Lactose?

If one was trying to see if lactose was an issue (a non-celiac person), how much dairy should they cut out? Just obvious dairy or baked good with dairy, too?

I did my own elemination diet challenge for lactose years ago and I don't think I did the complete eliminiation since I now how much it is in - however, if I were to do a challenge for lactose today, I would eliminate EVERYTHING with lactose, including many breads which have dried milk or butter added. I cold tell immediately when I re-introduced milk back in that it was EVIL stuff.

This is the problem with testing dairy - there are two potential aggrivators, lactose and casein.

Ideally, to test for lactose intolerance only, without having your doctor test you, you would simply try taking Lactaid (or any lactase supplement) before consuming a dairy product. That would put the appropriate enzyme to digest lactose in your system before it gets to the intestines to be metabolized by bacteria.

Eliminating all dairy won't clarify if you have a problem with lactose or casein, however. And just cutting dairy down very low isn't sufficient for everyone who is lactose intolerant. Sticking with the lowest lactose containing dairy products (hard cheeses like parmesean and cultured products like yogurt) helps some lactose intolerant people, but some are sensitive enough that even that much b others them as well.
