Does anyone have any ideas on how to substitute condensed soup in recipes? Alot of my casserole recipes call for cream of chicken or mushroom soup undiluted.

I know Progresso Cream of Mushroom and Cream of Chicken with rice are both gluten-free.

Bette Hagmans book called "gluten-free comfort food" (or something close to that) has a mix she uses in place of a can. I think it is a dry mix, that you can make up a bunch of, and then take some out when you need it. hope this helps
