Cupcake Recipes help, I need a good recipes for my 3 yr old Rate Topic: -----

I have only been doing this gluten-free baking for a month now and the first 2 times I made cupcakes they were good, they were moist and yummy...maybe because one was banana and one was strawberry. this weekend I made mint chocolate chip ones..GARBAGE IMO. they were dry and hard and nasty. Emmah was not impressed :wacko:

Does anyone have any cupcake/ muffin recipes they wouldn't mind sharing with me?

I use Bobs Red Mill chocolate cake mix...the cupcakes come out more moist than gluten cupcakse...Sorry I am new to this also and don't have a particular recipe. too lazy. but I swear these are good.

I enjoy the cchocolate cake mix by kininkinik. I imagine it would make a lovely cupcake as well.

BE HEALTHY. EAT NATURAL FOODS. DO NOT INGEST CHEMICALS! If you cannot pronounce it, do not eat it. Use Coconut oil. Eat herbs in salads. NO DAIRY. LOVE YOURSELF. LOVE YOUR FAMILY. FOOD IS MEDICINE!

Analaise Roberts has the best cake recipe out there!! Just bake in cuppeycake wrappers instead of a cake pan mmmmmmmmmmmmmmmmmmmmmmm!!

I was going to recomend the Bob's red mill chocolate too. I liked his banana bread recipe on the back of the gluten-free flour too though .... Marcia
Jan 1990 - Dx CFS/ME/FM (URI's, Ataxia, myoclonus, orthostatic hypotension, insomnia, brain fog, swollen lymph nodes, sore throat... ) Completely Disabled (housebound and bedridden at times)

2004 - Digestive pain all the time.

May 2004 - Hiatal hernia, erosive gastritis, gastroparesis (endoscopy)
August 2004 - Colon polyps, diverticulitus, internal hemorrhoids (colonoscopy)

No relief from Nexium, Prilosec, Protonix, Zelnorm, Miralax, Imodium, Lomotil ...
July 2005 - GP recommended WFDFSFEFCF + vegan (Also, anything that hurts free)
Immediately stopped needing naps and digestive pain reduced.

Sept 2005 - GFDFCFSFEF + chemical free - Immediately stopped feeling jittery / buzzing and digestive issues were much better.

June 2006 - Dx B12 and iron deficient. Started B12 injections and using cast iron pan.

August 2006 - MYOCLONUS GONE. (off Klonopin)
September 2006 - ATAXIA, INSOMNIA and Feeling like the floor was moving under my feet gone.

June 19, 2007 - Positive DQ2, Dx Celiac

October 2007 - Sleeping like a baby, waking up with energy, but still having fatigue/stamina issues

Nov 2007 - Started Paleo diet for chronic hypoglycemia

April 2008 - GTT normal. I'm no longer hypoglycemic. Started Low oxalate diet for kidney stones.

May 1, 2008 - Began salt loading for OI/NMH - noticed immediately muscle weakness was gone. I was sodium deficient but my labs don't reflect it. Still working on OI and PEM.

This recipe is from http://www.allrecipes.com submitted by Amy entitled Gluten free yellow cake. I've only ever made this as cupcakes and it is phenomenal, absolutely the best... Don't be scared off by the mayo, you can't taste it in the recipe. Be sure to use full fat mayo, no light stuff or it won't turn out.

INGREDIENTS

* 1 1/2 cups white rice flour
* 3/4 cup tapioca flour
* 1 teaspoon salt
* 1 teaspoon baking soda
* 3 teaspoons baking powder
* 1 teaspoon xanthan gum
* 4 eggs
* 1 1/4 cups white sugar
* 2/3 cup mayonnaise
* 1 cup milk
* 2 teaspoons gluten-free vanilla extract

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and rice flour two 8 or 9 inch round cake pans.
2. Mix the white rice flour, tapioca flour, salt, baking soda, baking powder and xanthan gum together and set aside.
3. Mix the eggs, sugar, and mayonnaise until fluffy. Add the flour mixture, milk and vanilla and mix well. Spread batter into the prepared pans.
4. Bake at 350 degrees F (175 degrees C) for 25 minutes. Cakes are done when they spring back when lightly touched or when a toothpick inserted near the center comes out clean. Let cool completely then frost, if desired.

go to eatingglutenfree.com and look in the recipe section! every recipe I've made from this site has worked out GREAT!!

That is a good recipe. Much like a twinkie consistency..mmm good stuff.

I've been wanting that pan too, but still haven't found a cake recipe to work for our extensive list :(
Mom of:
Carleigh~ 10 years old, allergic to wheat, milk, peanuts, strawberries, and many EAs. She is currently soy-light and egg-light ~ celiac testing inconclusive by allergist.
Gluten-Free since 10/05 She's a gymnast. : )

Nick ~ 13 years old with no known allergies.

EEK! I just scoured the King Arthur Flours website and don't see this pan! Can you post a link for me?

Has anyone developed a frosting (filling) recipe that would rival a twinkie's?
