Modified Food Starch is generally derived from corn unless other wise stated as in "Modified Food Starch (wheat)" in the US. Barley, malt or rye are not players here.

There has been a lot of discussion in the past about it. Personally I'll only eat something if it says modified food starch (MFS) from corn or in one case sorghum. Although there are laws that govern how something is labeled I have little faith that it's accurate, for a number of reasons. I've very sensitive too. Basically if a company buys MFS from outside the US, they only label it MFS. Here in Hawaii we get many products from many countries where labeling laws are at best convoluted. There are many snack foods that are repackaged that only say starch or modified food starch with no reference to wheat that have made me sick. Some Ice creams as well have MFS which I avoid. GUess I just don't trust the companies to be accurate even when the laws say they have to disclose wheat.
