What The Heck Is Corn Gluten?

:unsure::unsure: Can anyone tell me what Corn Gluten is? And since it says gluten, is it really gluten? Also I am wondering about modified corn starch, is that safe?

Corn gluten is a corn protein. It is NOT the kind of gluten that hurts us. It is considered safe for a gluten free diet. All corn products are safe as long as they don't contain anything made from wheat, rye, barley and oats.

Gluten is a broad term for the protein. Although we always refer to gluten as the bad gluten (wheat, rye, barley, etc.), technically, there are safe glutens for us.

Scientifically, the protein found in grains is called gluten. So ANY protein in ANY grain is generically referred to as gluten. With respect to celiac disease, however, we often use the word gluten to refer only to the protein in wheat, barley, rye, and oats. It's a matter of context.
