Is Cocoa Powder Ok?

Dutch Process Cocoa in Chocolate is an ingredient and I'm not sure if it's ok.

Cocoa is gluten-free, as long as the manufacturer doesn't add anything to it that may contain gluten. Most chocolate on the market is gluten free.

I was reading that MALT >> is somtimes put into the cocoa. Malt is a favorite sneaky ingredient. You alre looking for the bigger stuff and that sneaks in.

dutch process coco powder should be fine, but always read the label. adding malt to dp coco would be ... unthinkable! (you'd ruin so many things you might make with that coco...) but you can't take anything for granted.
