does require quite a deal of processing before it is edible: drying, fermenting, roasting, powdering, etc. Raw cacao proponents would disagree with this and, even though it is a tiny, tiny fraction of the market, there are raw, unpeeled, whole beans available for purchase. But let me get to a more important point. Chocolate, cocoa, cacao, in any form, was apparently discovered by native South Americans around 3000 years ago and didn’t make its way into the European diet until the 16th century, with widespread usage delayed until the Industrial Age a little more than 100 years ago. So if you’re a native of the tropical rainforests of South America, you’ve had a very short period of time for adaptation. If you don’t fit that description, you’ve had effectively zero time to adapt to this food. So what if it’s new? The so what is this: new foods—gluten-containing grains included—are almost always the cause of modern disease and as such deserve a closer look because of their novelty. Maybe chocolate’s ok to eat, maybe not. As mentioned above, it’s not “maybe” in current nutritional culture. Chocolate is lauded as the perfect health food. A simple search on Medscape.com yields more than 380 studies touting its benefits: they say it reduces blood pressure, decreases risk for pregnancy-induced hypertension, improves vasodilation, reduces platelet adhesion, reduces cholesterol, improves post-exercise workout recovery, improves insulin sensitivity, protects smokers’ hearts, improves endothelial function, even helps with diarrhea. And to top it off, it’s apparently a wonderful aphrodisiac. Turn on your television or radio, open a newspaper or log onto an Internet site and you’re sure to see a thousand more benefits claimed. We want this stuff to be good for us. Before we go on, I want to take another step back, change the subject entirely again, and talk about depression. Wikipedia defines it as “a mental disorder characterized by a pervasive low mood and loss of interest or pleasure in usual activities.” Ron Hoggan points out in his excellent article “Food Allergies and Depression,” that this condition is a “very common symptom of celiac disease,” and by extension gluten intolerance. Why did I suddenly change the subject to depression? Here’s why: a new study out of Australia (Gordon Parker, Isabella Parker, Heather Brotchie, Mood state effects of chocolate, Journal of Affective Disorders 92, 2006, 149-159) shows that chocolate may actually cause and/or deepen depression. The study shows a link between a worsening of depressive symptoms and chocolate consumption for those “emotional eaters” who are attempting to self-medicate. As the authors put it in the conclusion of the study: "When taken in response to a dysphoric state as an 'emotional eating' strategy it may provide some transient ”comforting” role but it is more likely to prolong rather than abort the dysphoric mood. It is not, as some would claim, an antidepressant." Now we already know that celiacs and the gluten intolerant are very prone to depression. We now know that chocolate may deepen depression. But, since there’s not a whole lot of data out there linking mood, chocolate, and gluten intolerance, I decided to do a personal experiment. Of course, the data is anecdotal, but I think informative and revealing. I regularly eat a diet free of gluten, diary, legumes, and artificial fats and had been very faithful to the regimen for a few months. For the purpose of the experiment I consumed one bar of Green & Blacks 70% Cocoa Content Dark. I quickly felt contentment, even mild euphoria. I was able to concentrate for quite a long time and actually did quite a bit of research for this article. But that evening I experienced a shallow, dream-filled sleep before awaking in a fog early the next morning. I had some gas, bloating, and was itchy with what I’ll call proto-hives. Within a few hours I had gained almost a pound of water weight and felt as if I had a hangover, mild depression. And, boy, was I irritable! I also noted mild shakes and muscular tension and some knots. Again, one guy = anecdotal evidence. But this doesn’t sound at all like a food that’s good for you! As a fellow gluten intolerant, I’d like to challenge you to the same experiment. Pick up a copy of a book I recommended in my last article, Loren Cordain’s The Paleo Diet (Wiley, 2002), and follow its dietary regimen for three weeks to eliminate from your system whatever non-paleo foods you might have floating around in your body. Then try a bar of quality dark chocolate and send me an email to tell me how it made you feel. Truth is, my reaction surprised me. But should it have? Chocolate is composed of foreign substances only very recently introduced into the human diet and apparently causes an immune system reaction similar to that caused by gluten. And, like the psychoactive effects felt when one ingests gluten, the initial euphoria and increased attentiveness caused by chocolate wears off relatively quickly and, for me at least (and I suspect for quite a few of the gluten intolerant) serious after effects remain. Maybe this isn’t the miracle food it’s purported to be.

