What brands do you use for sauce/tortilla?

I've never run across a corn tortilla brand that wasn't gluten-free. I use Mission brand usually, and never had a problem. The sauce I make myself- here's a great enchilada sauce without flour, much better than ones with flour IMO.

In a saucepan, sautee 1/2 small yellow onion and 2 cloves of garlic (or use a little garlic powder if you'd rather) in 1 tablespoon olive oil.

In a blender, put 1 14 oz can tomato sauce, the sauteed onions and garlic, 2 tsp cumin, 1/4 cup ground chili (use mild, medium or hot ground chili depending on your preference), 1 tsp salt, a pinch of Mexican oregano (fresh is best but dried is fine) and blend until smooth. Pour into the same saucepan and simmer until desired thickness is reached. You should taste it and add more salt if desired.

This makes a very flavorful sauce because there is no flour to dilute the flavors. If you prefer, you can add some chicken stock and corn starch to subdue it, but I prefer it full- strength.

I put a recipe on the "enchilada sauce" entry in gluten-free Foods, Products, etc... It's easy to make.

Guest PastorDave

Pastor Dave's wife here,

This is an old family recipe I have converted. I take corn tortilla's and layer them with sauce and cheese, cook for 20 min and have a wonderful meal that is great for company.

Sauce recipe:

1 container Daisy sour cream

1 can canned chicken (including broth)

1 cup milk (or substitute)

2 cans chopped green chilies

1/2 cup water

heat on stove until simmering and well-mixed

I use lots of chedder cheese, but I am a cheddar cheese addict. I think the original recipe of my grandmothers called for one to two cups of cheese over the top. I layer the cheese with the tortillas and then add lots to the top (makes a full casserole dish.)

If you like a red chilie sauce Las palmas is gluten-free. My mother cooked with it, I cook with it, I guess I grew up with it. All my relative love it, especially when I use the medium hot! I live in CA so I hope you can find it in your town.

For 16 years I have relied on the website glutenfreedrugs.com to determine if a pharmaceutical is gluten-free. The website has been down for at least a week. Does anyone have any information about this outage, the status of the website founder and maintainer pharmacist Steven A. Plogsted or a phone number? I did not get a response for my email to glutenfreedrugs@gmail.com in October of 2022. Steven did respond to my emails in 2012. Thanks.

Sounds like you are in the UK. With blood numbers that high, I thought docs in UK would give an official diagnosis without the biopsy. You should ask about that, so you can get support faster.  I'd try to find and print out anything that supports that in your country, get another appointment and take all of it with you. Even in the US now, some docs are doing this, my 19 year old step granddaughter got an official diagnosis here in US with just blood results a few months ago.

Is soy sauce in Korea also made from wheat like it usually is in US? I'd be concerned that even if asking about gluten, they would not be aware of or think of some like that.

That's a good idea. It can at least establish the potential for developing celiac disease and can help people decided between a celiac diagnosis and NCGS (Non Celiac Gluten Sensitivity). And it doesn't require a gluten challenge and can be had without a doctor's prescription.

I have my endoscopy on Thursday, has anyone had the procedure done with a cough? I don't have a continuous cough, but every now and then throughout the day I have sort of coughing episodes. They are a lot better than they were but I called endoscopy and they said to speak to my gp and my gp got back to me and said I need to ask endoscopy if its ok if I have it done still.  Help!
