I'm extremely interested in studying Celiac's or along the lines of celiacs in the future, could anyone make any suggestions of what univerisyt course or courses would be the best to take i.e nutrition? or food science? or medicine? etc..
Any suggestions?

You would probably need to hook up with one of the Universities that has a Celiac Disease Research Center. I know that University of Maryland and the University of Chicago are two that do major research in Celiac Disease. Johns Hopkins and Columbia University also do alot of research on celiac disease. I'm sure there are others I don't know about. But that would be your best bet.