Is Hu Chocolate gluten-free and safe for people with celiac disease? The short answer is yes. If you're a candy bar lover looking for a reliable source of gluten-free candy bars, it's always best to look for bars that specifically marked "gluten-free." All Hu Dark and Milk Chocolate bars, baking chocolate and snack products are labeled as gluten-free. They are gluten-free by ingredient and allergen disclosures, making them safe for people with celiac disease.   4. Celiac.com 10/26/2023 - We get a lot of questions about foods and food products. We've recently gotten a bunch about chocolate. Lately questions seem to be about Mr. Goodbar. Mr. Goodbar is a candy bar made from crunchy, smooth and sweet milk chocolate with the crunch of peanuts, and is produced by The Hershey Company. Is Mr. Goodbar gluten-free and safe for people with celiac disease? The short answer is no. Although the ingredients in Mr. Goodbar contain no gluten, Hershey does not list it on its gluten-free range of products as “being fully evaluated and qualify as gluten-free using standards established by the US Food and Drug Administration (FDA)." Mr. Goodbar ingredients include: Milk Chocolate, Sugar, Cocoa Butter, Chocolate, Skim Milk, Milk Fat, Lecithin, Salt, Natural Flavors, Peanuts Mr. Goodbar does not appear on our list of popular gluten-free candy bars. But, it does appear on our UNSAFE HALLOWEEN CANDY LIST. Because of this, Mr.Goodbar is not regarded as gluten-free. There may be some cross-contamination issues with their processing/packaging of Mr. Goodbar candy bars.

  7. Celiac.com 04/01/2023 - I confess. I’m a chocoholic! My favorite dessert is anything chocolate, but when I need a good, quick chocolate “fi x”, I often turn to this recipe. I’ve been making it for about 20 years now and, although it’s gone through many evolutions, it never fails to please. My fondness for chocolate dates back to my childhood when almost all of our desserts were chocolate. We enjoyed chocolate cakes, chocolate pies, chocolate puddings, and chocolate cookies––but one of my favorites was chocolate brownies. I’ve recreated that recipe for you here—with a few wickedly decadent embellishments. Luckily, my husband is fond of chocolate too and will look for any excuse to eat it. Upon learning that chocolate comes from the cocoa bean––which is actually a legume–– he announced that he would increase his vegetable consumption by eating more chocolate! Whatever your excuse, Americans apparently LOVE chocolate––on average, we consume about 10-12 pounds of it each year. But before you head to the kitchen, here are a few tips to assure success: Use the best quality cocoa possible. I’m particularly fond of Ghirardelli unsweetened natural cocoa. Look for it at your local health food store. I also like Scharffen Berger natural cocoa, which can be found at kitchen or gourmet food stores. If you can’t fi nd these brands, I recommend Hershey’s natural cocoa which is available at grocery stores. Be sure to use natural cocoa, not Dutch-processed or European-style cocoa. I get many questions on this topic so here’s the explanation: Natural cocoa is always acidic. Dutch processed cocoa is treated to make it alkaline instead of acidic. The baking powder in this particular recipe is designed to balance the acid in the natural cocoa. If you use Dutch processed cocoa, the PH level is “unbalanced” and the recipe won’t work. Carol Fenster’s Gluten-Free Chocolate Brownies Preheat oven to 350˚. Grease 8-inch square nonstick pan. Stir dry ingredients together (fl our to xanthan gum). Set aside. In large mixing bowl, beat butter, sugars, vanilla, and egg with electric mixer on medium speed until well combined. With mixer on low speed, add dry ingredients and hot water. Mix until just blended. Mixture will be somewhat thick. Stir in nuts and additional ingredients, if using (see options below). Spread batter in prepared pan with wet spatula. Bake 20 minutes. Because of the additional ingredients, you will need to increase pan size to 11 x 7 or 13 x 9-inch pan. Bake as directed, extending baking time by 5 to 10 minutes, or until thoroughly baked.   