Celiac.com 11/24/2023 - Bursting with the warm and robust flavors of chickpeas in a tantalizing blend of spices, this gluten-free rendition of the classic Chana Masala is a celebration of both taste and dietary inclusivity. Chickpeas are simmered in a fragrant tomato-based sauce infused with ginger, garlic, and an array of spices, create a hearty and satisfying experience for your palate. Whether you're adhering to a gluten-free lifestyle or simply craving a comforting bowl of Indian goodness, this Gluten-Free Chana Masala is an invitation to relish the joy of authentic flavors. Ingredients: 4 servings 1 large red onion; plus more thinly sliced for serving, as desired 2 plum tomatoes 2 15-ounce cans chickpeas (do not drain) 3 tablespoon vegetable oil 1 teaspoon cumin seeds 6 garlic cloves, finely grated 1 1" piece ginger, peeled, finely grated 2 teaspoon gluten-free garam masala 2 teaspoon Diamond Crystal or 1¼ teaspoon Morton kosher salt 1 teaspoon ground coriander ½ teaspoon amchur (dry mango powder) ½ teaspoon ground gluten-free turmeric ½ teaspoon Kashmiri or other red chile powder ⅛ teaspoon ground cinnamon Juice of ½ lime ¼ cup chopped cilantro, plus leaves with tender stems for serving 2 tablespoon unsalted butter Steamed rice, gluten-free naan, or crusty gluten-free bread Step 1 Grate 1 large red onion on the large holes of a box grater; set aside. Cut ends off 2 plum tomatoes and grate flesh down to skins; discard skins. Set aside separately. Step 2 Bring two 15-oz. cans chickpeas with their liquid to a boil in a medium saucepan; cook, stirring occasionally, until chickpeas swell slightly and are a bit lighter in color, 10–15 minutes. Remove from heat. Step 3 Meanwhile, heat 3 tablespoon vegetable oil in a large skillet over medium. Cook 1 teaspoon cumin seeds, swirling pan, until seeds start to pop and sputter, 10–20 seconds. Add 6 garlic cloves, finely grated, one 1" piece ginger, peeled, finely grated, and reserved grated red onion. Cook, stirring often, until most of the water has evaporated, 7–9 minutes. Step 4 Add reserved grated tomatoes to skillet and cook, stirring, 1 minute. Add 2 teaspoon garam masala, 2 teaspoon Diamond Crystal or 1¼ teaspoon Morton kosher salt, 1 teaspoon ground coriander, ½ teaspoon amchur (dry mango powder), ½ teaspoon ground turmeric, ½ teaspoon Kashmiri or other red chile powder, and ⅛ teaspoon ground cinnamon. Cook, stirring, until fragrant and color deepens slightly, about 2 minutes. Step 5 Add chickpeas with their liquid to pan, reduce heat, and simmer, stirring often, until mixture thickens and takes on a slightly shiny appearance as the oils start to separate, 10–15 minutes. Stir juice of ½ lime, ¼ cup chopped cilantro, and 2 tablespoon unsalted butter into chana masala. Step 6 Divide chana masala among bowls and top with cilantro leaves with tender stems and sliced red onion, as desired. Serve with steamed rice, naan, or crusty gluten-free bread.

This recipe for stuffed zucchini is a wonderful marriage of sausage filling, tomato sauce, and cheese. It's a great way to get more vegetables into the diet, and it's delicious. Serve with toasted gluten-free garlic bread and a salad for a satisfying summer meal. Ingredients: 3 medium zucchini 1 pound Italian style pork sausage 1 cup dry gluten-free bread crumbs or gluten-free panko ½ cup grated Parmesan cheese 1½ tablespoons Italian seasoning 1 clove garlic, minced 1 (32 ounce) jar spaghetti sauce ½ cup shredded mozzarella cheese Directions: Heat the oven to 350 degrees F (175 degrees C). Trim stems from zucchini and slice lengthwise. Scoop out seeds and place them in a large bowl. Add sausage, bread crumbs, Parmesan cheese, and garlic. Add salt, pepper and Italian seasoning, and mix to combine. Stuff sausage mixture into the squash, and arrange in a 9x13-inch baking pan. Pour spaghetti sauce over the top and cover with aluminum foil. Bake in 350 F oven until sausage is browned and cooked through, about 45 minutes. Remove foil and sprinkle with mozzarella cheese; continue to cook until cheese is melted and bubbling, about 15 minutes. Serve hot with gluten-free garlic bread and salad.

