These are a hit in this house.
1 regular sized sweet potato
1 400g tin of chickpeas
1/2 cup of chopped spring onion
1 tablespoon of curry paste
Steam sweet potato until soft, then mash with the chickpeas. Add the curry paste and stir well. Mix in the spring onion until stirred through then bake on 190C until brownish and firm. Serve with mashed potato and pumpkin and a mix of other veggies, or with a salad.
