Key Lime Pie

I finally made a Key Lime pie, I've been wanting too for a long time. This pie is fantastic.

Just use a gluten-free crumb pie crust. It takes 2 cans of sweetened condensed milk.  I used a garlic press to squeeze the juice out of about 20 key limes. After you strain the seeds out, the pie is easy and fast to make. Mine baked for 8 minutes. Top with whipped cream.

I'm a glutener so I used graham crackers but I made my gluten-free dd one with chocolate chex cuz I was out of rice chex. I'm sure it would be great with gluten-free vanilla wafer crumbs too.

I LOVE key lime pie but unfortunately, here in the midwest we can't get key limes. Regular limes just won't do it. :(

gluten-free since June, 2011

Can't eat soy, corn, or foods high in salicylates.

Nightshades now seem to bother me too.

 

BUT I CAN STILL PLAY MY GUITAR AND THAT"S ALL THAT MATTERS!
