What Do You Miss?

I am trying to figure out what food I miss the most. I have never had any problems with eating or food, fortunetly enough. I have always been a very healthy eater, and consider myself fortunate not to have a "picky" problem like my hubby, or an eating disorder of any kind. I've always eaten right, and splurged occasionally....I am having trouble with the freedom I have lost to eat what I want when I want I guess, even though 9 times out of 10 I wouldn't have eaten it anyway! But, I can say I will miss the occasional old fashioned glazed donut, Kentuky Fried Chicken, and anything salty when I felt like splurging before. So what is your most missed? (and how do I make it now?) recipes wanted... :D

Chevy's Tortilla Chips. Their salsa is gluten-free. But the chips are fried in the same oil as other things. Those chips were so good. Nothing else is quite the same.

KFC is a big one for me too. Really just the loss of anything that is convenient.

I mean, I like the side effect of this being that I'm eating healthier, but my gosh. Sometimes you just want to go through a drive-through and get on with your life.

I miss microwave chicken nuggets. Having to stand over a hot frying pan at 11am to make homemade chicken tenders for lunch for my kids is starting to wear thin. Especially since they both have variable appetites. At least I've gotten pretty good at it and whatever they don't eat now I can.

As far as recipes, I've found that making your own seasoned breadcrumbs is easy if you have a food processor. That expands your options quite a bit if you like breaded or fried food.

There isn't much that I've found is difficult to do as far as converting recipes. The only things I've ran into pretty tough roadblocks with are cheese crackers and filled pastas such as ravioli.

By the way, www.topsecretrecipes.com is a great resource, even just to get inspired.

Today I was missing pikelets. Different days, I miss different things.

All day I was dreaming of pikelets, and thinking, I was good at cooking them before, and enjoyed doing that. So I kept thinking about pikelets all day while trying to work, and thought, I have nothing to loose in trying to make them. So when I got home, I used my old recipe and just changed the flours, and you know what, they looked and tasted as good as what they did pre gluten free days.

I am quite proud of myself, and even the "normal" eaters in the household thought they were pretty good.

The thing I really miss most is licorice allsorts.

Stroganoff--I miss noodles so much. Yet, I miss so much now. I have totally mourned food for most of the summer. It's been 5 yrs this last July and my intolerances are so great now. Many days I feel it very unfair. At least when I could eat rice, I could have a little variety. I have my ricecakes and peanut butter, my chicken breast, sometimes fish, peas, green beans, and carrots. I can handle some fruits and yogurts. Something just isn't fair about all this--to be sick for over 25 yrs, find out why and then just lose more and more control of what you can eat. I am going to a meeting tonight where Dr Peter Green's dietician, Anne Lee is speaking. She and I talked for a few minutes in June--maybe she will give me some ideas tonight in her talk. I will see. Deb

Really good, crusty artisanal bread... oh how I miss it. All the other stuff I can fake-- not REAL bread, at least so far. I used to live on tomato-basil bruschetta in the summer....

The most lifestyle-cramping thing, though, is not being able to eat out without fear.

I really miss Krispy Kreme donuts and being able to stop at Taco Bell and fill up on tacos and burritos... why oh why do they have to put gluten in the meat mixture???

I haven't found a suitable recipe for Krispy Kreme donuts, I like Kinnikinick donuts but they are more like heavy cake donuts than the light flaky ooey gooey glazed Krispy Kremes...

