Yummy Leftover Treat

We took leftovers and made a brand new favorite food... 1.5 cups cooked mashed potatoes, 1.5 cups cooked grits, 1 cup brown rice flour, 1 small -grated- onion, 2 eggs, salt/pepper... mix, shape into patties, and pan fry on both sides 'til golden brown. Yum yuuummmmm, good! Goes great with applesauce, eggs, sausage, and/or whatever you like for breakfast.

i recently heard something about grits no longer being considered gluten free........i wasn't sure if this was just certain brands, or grits in general? have you heard anything about that?

My mom used to make these when we had leftover mashed potatoes! Of course, she used wheat flour...

We usually had "breakfast for dinner" on those nights and had the pancakes with eggs and bacon. YUM! :P

      Legumes can be a source of wheat contamination, but I assume that you use versions labelled "gluten-free."

      As a side note, it seems that medical science has evolved in the past 5-6 years regarding Celiac Disease, and I am now catching up. It seems that anything that disrupts the microbiome sufficiently enough can--in genetically susceptible individuals--lead to Celiac Disease. I have been reading now that antibiotics, excessive simple carbohydrates such as refined sugars and starches, the manner of birth such as C-section vs vaginal delivery, the diversity of one's diet, the presence of certain bacteria or viruses, can all contribute to microbiome dysbiosis, which can lead to Celiac. This is fascinating research.
