Hi y'all. I'm a newbie to this forum. I have been searching for a gluten free AND corn free yeast. I have found some gluten free yeast, But it was corn derived and that doesn't work for me. Does anyone have a direction to point me in?

Probably The Internet to search and look for gluten free yeast.

Now I have question. Following a recipe for gluten free bread that asks for yeast. Do I just throw in the yeast dry or do I proof it first?

Don't waste ingredients!  Always proof it.  Even if the date on the yeast package is good, packaging can be compromised.

Oh, Red Star in the three little packets is gluten-free and corn free per their website -- just pure yeast.    The bulk Red Star is also gluten-free but has a coating that may or may not be derived from corn.