Some Chevy's, if they aren't too busy, have fried separate chips in fresh oil in a pot. Ask the manager, some will, some won't........I was at a Chevy's on a Sat. nite at a mall and they made some fresh for my table.....it was awesome!!!

as far as filled ravioli's go i have figured out a pretty good substitute, takes a little work, but they are really good......use chebe plain mix and roll out very thin and cut into rounds, put a tsp of whatever filling you like in the center, top with another round and boil on stove top, flip and let the other side cook. They are awesome!!!! I have perfected my chicken ravioli now......took 3 attempts, but the 3rd batch was incredible, no leftovers!!!!

as far as what I miss, just the occasional donut. I never even ate the whole thing usually and only a few times a year, but a couple weeks ago the kids had them and it was all I could do to keep myself from breaking off a piece and devouring it..........but just not worth it, kept telling myself that......

i miss a nice warm loaf of artisan bread.

i miss eating out at resturants.

i miss taco bell.

i find myself eating so many things now that i never would have eaten before, just because they are "gluten-free".

i never in my life bought oreos, but now i buy the package of gluten-free vegan ones and eat the whole bag in one sitting.

I miss Long John Silvers battered shrimp and my Italian bread. When I moved back to my home state we drove into town at about 6 am, just when the italian bakers in town delivered all the fresh bread for the day. I ate a whole loaf myself in the space of a few blocks. I used to live off of fresh italian bread and hunks of Pecorinao Romano cheese in the winter.

This is so gross, but the things I miss most are fast food items. I miss Long John Silver's hush puppies in all their greasy goodness. I miss Big Mac's. I miss real chicken fingers and onion rings. Ugh... I miss beer battered fish.

I miss our Saturday morning tradition of getting McGriddles for breakfast. Even when I was sick, my husband would bring mine home to me (not smart since it was the wheat making me ill).

I also miss Big Macs.

I wasn't much of a junk food person and I was used to avoiding foods that were bad for me except for the ocassional treat, so adjusting wasn't very hard for me.

Nancy, I've seen frozen gluten-free nuggets at Wild Oats, I can't remember who makes them, but I can find out for you if you can't find them.

Krispy Kreme donuts and Pizza Hut pizza. No matter what I do, I just can't get my pizza to turn out that good--you know, the greasy, gooey kind. Sigh.

Oh, but about chicken nuggets, I eat Ian's all the time. In the last 6 months or so, they changed their recipe, and I think they're really good (well, as good as microwaved chicken nuggets go). I get them at Whole Foods or my local Food Lion.

Convenience...being able to eat at a restaurant spontaneously...being able to buy something in a grocery store without first researching it, double checking the ingredients, and/or calling the company from the middle of the supermarket aisle...lugging safe food where ever I go...

Krispy Kreme donuts, Wendy's Spicy Chicken Sandwich, Charley's grilled subs & fries.

All stuff that is bad for you and that I didn't eat all the time, but just the fact that I CAN'T have them makes me miss them.

Oh, I do miss tortellini, can't see myself making that from scratch! LOL!

I miss k.k. also, taco bell, olive garden and good noodles. Personally I have yet to find gluten free noodles I like. As soon as I do Im determined to make chicken fettucini alfredo like olive garden's. :D

Hey. Im New

I miss bread. However the last few years ( I was diagnosed at 6 and am now 19) I have been bad. I dont get sick unless I eat a lot, however I have been trying very hard lately to be good as I dont want end with problems later.

I live in Australia.

When I go to Mcdonalds I have started asking them to make me a burger without the bun. They put in one of the pancake containers for me. The patties here are 100% beef, so it is only the bun that is bad. When I go to subway I get one of there salads.

Even Though I can eat more than most people without feeling ill, It still annoys me that I can't have a (decent) sanwich for lunch everyday if I want it.

The other thing that really annoys is that the food seems to be more expensive :angry:

I thinks one of the things I miss most is a nice thick chewy pizza crust. I was just diagnosed 3 weeks ago so I'm still in the trial stage of different foods and feel like I won't ever find stuff that I really like the taste of. Maybe I just have to get used to the different flavor...or lack of flavor. Any suggestions?

What I miss the most?? So many things.. honestly usually I dont even think about it. I havent been gluten free that long yet. But I got used to the diet rather quick and it doesnt bother me.

