We all know that most of the substitutes are pretty weak, but there are some good ones out there so feel free to add your favorites!

Van's Waffles (Plain and Blueberry)
Glutino Pretzels (Sticks or twists)
Glutino Wafer Cookies
10-06 Diagnosed Urinary Tract Infection (Allergic to Cipro, Bactrim, Macrobid, Doxycycline, Monocycline, Penicillin) - This UTI is still present with no symptoms.
10-06 Diagnosed "Acid Reflux" (Nexium didn't work)
12-06 Endoscopy diagnosed Gastritis (Negative Bioposy)
12-06 Negative bloodwork for Celiac Disease, Diagnosed "Gastroparesis" - Started Zelnorm
1-07 Diagnosed "IBS-C" - Still taking Zelnorm
3-07 HIDA scan to check gallbladder which was fully functional.
3-07 Zelnorm taken off market, started Domperidone
4-21-07 Emergency Appendectomy (FUUUNN!)
7-24-07 Enterolab results came back positive
Gluten Free since that night....
...Still not feeling great.

Some of our specialty food staples are:

K-Too's (oreos) by Kinnikinnick
Bell & Evans chicken nuggets/strips
Erwehorn (sp?) Twice Rice cereal
"Ritz"-looking crackers by Glutino
bagels by Kinnikinnick--I've never tried them, but my son likes them.
Ener-G wheat free crackers
Tinkyada or Bi-aglut pasta
Kinnikinnick pizza crusts
Kettle chips

Son 6 yrs old, Positive blood work, Outstanding dietary response, no biopsy.
Household mostly gluten free since 3/07

Namaste Spice Cake with Carrot Cake variation (made into cupcakes with shredded carrots and golden raisins!!! SO GOOD)

These are by far my favorite gluten free substitute!

Mom of 4 beautiful girls (the 2 youngest are only 10 months apart!)
Diagnosed with Celiac disease on November 8, 2006; gluten-free as of 12-1-06.

DD#2 11 years old; diagnosed on November 28, 2006. gluten-free as of 12-7-06.
DD#3 6 years old; diagnosed through blood work in October 2006. Gluten-free as of mid-November and doing GREAT!!
DD#4 5 years old; had a scope done on 6-22-07 (at 14 months old) and the dr saw stomach ulcers, but all test results were negative. GI dr told us to put her on the gluten free diet anyway. She is gluten free as of 6-22-07.

Envirokidz animal crackers (more like cookies)

Pamela's pancake and baking mix - don't particularly care for the pancakes (too flat), but LOVE using this mix to bake!
Gluten Free Natutrals (GFN) pancake mix and their pizza crust mix
Celiac specialties doughnut holes (just like dunkin donuts!).
Tinkyada lasagna noodles - can't tell a difference

Gluten-free pantry brownies - only $3 a box at Super Walmart!!! I was very impressed!
I enjoyed the Whole Foods bakery carrot cake, too.

Arrowhead Mills Gluten Free Brownies are by far my favorite so far. Superb flavor,very moist. I baked these at a high altitude, and also at low altitude, and they were perfect each time. I used an 8 x8 pan....these were cake like, which I prefer. Their chocolate chip cookies were a disaster....more like peanut brittle spread all over the place. I honestly wanted to contact this company and ask for a refund.

I'm also fairly new at this and have a stash of different brands to try. Pamela's Brownies were a disaster...I misread the directions and will try them again.

Glutino honey nut and apple cinnamon cereal shaped like cheerios were superb. Their crackers that look like Ritz crackers also look good....I bought some, but haven't tried them yet.

Redbridge beer with a lime in it.....great, especially with corn tacos. ! Their website is a bit wacky. Not up to date. I'm presently in Cottonwood, AZ (I travel) and found it at Walmart. Their website said the nearest supply was Phoenix or Flagstaff. Not true.

Kinni-Kwik Bread and Bun mix was a disaster. There is no yeast in the mix, and my loaf of bread was 3" high. I will try it again, because there is some mix left over. Next time I will use warm Vance's Dari Free, and yeast and try it in the bread machine.

For those with casein/lactose problem such as me...I've been using Fleishman's Unsalted margarine for years....not always available. For some reason, certain supermarkets carry the regular Fleishman's, but not the unsalted. Never could understand that. I'm sure the store manager could order it. Smart Balance or Benecol ...the kind used for cooking and baking...will work also.

Living with my food issues is becoming easier every day. I'm still trying to perfect bread and hamburger buns "from scratch". I have found 4" Wilton miniature spring form pans at Michael's Craft Store, and they are perfect for making buns.