  4. Celiac.com 09/02/2023 - Zucchini and yellow squash noodles are gluten-free, and offer a great way to get more vegetables in your diet. They also make a tasty substitute for spaghetti. In this version, there is a delightful twist with an avocado pesto sauce. Ingredients: 2-3 medium zucchini (1½ pounds), trimmed Yellow squash (1½ pounds) ¾ teaspoon salt, divided 1 ripe avocado 1 cup packed fresh basil leaves ¼ cup unsalted shelled pistachios 2 tablespoons lemon juice ¼ teaspoon ground pepper ¼ cup extra-virgin olive oil plus 2 tablespoons, divided 3 cloves garlic, minced 1 pound raw shrimp (22-25 count), peeled and deveined, tails left on if desired 1-2 teaspoons Old Bay seasoning Directions Using a spiral vegetable slicer or a vegetable peeler, cut the zucchini lengthwise into long, thin strands or strips, and do the same with the yellow squash. Stop when you reach the seeds in the middle (seeds make the noodles fall apart). Place the zucchini and yellow squash "noodles" in a colander and toss with ½ teaspoon salt. Let drain for 15 to 30 minutes, then gently squeeze to remove any excess water. Meanwhile, combine avocado, basil, pistachios, lemon juice, pepper and the remaining ¼ teaspoon salt in a food processor. Pulse until finely chopped. Add ¼ cup oil and process until smooth. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add garlic and cook, stirring, for 30 seconds. Add shrimp and sprinkle with Old Bay; cook, stirring occasionally, until the shrimp is almost cooked through, 3 to 4 minutes. Transfer to a large bowl. Add the remaining 1 tablespoon oil to the pan. Add the drained zucchini and yellow squash noodles and gently toss until hot, about 3 minutes. Transfer to the bowl, add the pesto and gently toss to combine.

These grilled polenta crackers are the perfect treat. Oh, and they happen to be vegetarian. You're welcome. Ingredients: 1 tube, 24 ounces, prepared polenta, plain or sun-dried tomato flavor, cut into 1/2-inch slices ¼ cup extra-virgin olive oil, eyeball it 3 roasted red peppers, drained well, 1 large jar, 16 ounces ½ cup kalamata black olives, pitted 2 tablespoons capers ¾ cup flat-leaf parsley, a couple of handfuls ½ white onion 1 clove garlic ½ teaspoon red pepper flakes Directions Heat grill pan to high. Slice polenta and brush lightly with oil. Grill 2 or 3 minutes on each side to score the cakes and warm them. Place peppers, olives, capers, parsley, onion, garlic and red pepper flakes in processor and pulse the power to chop salsa. Top each slice of polenta with a spoonful of salsa and serve.

They are gluten-free, easy to make, easy to eat, and deliver big flavor. They'll make a great addition to your next summer gathering. Ingredients: Vegetables: 1 large or 2 small eggplants, unpeeled, cut into 12 (½-inch thick) slices 16 medium asparagus spears (about 1½ pounds), trimmed to 5-inch lengths Extra-virgin olive oil, for drizzling Salt and freshly ground black pepper Filling: 1 (15-ounce) container whole milk ricotta cheese ½ cup chopped fresh basil ½ cup grated Pecorino Romano Zest and juice of 1 large lemon Salt and freshly ground black pepper Directions: Place an oven rack in the center of the oven. Heat the oven to 200 degrees F. Filling: In a small bowl, mix together the ricotta cheese, basil, Pecorino Romano, lemon zest, and lemon juice until smooth. Season with salt and pepper, to taste. Vegetables: Place a grill pan over medium-high heat, or heat a gas or charcoal grill. Drizzle the vegetables with olive oil and season with salt and pepper. Grill the eggplant until tender, about 4 minutes each side. Grill the asparagus for 3 to 4 minutes, turning occasionally until crisp-tender. Cool asparagus on a plate. When cool, cut the asparagus in half crosswise. Assembly: Place 4 slices eggplant on a work surface. Spread each with 2 to 3 tablespoons of the ricotta mixture. Line 4 pieces of asparagus, side-by-side, on top. Place another slice of eggplant on top and repeat the layers. Top each napoleon with a slice of eggplant and place on a small baking sheet. Bake about 10 minutes, and serve warm.

