I find that my gluten free breads get soo dry, so now I add a grated apple for one loaf. I slice the bread then freeze it and toast it frozen so it tastes freshly made. I also make waffles, freeze them and toast when needed. They are just the right size to make a nice sandwich. I grind my own grains, that saves a lot of $.