11. Celiac.com 08/26/2022 - Everyone who must be on a gluten-free diet usually gets asked about what regular gluten-containing foods they miss the most. In my case, one of those foods has always been a Kit Kat candy bar, which, unfortunately contains wheat. Recently, however, I had the chance to try a Trupo Treats Vegan & Gluten-Free Mylk Chocolate Crispy Wafer Bar, and was completely blown away by how great it was, and yes—they are even better than a Kit Kat! The Trupo Treats wafer bars are larger, and use lighter and more delicate wafers that are stacked up in layers that are separated by “Mylk” chocolate, which tastes just like actual milk chocolate, even though their bars are 100% vegan, as well as gluten-free. It’s great to see a new company that is dedicated to making plant-based treats which also happen to be free from the common 8 allergens (except coconuts), and their bars also contain 20% less sugar that the leading brand, are kosher, non-GMO, and all ingredients are fairly traded. It’s clear to see why Trupo Treats calls themselves the “Vegan/Gluten-Free Wafer Kings,” and thanks to them I can now finally cross Kit Kats off of my list of things that I miss the most after going gluten-free—and this just made my day! One of the most common product questions we see is: Are Snickers candy bars gluten-free and safe for people with celiac disease? The short answer is yes! Currently, all flavors of Snickers, Snickers Dark bars, Snickers fun size and Snickers mini's are gluten-free, according to website for parent company Mars. The longer answer is that it's always wise to check, as product formulation can change, sometimes suddenly. Look to Manufacturers for Gluten and Allergen Information Manufacturers are required to list any allergens on the product label. Mars lists allergen information for each product they produce. For any given Mars product, you can learn more by going to the Snickers website. Once there, click on any product. Scroll down and click the button that says "Ingredients and Dietary Suitability." You will find ingredients and allergens listed for that product. Remember, even this information is subject to change, so double-check if you're unsure. Gluten-Free Status Can Vary by Product Size A size difference in a Snickers or other candies can sometimes mean a change in the gluten-free status. Always check the ingredients for minis, bite sized, regular, jumbo and popable versions of your favorite candies. Each version can be different, and they may change suddenly. Some versions may be gluten-free or gluten-safe, while others are not gluten-free or gluten-safe. This rule applies for almost all foods. Of course, avoid eating anything you’re not sure about, or which doesn’t agree with your system. Trust your gut.   13. This recipe comes to us from Valerie Wells. Cream: 1 stick (½ cup) butter 1 tablespoon shortening 1 ½ cup plus 3 tablespoons sugar Add & beat well: 2 jumbo eggs** Add: 1 cup unsweetened pureed fresh zuchinni* 1 ½ cup Gluten Free Flour Mix (any kind) ½ cup unsweetened cocoa powder ½ teaspoon xanthan gum ¼ teaspoon salt 1 teaspoon baking powder ½ teaspoon soda Beat until smooth. Bake in greased & floured 8" x 8 square baking pan at 350F for 45 minutes (If you bake in glass, reduce the heat by 25F). I like my cakes semi sweet. If you prefer a sweeter cake you can substitute some of the cocoa powder with corn starch. The recipe originally calls for ½ cup corn starch & I substituted cocoa powder for the corn starch. I dont know whats so special about this recipe, but it never fails. Im not a great baker, but this recipe is helping me improve my reputation! *I pureed & froze tons of zucchini this summer in one cup containers. The original recipe calls for applesauce. I believe applesauce or any pureed fruit would work equally well. ** If you dont have jumbo eggs, you can use 2 large eggs & an extra egg yoke or egg white.