This version is a happy marriage of eggplant, zucchini, tomatoes, yellow squash, green and yellow bell peppers, and other vegetables and spices. It's perfect over rice, or as a side to your favorite gluten-free pasta. Ingredients 1 onion, sliced into thin rings 1½ cloves garlic, minced ½ medium eggplant, cubed 1 zucchini, cubed 1 medium yellow squash, cubed 1 green bell peppers, seeded and cubed ½ yellow bell pepper, diced ½ chopped red bell pepper 2 Roma (plum) tomatoes, chopped ¼ cup olive oil ½ bay leaf 1 tablespoon chopped fresh parsley 2 sprigs fresh thyme salt and pepper to taste Directions Heat 1½ tablespoon of the oil in a large pot over medium-low heat. Add the onions and garlic and cook until soft. In a large skillet, heat 1½ tablespoon of olive oil and sauté the zucchini in batches until slightly browned on all sides. Remove the zucchini and place in the pot with the onions and garlic. Sauté all the remaining vegetables one batch at a time, adding 1½ tablespoon olive oil to the skillet each time you add a new set of vegetables. As each batch becomes done, add it to the large pot. Season with salt and pepper. Add the bay leaf and thyme and cover the pot. Cook over medium heat for 15 to 20 minutes. Add the chopped tomatoes and parsley to the large pot, cook another 10-15 minutes. Stir occasionally. Remove the bay leaf and adjust seasoning. Serve over rice, or as a side to your favorite gluten-free pasta.

I made three of them the other night for my gluten-eating friends, and each one of them came out looking just like the lovely picture on their box. Grilled spring onions go great with Mexican food, steak, chicken, or ribs. Whether you like a couple on side, or a whole bunch to yourself, grilled spring onions are a fresh, nutritious way to experience the glorious, savory flavors of spring. Ingredients: 1 bunch spring or green onions Olive oil, or vegetable oil Fine sea salt, to taste Freshly ground black pepper, to taste Lemon wedges, optional Directions: Heat a gas or charcoal grill to medium-high. Trim off and discard any wilted parts at the top of the onions. Carefully cut away the roots at the bottom of the onion, making sure the bulb stays together and the onions stay in one piece. Generously brush the spring onions with olive oil or vegetable oil. Put the spring onions on the hot grill and cook them about 5-7minutes on one side, until grill marks appear. Then turn the onions once, and continue cooking until the onions feel fork tender all the way through, about 15 minutes total cooking time. Sprinkle the grilled spring onions with salt and freshly ground black pepper to taste. This recipe for English style mushy peas caught our eye, and has become a regular when we make our Rice Chex gluten-free fish and chips. Can you use fresh peas? Sure, but frozen peas make life easier, and actually turn out quite nicely. Ingredients: 1 (10 ounce) package frozen green peas ¼ cup heavy cream 1 tablespoon butter ½ teaspoon salt ½ teaspoon freshly ground black pepper Directions: Bring a shallow pot of lightly salted water to a boil over medium-high heat. Add frozen peas, and cook for 3 minutes, or until tender. Drain peas, and transfer to a blender or large food processor. Add cream, butter, salt and pepper to peas, and process until blended, but still thick with small pieces of peas. Adjust seasonings to taste, and serve immediately.

