"Choices Grow for Wheat-Free Diets"
It included Wal-mart and Whole Foods Market that through popular demand, companies are scrambling to redesign their foods for the gluten free market. It also quotes Scott as saying the people with Celiac Disease are bombarding company with questions about gluten. It also states that Celiac support groups now have 95,000 member, up from 40,000 in 2003.
Other non-celiacs are also choosing this diet because they feel it is healthier for them. The FDA isn't required to come up with a rule defining "gluten free" until 2008 under the Food Allergen Labeling and Consumer Protection Act.
Slow, but progress. It would not hurt to have 95,000 people write their Congressman/woman and Senators and let them know how you feel.
