So, I bought a jar of roasted red peppers in "vinegar", salt and garlic. The jar just listed vinegar, not distilled vinegar. Should I just assume this is the same thing as distilled?

If the label says just vinegar in the US it is apple cider vinegar. In the US if it is distilled the label has to say 'distilled'.

It did say "Product of Turkey" on the label. Have no idea what vinegar means there.

Foods sold in the US must conform to US labeling laws, regardless of the country of origin.

The only vinegar you need to avoid is malt vinegar, which is always labeled as "malt vinegar."
