Glutenfree Enchalada Sauce?

hi!!

i love enchaladas!! but i'm not sure what sauces are glutenfree. i know el paso is not!! i contacted Las palmos and there answer didn't satisfy me. they said it was gluten free but they didnt seem like they really knew for sure.

what do you guys use?? or if you make your own can you give me the recipe?? (for a mild sauce)

I make my own with two cans of tomato sauce, a cup of broth if you've got it, and spices, simmered down until it's the thickness you want (30-60 minutes for one batch). The spices are both vital, and can vary. I like to use a fair amount of chili powder (for mild, I'd use at least a tablespoon), a pinch of cayanne, 1 tsp of paprika, 1/2 tsp sage, 1/2 tsp oregano, and a 1/2 tsp salt. (I used no-salt-added tomato products...) If I'm doing bean enchiladas, or am just in the mood (and usually am), I'll add a 1/2 tsp or so of cumin as well.

thankyou tiffany!! what brand of tomato sauce do you use? and also do you know if spice island and spice hunter spices are glutenfree??

also if any one knows about an endhelada suce in a can that is glutenfree let me know!!

spice hunter is definitely gluten-free (I love their spices - their chili powder is the best chili powder I've had so far - and called). I've yet to see a tomato sauce that had a questionable ingredient, so I've used Hunts and Contadina. You might also try using crushed tomatoes if you want a chunkier sauce. The nice part is that it can simmer on the stove while you put together the ingredients for what goes IN the enchiladas. :-) But I think there's an old post somewhere in here that has the name of a gluten-free canned sauce.

There is also a great recipe for enchilada sauce in Bette Hagaman's The Gluten Free Gourmet Cooks Fast and Healthy. The recipe is SUPER easy to make and takes very little time to cook. If you don't already own the book, buy it or check it out from the library it is a GREAT book to have.

i had tried betty hagmans sauce ( i do have that book)....and it was similar to the one tiffany posted....the betty hagman one turned out way to spicey for me.

so i tried the one posted above last night and it was great!!

I'm glad you liked it. :-) I'm pretty sure it would freeze well, so you can make a big batch, and freeze it in ice cube trays or other containers. (Ooo... I can't wait 'til I have a house and can buy a full size freezer like my in-laws have!!! :-) )

I use Pace enchalada sauce. My kids will eat it because it's not as spicy as some others.

      From the article I linked above: DGP-IgA and DGP-IgG (Deamidated Gliadin Peptide) Blood Tests for Celiac Disease These tests measure the levels of antibodies in the blood, but specifically targets deamidated gliadin peptides, which are a type of gluten protein that can trigger an immune response in people with celiac disease. The test is not always included in adults, but should be in cases with IgA deficiency.  I'm not sure if this is a grammatical error or not but in the context, two tests are being spoken of together so it could be intended to say, "These tests". I'll ask Scott about that.

      No they did not run a total IGA. But wouldn’t the DPG-IGA also be negative also if I was IGA deficient? They did also run a TTG-IGG and a DPG-IGG and they were also negative.

      The DGP-IGA is valuable when celiac is suspected but the person being tested is IGA deficient. Were you tested for IGA deficiency. In other words, was there a test known as "Total IGA" ordered? Here is an overview of the various blood tests that can be run when diagnosing celiac disease:

      Has anyone ever negative blood work except for the DPG-IGA? Mine was 42 (reference range negative is >20. The TTG iga was negative. I have always suffered from bad gas issues and lately have been having bouts of diarrhea and constipation. I also have a bumpy rash that comes and goes below both elbows. i have an endoscopy scheduled in May but I was just wondering if anyone else had bloodwork like this and what was the end result?
