I guess if I were only interested in celiac (wheat, rye and barley), I would have read the first post in this thread and, seeing it was about corn, not read any farther. But that's just me.

 

Anyway, I'm glad for you that you have no further intolerances. :)

 

and....what I would give to "only" have celiac without "additional intolerances" or other AI diseases and complications.

(which seems to be more the norm than the minority around here)

I completely agree with you about me making any statements concerning what a corn intolerant person may eat. That's not my area of expertise, as it were. And I apologize. I wouldn't have even read that post if it had been in a forum thread devoted to "other insensitivities/intolerances" etc. Corn intolerance is not Celiac Disease. Many believe they are soy, casien/dairy, corn, cheese intolerant. And I'm probably leaving some others out here. It's very unfortunate, and I'm not unsympathetic of them. I just don't have the time and energy to follow everything. I'd rather just focus on Celiac Disease. You know, wheat, barely, and rye.

 

I'm guessing, and I'll defer to you on this, that as with Celiacs, there's a wide range in degree of corn intolerance. Some Celiacs, I'd say most, can eat foods that don't contain any listed gluten ingredients. And others are so sensitive that they must take exteme measures to avoid any possible exposure, no matter how infinitesimally small and unlikely that may be.  

 

Because of my ignorance of corn intolerance, I took one look at Velveeta's ingredients and didn't see any obvious corn.  And then when I looked up the three were discussing, I still didn't see any actual corn in the finished products. Just because a culture is grown on a medium, doesn't necessarily mean there's any of that medium left in the finished product. For instance, from those same sources, it states that even when Maltodextrin is derived from wheat, no wheat protein is left in the finished product. 

 

But I digress from the business at hand. And that's me getting out of the corn business. 

 

Again, please accept my sincere apologies. I promise to butt out of any corn business from now on.

I do have Celiac, I do have corn intolerance , I did not say hubbs used Velveeta he used some off the wall brand. I am so sorry If I offended anyone by posting this. If the moderators of the board did not move it out of the coping section, then we feel it's a coping issue.

You're still new at this and you were telling us how you coped with yet another new hurdle.

OK :) To stay on topic. I will now say being corn intolerant and Celiac and Lactose intolerant. I am considering the Paleo diet. I call them Doits :)Not Diets.  I am so tired of looking at labels and trying to figure out what is Corn and what is not.I am no scientist.  I think it will be easier for me to just not eat processed. I think all I have to give up besides processed is Rice & Potatoes , Ohhh and Beans ...I had a beginners Paleo book need to look it up. Beans and Rice <- my fav! Soooo hmmm .... Maby Monday will be my day? Eat the rest of the rice I cooked yesterday, maby have Beans and Rice for the last time :) but I have got to do something. Maby this is the way to go? This processed cheeses and Processed Cream of soups and proccessed chips and processed processed processed.... Sick of reading labels and having reactions. I know we read it here all the time. Sick and tired of being sick and tired! I have got to do something. This will be my next thing. 

 

TY IrishHeart I will try and keep that in mind. Cannot imagine being miss DX'd for 25 years!

Why not consider just dropping all processed foods for now.  You don't know that rice and beans are a problem for you.  Many of us can't eat a lot of processed foods. I get some cookies once in a blue moon but I try to keep it all one ingredient food choices.  This is much easier to do than cutting out items that you don't know if you have a problem with or not.  It is also much healthier. Do this for a good 2 months and see how you do.  You can address a possible additional intolerance at that point if your still having problems.  I know others may say to limit everything now and add back in but the corn in processed food seems to be your problem.

 That may be easier than going on Paleo, And for 2 months sure is doable! I do know corn is a problem for me , there is no question about that. I was cooking last night and was reading ingredients and looked up and sure enuf something was corn derived so I ended out just having Chicken. Thats when it hit me about the processed stuff. For some reason it just struck me as Paleo. But I guess you have a good point. I LOve Beans and Rice :) I wouldn't have to give them up :) 2 months thats a deal! See what happens. If I am still suffering from "Something" then I will take rice away. Only because I eat more rice than beans and potatoes. for 2 months. If still problems I will cut out Potatoes. But I have a feeling just cutting out Processed will do ALOT! Thanks!