But when I think about it.. like last nite. B/F came home from first nite back at the bowling league. He called me on the road that he was going to stop off at Mickey D's. did I want anything. Well it was great of him to ask.. but besides a big mac and some fries.. I am very limited. I chose a vanilla shake and it was quite good.

I miss also regular pizza. just a good ole pizza from down the street. And chinese food, dont get me wrong, PF Changs is good, but its just not take out in a paper container.

I must agree though, KFC. It wasnt a staple in my diet anyway. But I could go get it if I wanted.

And like others the beautiful Italian Bread. How wonderful it was.. now its just a dream

Oh boy. I didnt realize how much I miss. I dont usually think about them.. but I guess when I do, there is a lot.

I would reccomend not totally going overboard if you find a certain type of biscuit or someting that you find ediable (unless it is one the rare ones that tastes good enough thatd u would eat it even if u didn't have to) I ate so many rice cakes when I was little that now I just can't stand them. Even though is mighty difficult try to get as much variety as possible so that you don't feel the need to "cheat".

The ravioli receipe sounds interesting but what do you mean by boil on stovetop and flip over? If you boil them, why the need to flip? Do they float - is that the reason to flip them?

This describes me perfectly....

I never ate much junk food but sometimes when your friends all just wanna get something and move on it can be a pain. Don't have kids but I do make sure my girlfriend doesn't miss out with things like battered prawns or pizza and in return she doesn't bring gluten into the appartment but spending 5 hours marinading, then cooking then peeling and battering and deep frying, dripping sweat I starrt to wonder why I just can't eat out.

If Im on vacation with my girlfriend we plan the day around me eating and thats OK but when you are in a larger group (like last night at a concert where people wanted hot dogs and I couldn't) it gets inconveneient for them to be able to eat and not you.

I have yet to make a decent gluten free ravioli.... (sorry jcc if you're reading...) I even got tapioca flour but I had been so put off by bad attempts at gluten-free ravioli sticking to the pasta machine like glue I havn't had the heart....

Yep.... and I'm guessing they are more fragile than wheat ones... I had limited success with a similar method but getting a really good even pasta like from the pasta machine is ...beyond me!

Its not just that but when I made real ones I would adjust the recipe according to filling vis egg yolk vs whites and xx flour to plain etc. wheras now I m just trying to get anything that holds together!!!!

      I agree, and hopefully your doctor will contact you soon about the next step, which will likely be an endoscopy to confirm your diagnosis. Do you have celiac disease symptoms?

      Still dealing with this rash on my legs. I've eliminated ringworm (through use of topical ointments). And I also know it's not shingles, as I've never had chickenpox before and I'm still fairly young. Through a lot of online research, I'm leaning more towards dermatitis herpetiformis, eczema, or psoriasis. I've actually got a doctor's appointment in May (finally got some insurance) and I'm going to bring it up then. I'm feeling really hopeful and excited to maybe be getting some relief soon.   Big thanks to everyone for the suggestions and positive thoughts!

      You have three celiac disease specific antibody tests that are positive: Endomysial  Antibody IGA (aka, EMA), tTG-IGA, and tTG_IGG. Furthermore, your Immunoglobulin A at 55 is low, meaning you are IGA deficient. This one is not an antibody test for celaic disease per se but a measure of "total IGA" levels and if low (yours is low) it can suppress the individual antibody scores and even cause false negatives. So, yes, it definitely looks like you have celiac disease.   Do not yet begin a gluten free diet as your physician may refer you to a GI doc for an endoscopy/biopsy of the small bowel lining for confirmation of the antibody testing. This may help:

      Mine is definitely triggered by inflammation and stress! I do also have arthritis in my spine, but the pain is more in my pelvic area. Im sure i have other food intolerances or other autoimmune isues but the more I focus on it and see doctor after doctor, it just gets worse.  Best thing is get of Gluten! (I also avoid lactose). Try to limit stress and anything that causes inflammation in your body.
