so i called the local sushi restaurant and they gave me the ingredients for their sushi's rice vinegar.... is this safe??
Ingredient Statement Distilled Vinegar (made from Alcohol with Rice and Sake Cake Extract) and Salt.
Diluted with Water to 4.5% Acidity (45 Grain).

what is sake cake extract??
Dx & gluten-free since 12/09/05

rice vinegar is good, distilled vinagar is ok, but, immitation crab meat is not ok. Sake, stuff, not sure, but maybe, I think ok, but can't guarentee.

Sake Cake is a by-product of the sake making process. Its the equivilant of mash when making bourbon, but is whats left over from the koji rice used to make the sake. It should be gluten free. Only really bad cheap sake is made from anything other than rice water and yeast. I have yet to find rice vinegar with gluten in it.

Have you ever heard of Shiragiku Rice viniger ingredients are as follows:
rice, alchohol and Sake Cake
I cant find it anywhere to get the status?? ;)