I agree with Colleen. Before you go all caveman, ditch anything from a package. Use my 5 ingredient rule: If the label has more than 5 ingredients (and I cannot pronounce half of them and even my chemist hub shakes his head and makes that face like "er, that's not food, that's just chemicals")  LOL

then, I don't eat them 

 

And for what it's worth, I have been on a primal diet for 7 weeks,....it's not horrid, but let's just say....... I still drink vodka.  :lol: 

 

Keep your rice and beans if you can!  ;)

TY I think thats exactly what I am going to do :) I like to take the advise of the ones who have been there done that. As of today I am no processed foods :) for 2 months and see where that gets me :) I appreciate all the help in this :)

Glad to hear you are giving it a shot.  You have learned so much already and the corn intolerance is very difficult to deal with (just ask Barty) and so many processed foods have corn deriviitives.  I'm not eating anything processed right now either (different reason) so we can do this together  :)

Yeah, I'm still eating some processed foods. I went without them for a long time and when I finally found gluten-free/corn-free ice cream and gluten-free/corn-free potato chips, I jumped on them.

 

As a matter of fact, I found a new (to me) brand of potato chips the other day. The health food store was out of Kettle Brand but they had Boulder Canyon Olive Oil chips. Now, I love Kettle Brand but they are incredibly greasy. I mean if you tip the empty bag the greas will actually drip out! These Boulder Canyon chips are not as greasy and even if they were, we all know olive oil is good for us. So yeah, I'm still getting the salt and the calories, but I don't feel quite so guilty. And they are yummy. :)

Bartful I do have some chips I like , They are "Better Made" made with cotton seed oil/ Palm oil and sea salt. I will miss them for a while but Ohhh well! I will get over it for two months. At least it's not in the middle of summer where there are partys all the time. This is a good time to do this.

Use my 5 ingredient rule: If the label has more than 5 ingredients (and I cannot pronounce half of them and even my chemist hub shakes his head and makes that face like "er, that's not food, that's just chemicals")  LOL

then, I don't eat them

    • First, do you have celiac disease?  Have you recently had a celiac antibodies follow-up blood test panel to see if gluten has been actually getting into your diet by accident or through cross contamination?  If you haven't had the test, you should ask your doctor for one.  You could also also ask for a follow-up endoscopy to see if you intestines have truly healed.  This will rule out if gluten is really the problem.    If you don't have celiac, I assume you have Non-celiac gluten Intolerance because no one would stick to the gluten-free diet for six years unless you have had reductions in symptoms.  There is no test for NCGI unfortunately.  So, it is hard to say if gluten has been sneaking into your diet.  You really are going to have to try to figure out if you are getting gluten into your diet.  If gluten is not the problem, then your doctor needs to check you for other issues, like SIBO. There is a test to check for SIBO.  Has this been done?   Once a celiac, always a celiac.  There is no cure for celiac disease except to remain on a gluten free diet for life.  I am not sure about NCGI.  Not much research has been done.  Maybe others can chime in?    
    • I am so confused right now.... 6 years ago I went on gluten free diet... after being on it for the first yr I was 100%better up until 5 months ago in got the "flu" the doctors told me to cut out dairy sonic did and my diarrhea  became better but not completely gone would not have it every day tho. I went to the gi doctor and they said to cut out fructose and dairy and keep gluten out... yesterday I went to the dietitian to see what I can eat and she gave me the list for fructose... she said it should have been on a antibiotic for sibo.... eventually I will be able to add dairy back and maybe gluten.... I said how can I add gluten back when this was my first problem... she goes well through fructose goes hand in hand with it... I said with gluten I vomit and am sick for weeks.... fructose isn't that bad I vomit sometimes but I'm not sick for weeks.... I'm just confused on really what is going on and was wondering if you or someone you know had sibo from gluten and or fructose and how Is this all related?
    • I see no one has responded to your query.  Unfortunately I have yet to try making a pie crust.  It was something I never mastered before going gluten free.  Have you looked on Pinterest?  You might find something there.
    • I honestly feel like both doctors think it's all in my head even though there is proof.  Yeah there was a point when I felt crazy.  That was when I was being shuffled from dr to dr being given individual diagnoses of my problems.  None of those diagnoses ever made me get better.  Seriously I was diagnosed with heart palpitations, neurocardiogenic syncope, I was given a butt load of steroids because a dr felt like I was producing too much adrenaline, freaking had a few tell me I was depressed, and the good ol IBS.  It seemed most wanted to push pills.  It's all just ridiculous!
    • I can't believe your doctors!!! You have a daughter who is dx'd already! Yet the ped doesn't want to test your other kids unless you have a dx????!!! Are you kidding me???!!! That's absurd!!! They have a first degree relative who has been dx'd with celiac already. There is no need to wait to see what you turn out to be!! And then, and then, and then....don't even get me started on your doctor!!! Does he have brain damage? Oh this is insane & ridiculous!  I have never heard of a disease that doctors are so unwilling to consider or test for OR to diagnose as this one! Usually they are hot to trot to make a dx but say the word celiac & they shake in their boots. Grrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrr!!!!!!!!!!!!!!!!!!