  14. It isn't often that I get really excited about a product that I try—but I am really excited about the LÄRABAR ÜBER Dark Chocolate Raspberry Gluten-Free Bar. When it comes to bars, most of them tend to be on the overwhelming side, and contain way too much of everything—too much sugar, chocolate or other flavors tend to overpower everything else. LÄRABAR's ÜBER Dark Chocolate Raspberry bar, however, was amazingly well-balanced, and had the perfect amount of everything. It had lots of almonds and cashews that were very fresh and bound together with a sweet, salty mixture of honey and raspberry flavors—then topped off with large chunks of unsweetened dark chocolate. The combination of flavors was just amazing. I am also fussy about the texture of any bars I try. This "crunchy nut bar" had a perfect balance—the nuts were not too hard because they were fresh, it was crunchy but not too crunchy, and it was slightly chewy—but not too chewy because it didn't stick to my teeth or feel like it was loaded with too much sugar. Guthrie's Original Sin In A Tin Chocolate Pate Dessert is a wonderfully decadent treat that is perfect after any meal—it will make any occasion feel like a special one—including birthdays, holidays or any other day that you would like to make more memorable.   16. Celiac.com 12/03/2021 - We get a lot of questions from celiac community members wondering if certain products are gluten-free. One question we see a lot is about chocolate. Specifically, is Lindt Chocolate Bear gluten-free and safe for people with celiac disease? The question refers to the numerous chocolate holiday bears put out by the Lindt chocolate company. Our search of the Lindt company website turned up six edible bear chocolate products. But a quick glance at the ingredients shows that the answer is NO. Many Lindt chocolates contain barley malt, or barley malt powder as an ingredient, and the Lindt Chocolate Bear is no exception. The ingredients for the Lindt chocolate bears lists barley malt powder. For this reason, the Lindt Chocolate Bear is not considered gluten-free, or safe for people with celiac disease. This salacious marriage of coconut, pecans, and silky chocolate will have you holding onto yourself, and making all kinds of happy eating sounds. Just grab yourself a pre-made gluten-free pie crust, or make your own from scratch, with this gluten-free pie crust recipe. Then grab your other ingredients, and follow the directions below for what promises to be a gluten-free affair to remember. Ingredients: Makes One 9-inch gluten-free pie crust. Filling: 4 ounces German sweet chocolate, chopped 2 ounces unsweetened chocolate, chopped 1 can (14 ounces) sweetened condensed milk 4 large egg yolks 1 teaspoon vanilla extract 1 cup chopped pecans Topping: ½ cup packed brown sugar ½ cup heavy whipping cream ¼ cup butter, cubed 2 large egg yolks 1 cup sweetened shredded coconut 1 teaspoon vanilla extract ⅓ cup chopped pecans Directions: Heat oven to 350°. In a microwave, melt chocolates in a large bowl; stir until smooth. Allow melted chocolate to cool slightly. Whisk in milk, egg yolks and vanilla, and then stir in pecans. Pour into the pre-baked gluten-free pie crust. Bake 16-19 minutes or until mixture is set. Set aside to cool for 1 hour on a wire rack. Meanwhile, in a small heavy saucepan, combine brown sugar, cream and butter. Bring to a boil over medium heat, stirring to dissolve sugar. Remove from heat. In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Cook 2-3 minutes or until mixture thickens and a thermometer reads 160°, stirring constantly. Remove from heat. Stir in coconut and vanilla; cool 10 minutes. Pour over filling; sprinkle with pecans. Refrigerate 4 hours or until cold. Serve chilled.

  22. I just was looking at some chocolate I've been buying for the past year, barkThins, and I now see on the label: May contain wheat. I sometimes have been buying things not labelled gluten free, but checking ingredients and then usually double checking on the internet to make sure it at least has the label: no known ingredients with gluten are in the item. I guess this is a good example of why you need to check the label every time and maybe is a good example of sticking to things with a Gluten Free stamp of some kind on the package. I checked chocolate about a year ago and almost none of the items had gluten in them, but today I checked a bunch again and almost all of them either had Wheat as an ingredient or a May contain Wheat warning. I finally did find a brand of chocolate gluten free: Zazubean, a company located in Vancouver.