  17. Celiac.com 10/29/2020 - If you're looking for a delicious, nutritious, gluten-free addition to your grill repertory, then these cauliflower steaks with garlic-herb chimichurri are just perfect. The cauliflower steaks can be served as a stand alone vegetarian dish, or as a side to a juicy beef steak. Cut thick steaks out of the center of the cauliflower heads, put them on a well oiled sheet pan, roast them to perfection, and hit them with some chimichurri when they're done. You're welcome. Ingredients: 1 large head cauliflower (about 3 pounds) 3 tablespoons finely chopped flat-leaf parsley 2 tablespoons finely chopped fresh oregano 2 tablespoons finely chopped fresh thyme 3-4 garlic cloves 2 tablespoons water 2 teaspoons sherry vinegar 1 teaspoon finely chopped jalapeño pepper 1 tablespoon olive oil ¾ teaspoon salt, divided ½ teaspoon paprika Olive oil spray Freshly ground pepper to taste Directions: Combine olive oil, garlic, jalapeño and ¼ teaspoon salt in a small saucepan or skillet. Cook over medium heat about 2 minutes, until the garlic starts to sizzle, and give off a good aroma. Be careful not to let the garlic turn brown. Remove from heat and stir in oregano, thyme, water, vinegar and paprika. Cover and set aside. Heat oven to 450F. Line a baking sheet with aluminum foil, and coat with cooking spray. Remove any outer leaves from the cauliflower, but leave the stem intact. Place on a cutting board, stem-side down. Some people use a large chef's knife, I like to use thin bread knife, but either way, cut cauliflower into flat ¾-inch-thick slices. (Save the remaining cauliflower florets for another day). Place slices on the baking sheet with the cut surfaces touching the pan. Coat the cauliflower with cooking spray and season with the remaining salt and pepper. Roast the cauliflower, gently turning once halfway through, until browned and the stems feel tender when pierced with a fork, about 25 to 35 minutes. Just before serving, stir parsley into the reserved herb sauce and season with pepper. Serve the cauliflower steaks with the chimichurri sauce.

Ingredients: 8 slices crusty gluten-free bread, preferably sourdough (½-inch thick), lightly toasted 4 small red beets, scrubbed 4 small golden beets, scrubbed 4 ounces soft goat cheese, at room temperature 2 tablespoons milk 1 tablespoon extra-virgin olive oil, plus more for garnish 1 tablespoon white balsamic vinegar ¼ teaspoon salt 1 teaspoon flaky sea salt 1 ground pepper to taste 1 teaspoon shelled sunflower seeds, as desired Directions: Bring 1 inch of water to a boil in a large saucepan fitted with a steamer basket. Add beets, cover and steam until tender, 10 to 15 minutes. Let stand on a clean cutting board until cool enough to handle. Rub off the skins with your fingers or a paper towel. Cut the beets into wedges or slices. Transfer to a bowl and toss with oil, vinegar, salt and pepper. Stir goat cheese and milk in a medium bowl until smooth. Season with pepper. Spread about 2 tablespoons of the mixture on each piece of toast. Top with some of the beets and garnish with flaky salt and sunflower seeds, as desired.
