Chocolate Pb Bar Recipe?

I used to love my Chocolate Peanut Butter Bars. They are the kind with the smashed graham cracker crust mixed with PB, butter and powdered sugar with melted PB and chocloate on top. I'd love to make them again, but I haven't found any good gluten-free graham cracker substitutes. Does anyone have any ideas for what I could use instead? Or any similar gluten-free recipes?

i make a homemade gingerbread type crust with crushed mesa sunrise + teff flour + earth balance + sucanant. you can crush cookies, i've heard, but i don't want to waste my baking on THAT :)

That is an easy substitution, there is a substitute cracker for the graham crackers, whole foods carry them, but I cannot remember the name - they are hard though, so you have to really crush them or put in the blender. when I was using them I liked to add a little almond flour to them to lighten them up a bit. They were one of the few gluten-free baked goods that I did not get sick from.

Now I just use cookie crumbs that I have frozen in the freezer, any crumbs from bought or homemade cookies. I also just use almond flour for the graham cracker base in my Hello Dolly Cookies (bars), and it is great. I also use coconut macaroons (there are some gluten-free ones) crushed up etc.

I'll check out knickiknick.com. Seems like I could also use my "failed" crumbling cookie experiments. Unfortunately I've gotten much better at baking and I don't have as many crumbling messes.

Here's the gluten recipe. I probably should have thought to post this in the first place.

Chocolate Peanut Butter Bars - GLUTEN VERSION

2 Cups Peanut Butter

¾ Cup Butter (softened)

2 Cups Powdered Sugar

3 Cups Graham Cracker Crumbs

2 Cups (12oz) Semi-Sweet Chocolate Chips

--------------------------------------------------------------------

· Beat 1 ¼ cups peanut butter and butter until creamy

· Gradually beat in 1 cup powdered sugar

· Work in remaining powdered sugar, graham cracker crumbs and ½ cup chocolate chips by hand or with spoon

· Press evenly into greased 13x9 pan

· Melt remaining ¾ cup peanut butter and 1 ½ cups chocolate chips on low heat, stirring constantly

· Spread over graham cracker crust

· Refrigerate for at least one hour until chocolate is firm, cut into bars

· Store in refrigerator

Are you thinking of the Health Valley Rice Bran crackers? I think that is what they are called!

Ooooh, I have some of those! They're so boring and plain that I find them super yummy :) They might make a really good crust, though, once you put a ton of butter and chocolate and peanut butter all over them.

I like them too! I think a lot of people have posted that they use them for a "graham cracker" crust...

As they are not too sweet they won't be overpowering! I agree... butter, chocolate and pb will make anything tasty! :)

      Thank you and I am aware that I should be eating a "normal" diet until tested it's kind of been trial and error for my diet or more like just ERROR! I about 1-3 bites a meal I'm to a point that 99 percent of the time I'm having trouble swallowing just about everything occasionally I find either something or a very small window of time that allows me to get very little of something! I am basically getting zero nutrition what so ever because I take one bite of the meal that I usually just slaved over just to end up tossing it when it's all said and done...did anyone else ever experience anything like this?  I am more then open to suggestions! It is taking a very extreme toll on me and my body forsure

      No! Do not start the gluten free diet until you know whether or not you will be having an endoscopy/biopsy to verify the blood antibody test results. Starting gluten free eating ahead of either form of diagnostic testing can invalidate the results. You don't want to allow the villous lining of the small bowel to experience healing ahead of testing by removing gluten.
