Substitute For Buttermilk

can anyone give me a substitution for buttermilk?

as in "I don't have any buttermilk in the house and want to make this recipe" or "I am casein intolerant and can't have any dairy and want to make this recipe"?

If you are making a quickbread recipe that uses baking soda, buttermilk is used because it is slightly acidic and (in combo with the soda) causes the bread to rise.

For a cup of buttermilk you may substitute with a cup of milk with 1 teaspoon of vinegar or lemon juice added or with a cup of yogurt (also acidic). If you cannot have diary.... soy milk plus vinegar or lemon juice is fine, too. Esentially any liquid with a little bit of acid. You could even use diluted orange juice maybe....
