Hi guys,

I have found gluten-free cookies that taste just like a moist wheat flour based cookie! I work for a local natural foods store in Seattle, and today there was a trade show where all of these natural foods etc. have booths with info. and samples so that your store will sell them. WELL, this lady that has celiac disease herself, was there and sells this cookie dough that comes in chocolate chip, ginger molasses, and peanut butter, she had some cooked up for samples and holy macarole the chocolate chip cookies were so moist and you would never guess they were gluten free. She is new with her product so you only can order directly. They are so wonderful, her website is www.wowbaking.com, or her email is info@wowbaking.com. There were believe it or not many gluten-free things for me to try which I was scared I would go to this and not be able to sample anything.
I did have a dissapointing experience though, this lady with Pure-delite low carb products said their products were all gluten free, so I said I would try the sample she had of cookies and cream chocolate bar, there were actually cookies in it, AND they had pretzels which were wheat. I am so mad, I have already struggled with not making mistakes on this diet since June, and I had been 100% gluten-free for one month now and thanks to my trust, I am in square one again. I haven't had a period for almost 2 years and want to be on the diet long enough and very soon so that I can be fertile! grr. Sorry off my topic. Anyhow you guys need to try these cookies

I've been pretty happy with the chocolate chip cookie recipe on the the Pamela's Ultimate Baking and pancake mix. It has almond meal in it, and the facility also makes products containing peanuts, tree nuts, and dairy. The company also donates money to Celiac and Autism support and research Organizations.

I use vanilla pudding in my choc chip recipe and all the kids in my daughters dorm love them..they asked for the recipe....wait till their moms see that it uses gluten-free flour...it truly tastes like a toll house 2 1/4 cup of Bette's featherlight rice flour mix, 1 tsp. baking soda, 1 cup of soft butter, 1/4 cup white sugar, 3/4 cup light brown sugar, 1tsp. vanilla, 1pkg. jello vanilla instant pudding, 2 eggs and a cup of choc. chips......combine butter and sugar, add vanilla and pudding, beat w a mixer till smooth, beat in eggs, add flour and baking soda little by little stir in chips...drop by tsp. full on heavy duty cookie sheet....press down a bit with finger tips and bake 8 -10 min @ 325......no one would ever know the difference...Kathy
