It also states that Celiac support groups now have 95,000 member, up from 40,000 in 2003.
Other non-celiacs are also choosing this diet because they feel it is healthier for them. The FDA isn't required to come up with a rule defining "gluten free" until 2008 under the Food Allergen Labeling and Consumer Protection Act.
Slow, but progress. It would not hurt to have 95,000 people write their Congressman/woman and Senators and let them know how you feel.