  19. Hello everybody. I frequently used this forum prior to being diagnosed and appreciated every bit of advice and similar experiences I could find. So I've created an account to give back and tell my story, in the hope that if someone out there stumbles across my post one day, maybe it can offer reassurance as did so many others on here for me. I am a 26 year old female diagnosed with coeliac disease (by blood test and endoscopy - results of the latter came yesterday). Otherwise healthy. I have been eating gluten free for 2 weeks (since endoscopy was completed). No noticeable improvements yet but I guess it's early days! Symptoms began in June 2019 when I started eating a vegetarian diet. I guess I could have had coeliac for longer than this, but the fact I had dramatically changed my diet led me to ignore my symptoms for longer than I may have ordinarily. Looking back, I can see I was incorporating a lot more bread, pasta cous cous etc. into my diet, and it was over the next few months I really noticed the following: - Diarrhoea and very loose stools, particularly in the mornings - Weight loss - Stomach pain (although not drastically painful) - Occasional bloating - Increased anxiety and low mood, tearfulness, irritability - General fatigue and tiredness - Blood test showed anaemia I went for a tTG blood test in October and was told it was extremely likely I had coeliac disease. I was shocked! I was expecting I had IBS or my diet or anxiety were causing the symptoms. I was also quite worried about cancer. I didn't want to 'get my hopes up' that there was a less concerning explanation for my symptoms. It also felt like such a coincidence to have happened after the diet change. So at this point I stopped the vegetarian diet, and continued to eat gluten in anticipation for the endoscopy. Over the next few months the symptoms above persisted (despite reverting back to my usual meat and dairy contained diet, so I was more convinced here that something else was at play!) I also noticed other symptoms which I cannot say 100% are due to coeliac, but ones I attributed to coeliac in some way (i.e. lacking vitamins). These are the symptoms I would extensively search for on this forum to try and see if anyone else had anything similar: - Twitches in my upper and lower eyelids - Occasional tingles in my face, fingers etc. These were very intermittent. - A very itchy, stinging anus after bowel movements and a very slight leak 30-60min after bowel movements. Even after wiping clean, around an hour later I would find I needed to wipe a small amount again. I have really struggled with this one and have not seen much discussion about it. I have been examined down there and been told there are no hemorrhoids, lumps or any concerns etc. So I am hoping this is coeliac related and with general gut repair and health improvements, this might calm down. I would also be really interested to hear from anyone who suffered with this. In addition, whether anyone suffers with this due to a lactose intolerance or intolerance to other foods etc - eg onions/ curries. I am wondering whether to omit certain foods. - Breast pain, particularly a few weeks before my period. I feel this is a normal hormonal symptom to experience but it has become more noticeable My endoscopy was in January 2020 (6 months after noticing symptoms). I got the results yesterday - confirmed coeliac and showed no other problems. I am due to see a dietician and have a bone density scan soon. I am now looking for any tips on how to aid recovery, wondering what vitamins are best to take and what foods are tasty to eat! So that's my story. Sorry for the length of the post! Hope it might help anyone with similar symptoms wondering 'is this coeliac' feel a bit reassured that it might be. Happy to answer questions of anyone who has yet to receive a diagnosis. I was very stressed and anxious during the lead up to all my tests and results because I was internally quite concerned I had cancer. So now being on the other side and able to focus on 'yes this is my diagnosis and let's manage this and try to make the best of it!' I would like to help anyone feeling concerned. Thanks for reading.   20. Celiac.com 09/07/2019 - With fall just around the corner, and plenty of delicious summer vegetables still on hand, this vegetarian chili is easy to make and delicious to eat. It's guaranteed to leave plenty of smiling faces at the table. Ingredients: 3 tablespoons olive oil ½ cup chicken broth ¼ cup chili powder 1 tablespoons ground cumin 1 teaspoon salt ½ teaspoon ground cayenne pepper, optional 8 oz. fresh tomatillos 1 medium zucchini, diced 1 cup diced onion 2 tablespoons minced garlic 1 can sweet corn kernels, fresh, canned or frozen 1 medium red bell pepper 1 medium green bell pepper 1 cup thinly sliced carrots 2 cans red, black or pinto beans 1 can tomatoes in purée, tomatoes coarsely chopped 1 cup diced tofu (Optional) Directions: Heat oil in a large stock pot over medium heat. Add onion and cook 2 to 3 minutes, stirring, until onion starts to soften. Add garlic and stir until garlic becomes fragrant. Add red and green bell peppers and carrots and cook about 5 minutes, stirring often, until carrots soften a bit. Add chili powder, ground cumin, salt and ground red pepper and cook and stir 1 minute. Add tomatillos and zucchini and cook about 10 minutes, stirring often, until tomatillos get soft. Stir in remaining ingredients. Bring to a boil, reduce heat to low, cover and simmer 20 minutes. Uncover and simmer another 10 minutes, stirring occasionally, until sauce thickens and vegetables are tender. Serve with your favorite gluten-free bread, crackers, or tortilla chips.
