Substitute For Amaranth Flour

I see plenty of recipes for Amaranth flour in Best Gluten-Free Family Cookbook by Washburn & Butt but can't find the Amaranth locally. Has anyone modified such recipes with other flours and had success?

Bob's Red Mill makes an amaranth flour, as well as Nu World Amaranth.

I made amaranth pancakes this morning and my mom mentioned that they taste the most like rice flour (I am allergic to that, but I asked her what she thought of the pancakes). Anyway, I assume you can use rice flour for a similar taste. Fibre-wise, though, something else would be more ideal - quinoa / fava ... One of those.

I think you can use Sorghum flour as a replacement.

Dx with IBS February 2005
Blood tests both negative (or inconclusive?) for celiac (in 2002 and 2004)
