Chewy Granola Bar...a New Staple At Our House!

I am so happy, finally I found a recipe my boy will eat! He has GERD and food allergies, so it's very hard to find a snack that he'll eat. I'm trying to fatten him up...he ate these all day long *without* me having to bug him to go eat something! Whoopie!

These were easy to make and have tons of possibilities! Our first batch had dates, nuts, dried cherries, coconut, dates and raisins. The next batch will have coconut and mini chocolate chips! You can put just about any fruit or candy in these...mini M&M's, chopped dried apricots, bits of candy bar, flax seed, dried apples and cinnamon, pumpkin and sunflower seeds, peanut butter, gluten free rice puffs and puffed millet, yogurt covered raisins....the sky's the limit! Plus, we made one pan of granola bars and baked a second pan with loose granola chunks, which made a great breakfast cereal. They tasted great! This is going to be a favorite recipe for us, because it's so healthy and I can add a lot of different nutritious foods...but the kids love them and will eat them all day! Here is the basic recipe:

Chewy Granola Bars

Ingredients:

1 cup butter or margarine

3/4 cup brown sugar

1/2 cup sugar (we used fructose)

2 tablespoons corn syrup or maple syrup (maple syrup does work, but corn syrup makes them more chewy...you might want to try doing 1 tbs. of each!)

4 cups oats (Bob's Red Mill oats were great, make sure you get the package that says gluten-free specifically though because they have both kinds!)

1 cup shredded coconut

1/3 cup chopped nuts

1 cup chocolate chips and/or your favorite dried fruit

Directions:

Grease a 12-inch x 9-inch cookie sheet. In a pan, heat butter, sugars, and syrup until melted (add 1/2 cup peanut butter for peanut butter bars at this point, if you want). Mix the other ingredients together in a very large bowl. Pour hot butter mixture over the dry ingredients and stir with a wooden spoon until combined. If using chocolate chips or candy, wait until mixture has cooled slightly before mixing them in...to avoid the chocolate melting and combining with the other ingredients. Spread on greased cookie sheet and press down, making sure the surface is smooth. Bake in a 325 degrees oven for 30 minutes (less time for chewier bars).

We added extra nuts and fruit (the remainder of a fruit and nut mix we had in the car on our trip to Idaho...the kids don't like the nuts plain, but the y sure liked them in the bars!) and extra shredded coconut to ours. Also, we added about 1/2 cup of dried dates...they added to the chewy texture and were really good. You could decrease the sugar a little because the bars turned out pretty sweet with the dates and coconut. Don't let the sugars and butter boil, just melt them together or they will get too hard! Still tasty, but not as good as they could be. Enjoy!

Thanks for posting this recipe. They turned out tasting yummy but maybe a bit sweeter than they should be. I used brown rice syrup and a bit of honey instead of maple syrup/corn syrup. I cut them while they were still warm and they just crumbled when I tried to pick one up so I waited to let them cool before picking up another one. Once they were cool they held together much better. Did everyone have the same issue? I wasn't sure if I melted the sugar, butter and syrup mixture enough.

Thanks again for a great recipe.

Wow! I made these yesterday and they are fabulous!!! Really really good! I chose to make the recipe as listed with the following change 2/3 cup chopped almonds (instead of 1/3) and 2/3 cup chopped Kraft caramels (instead of 1 cup of fruit).

These are wayyy addictive.

I too had the problem of the middle ones falling apart (the outside ones were great, but the middle ones were turning to granola - an excellent use for the crumbs) so I put them back in the oven for a while. I think next time I'll make them thinner and in a wider pan for more even cooking.

I highly recommend these. They are so good.

Thanks for posting the recipe!!!

The regular cheddar and sour cream Ruffles have yeast extract, which is probably the source of gluten.  Pinpointing the exact cause of gluten exposure is always tricky, but I've come to learn my initial reaction to gluten compared to the ongoing symptoms that will occur days, weeks, and sometimes months later.

Yes, that's probably best. (Honestly, that is an extraordinarily high number, I've never seen anything like that. I repeated my blood tests (not taken while pregnant BTW); before giving up cake, pizza, and beer, I wanted to know for sure! You don't wanna mess around with anything while pregnant. Congratulations and best of luck!

Here are the ingredients listed for the regular sour cream and cheddar Ruffles: Potatoes, Vegetable Oil (Canola, Corn, Soybean, and/or Sunflower Oil), Maltodextrin (Made from Corn), Salt, Whey, Cheddar Cheese (Milk, Cheese Cultures, Salt, Enzymes), Onion Powder, Monosodium Glutamate, Natural and Artificial Flavors, Buttermilk, Sour Cream (Cultured Cream, Skim Milk), Lactose, Butter (Cream, Salt), Sodium Caseinate, Yeast Extract, Citric Acid, Skim Milk, Blue Cheese (Milk, Cheese Cultures, Salt, Enzymes), Lactic Acid, Garlic Powder, Artificial Color (Yellow 6, Yellow 5), Whey Protein Isolate, and Milk Protein Concentrate. CONTAINS MILK INGREDIENTS. Here are the ingredients listed for the baked ones: INGREDIENTS: DRIED POTATOES, CORN STARCH, CORN OIL, SUGAR, MALTODEXTRIN (MADE FROM CORN), SALT, SOY LECITHIN, DEXTROSE, WHEY, WHEY PROTEIN CONCENTRATE, ONION POWDER, CHEDDAR CHEESE (MILK, CHEESE CULTURES, SALT, ENZYMES), MONOSODIUM GLUTAMATE, BLUE CHEESE (MILK, CHEESE CULTURES, SALT, ENZYMES), CITRIC ACID, ARTIFICIAL COLOR (YELLOW 6 LAKE, YELLOW 5 LAKE, YELLOW 5, YELLOW 6), SKIM MILK, NATURAL AND ARTIFICIAL FLAVORS, GARLIC POWDER, LACTIC ACID, DISODIUM INOSINATE, AND DISODIUM GUANYLATE. CONTAINS MILK AND SOY INGREDIENTS   They look a lot the same except for the baked product contains soy. What do you suppose is the hidden source of gluten in the regular Ruffles that is not found in the baked ones? Could you be mistaken in attributing your reaction to the Ruffles? Could it have been from gluten in something else you ate around the same time or even a non-gluten tummy event?

@plumbago on my blood tests I got 4500 and normal should be between 25-30 but they wanted me to continue eating gluten until a endoscopy was done and also biopsies taken. I’ve took it upon myself to cut gluten out today based on the research I’ve done about it during pregnancy

If you tested positive for celiac on labwork, I would definitely give up gluten.
