Awesome Blueberry Muffins

I found this recipe on a blog, can't remember where, and wanted to share it with everyone.  They are awesome!


Blueberry Muffins


1 cup milk ( I used Almond Milk)

1 tablespoon vinegar

1 1/2 cups brown rice flour

3/4 cup sweet rice flour

1/2 cup tapioca flour

1 teaspoon xanthan gum

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 teaspoons cinnamon

1/4 teaspoon nutmeg

1/3 cup raw honey

2 teaspoons vanilla

2 eggs ( I used egg beaters) 

1/4 cup olive oil

1 cup blueberries ( I used 2 cups I love blueberries)


Preheat oven to 400 degrees

Mix milk and vinegar and let sit for 10 minutes.

Combine all dry ingredients.

In separate bowl mix all wet ingredients together and add to dry ingredients mix till smooth.  Fold in blueberries.  Spoon into paper lined muffin tin.  Recipe said makes 12 muffins but I got 16 muffins and I filled liners to the top.  Bake 15-20 minutes.  (Mine were done in 15 minutes)  I also sprinkled sugar on top before baking.  These turned out wonderful and are very delicious.

Sounds yummy! I'm on vacation, but I just bought blueberries and a Betty Crocker Vanilla cake mix (gluten-free) and I think I'm going to make muffins. Handy to have the mixes when you're not in your own kitchen.
