Hi all,

I've found a delicious, highly rated chocolate chip cookie recipe online that uses instant masa de mais (maize?) I wonder - is this just corn flour? Do you know where you can purchase this? I found the gluten-free chocolate chip cookie recipe on CDKitchen.com - if you search, I'm sure you'll find it too. It's been a long time since I've eaten a good homemade chocolate chip cookie - this would be fantastic to try!

Or...if any of you have a great chocolate chip cookie recipe to share, please do!

Masa (Spanish, from Latin massa, "mass") is a dough made by adding water to the harina (flour) of any grain. It is an ancient foodstuff, prepared and used in pre-historic times......

Masa de maíz, sometimes also called masa harina, is made from finely ground corn. Both are used for making tortillas, tamales, pupusas, and many other dishes from Mexico, Central America, and South America.

They sell masa harina in the grocery store next to the flour and other baking products (at least here in Texas). As always, I would still read the ingredients.

Masa harina de maiz, also called corn flour or instant corn masa mix for tamales, is corn that has been treated with lime and water then ground and dried. Maseca brand masa is available at www.mexgrocer.com. If you buy Quaker masa, the most common brand available in the U.S., be sure to buy the "Masa Harina de Maiz," not the "Harina Preparada Para Tortillas." Regular cornmeal cannot be substituted for masa.

I was at Walmart today and what they had was the "Harina Preparada Para Tortillas", which is made with wheat flour, not corn, as Julie points out. I think that's probably what I remember seeing many times.
