Tomorrow I am going strawberry picking, but I need to find something to make the strawberries with! I am not a jam person. Anyone have a recipe for a gluten-free pie crust, so I can make a strawberry pie? Thanks!

While I absolutely love baking, this is totally cheating...

I get my gluten-free pie crusts at the Whole Foods bakery. They are absolutely delicious!! I use them for pies and quiches, and no one can tell the difference. It is actually the best part of the pie/quiche, it is that yummy!!

But, if you do find a good recipe, I would like to know too :)

I normally use the Gluten Free Pantry Pie crust mix. :) It's very good.

This recipe http://celiacdisease.about.com/od/desserts...erSnapCrust.htm using an entire bag of Mi-del Gluten-free Ginger Snaps. I am not a skilled baker, so mine always came out messy, but we didn't mind.

I have 2 recipes. The first is from no weight gain cookbook and the second is from Taste of Home website.

Pie Crust:

1 cup gluten free oats

1 cup finely chopped walnuts

1/8 teaspoon cinnamon

1/8 teaspoon salt

1/3 cup honey

1 tablespoon maple syrup

1. Preheat oven to 400 degrees.

2. Mix all ingredients. Spray pie pan. Pour mixture into pie pan.

3. Spray fingers and press mixture into pan. Spray top of mixture.

4. Bake for 5 minutes.

Crumb Crust:

1 cup brown rice flour

1/2 cup ground walnuts

3 tablespoons apple juice concentrate

2 tablespoons olive oil

1. Combine all ingredients.

2. Spray pie pan. Press mixture into 9 inch pie pan.

3. Bake at 375 degrees for 10-14 minutes or until set.

4. Cool on wire rack.

5. Fill as desired. Cover the edges of the crust with foil when baking filling.

Bette Hagman's Vinegar pastry always works for me and seems totally normal to non-gluten-free people. It makes enough for two crusts, so you can freeze the half you don't need and successfully thaw it months later, or you can roll it out and bake pieces on a cookie sheet, then spread with jam and pretend you have Pop-Tarts!

1c rice flour

3/4 c tapioca flour

3/4 c cornstarch

1 teaspoon xanthan gum

3/4 t salt

1 T sugar

Mix those together in a bowl, then cut in:

3/4 c shortening

Mix in:

1 egg, lightly beaten

1T cider vinegar

Then start adding ice water, 1 T at a time, and toss together with a fork, until all of it has been moistened enough to keep together in a ball when you squeeze it in your hand. Split it in half and wrap each half in plastic wrap and refrigerate 30 min (or skip this if you're in a hurry). You can also freeze at this point. Roll out each half in whatever way works best for you to prevent sticking. I use a few drops of water sprinkled on the counter to hold a piece of wax paper, sprinkle rice flour on the wax paper, and use plenty of rice flour on the dough and rolling pin. Then I can just put the pie pan face down over the rolled dough, slip my hand under the wax paper, and flip the whole thing over to get the dough into the pan. Shape the edge, poke with a fork all over if not filling, and bake at 450 for 10-12 minutes, or follow the directions for a filled pie. Don't forget to bake and eat all the scraps you trimmed off :P .

My guess is that you could substitute any decent flour blend for the mix of flours above, although I haven't tried it with a bean flour mix.

I can't tell you how happy I am to find these recipes. A couple of hours ago I ate a piece of the blueberry pie I made on Saturday because I just couldn't stand it anymore. My stomach is hurting and I feel so bloated. I need to get out of my denial stage...

    • Newbie Mom - How is my son feeling?
      Hugs to you and your daughter. My son and I are in the same boat, or at least,  paddling alongside your boat.  At their age being scrupulous about their diet is not only incredibly hard but socially isolating. Adults consider celiac people to be a pain so imagine what their young friends think.  Feeling so unwell and having no energy adds to their distress. And the thing is - I don't think at that age that they really understand that even the slightest bit of gluten will set them back badly.  I know my son is convinced one sweet won't matter. It really really sucks.  
    • TRUSTING OTHERS about GLUTEN! how do you know if someone has used gluten free flour?
      No one in my wider family gets it, although my sister is certainly trying to understand. She gets that I will bring all food for my coeliac kids when we come for meals and is okay with that.    For other social events, I will suggest the meal is at my place so I can control the gluten.  But my biggest battle is my children's father (my ex husband) who refuses to get it, and thinks I am being stupid and trying to prevent him seeing V.  I have offered that V can visit but not eat nor stay the night.  Ex does not have the means or the brains to manage gluten free meals.    At this point it looks like I may need to go to court to get an order to prevent V from being forced to go and get glutened. I really really hope to avoid this, but its not looking good.

      I guess it's the "natural flavoring" which throws me off. It could or could not contain gluten and it's in so many products. I haven't been on a gluten-diet for as long as you...6 years. I may have bee undiagnosed and untreated for more than 25 years since i had signs that went back to chidhood. Yes, I have balance/anxiety/neuro issues. I know anxiety is connected to damage in intestines, but I don't know for sure if celiac causes balance/neuro issues. I was already tested for brain ataxia, but I didn't get too far on that. Well, there wasn't an exact test, but the neurologist noted that I was walking straight or something on those grounds so I must not have it. I know studies have shown Transglutaminase 6 antibodies indicate gluten ataxia, butthat test is not yet available to the public.

      Today is day 5 and I know it takes much longer to recover, but he is so ill today he has skipped school and is in bed asleep when he is not writing around in pain.   I will interrogate him later - there is a chance he ate something from his friends.

      after nearly 6 years gluten free, i still have some balance/anxiety/neuro issues.  they're the last to leave the symptom party, i'm afraid.  i attribute this to the years and years i went undiagnosed and untreated (25 years~! )  i don't have much faith in the medical field's intelligence or in their ethics. funny story:  my obgyn bill had a charge on it that my insurance denied - $25.00 for 'smoking cessation intermediate 5-8 min'  WHAAAAAT?!  (the doctor said it would be a good idea if i quit smoking.  i'm like 'no shit, sherlock')  called the billing office and told them i'm not paying it.  WHY?  1.  do you have any idea how much money i would owe my dad????!!!  2.  i don't smoke with my vagina.  they took off the charge

      Hello! I am new to this Celiac website... Is there anyone out there with Celiac AND extensive food allergies? My allergies include shellfish, dairy, eggs, cantaloupe, kiwi, mango, nuts, oranges, red dye, and more I can't think of. I went to the allergist about a year ago to see why I wasn't feeling well, and once everything was eliminated, I still didn't feel well. We did more testing to find out I had celiac as well as allergies to cattle as well as rye grass (I live on a farm basically). This was back in January 2016. I recently had my endoscopy with the gastroenterologist a week ago. I have no idea what to do or what to eat... So fish and potatoes for me!
