At Hodgsonmill.com, under "Your body your health," there is an "allergy and intolerance" page that defines the two but it sounds a little off to me because it says an intolerance doesn't involve the immune system. What do you all think? I was on there trying to figure out whether their corn meal would be produced on dedicated lines; guess I'll have to call.
BTW I live 10 minutes from the mill pictured on their packages; my grandma was a Hodgson and grew up there. My dad used to get really fizzed because this particular company making the grains has no connection to the Hodgson family; it just used to lease the mill and capitalized on the name and the image. (Of course it hadn't been trademarked or anything.)

i think they are right----intolerances don't involve the immune system and that is why they don't show up with normal allergy testing. celiac disease, however, involves the immune system because it is an autoimmune disease, but it is still not the same type of immune system involvement as food allergies or other food intolerances.
