Hey ya'll,

I've got a quick question. I found a yummy recipe for a ham and potato cassarole (sp?), but it requires cream of celery or cream of mushroom soup. Does anyone know of a brand of cream of...soup that is gluten-free? I checked my local grocery, but they all seemed gluten based. I sure would appreciate a response. I'm sure this has been asked a million times. :blink: Take Care everyone! -Julie ;)

Hi Julie,

I can't help right now with the cream of ??? soups, but I do have a great

recipe for ham casserole. Just made it last night, in fact. Easy, too.

HAM CASSEROLE

Peel and cook 6 to 7 cups of potatoes. [i nuke about 6 or 7 potates and let cool and then peel. It's faster and easier, I think

Combine 2 Tbsp. melted butter with 2 Tbsp. corn starch in saucepan.

Stir in 1 cup milk.

Return to heat and bring to boil. Stir until thickened.

Remove from heat.

Add 1 Cup sour cream and 1 Cup shredded swiss cheese. [i like monterey and

cheddar for my recipes. It's your choice.]

Add 3 Cups chopped leftover ham and 1/2 Cup chopped onion to cheese sauce.

Layer potatoes, cheese and ham mixture in buttered casserole.

Top with 1/2 cup shredded swiss cheese and 1/4 c. melted butter [i usually

omit the butter and some of the cheese.]

Bake 350 for about 30 to 35 min.

Progresso Cream of Mushroom is gluten-free. Not as thick as Campbell's but it is Cream of Mushroom. I use it for my roasts in a crock pot.

that recipe sounds good! It seems as if the other ingredients in your recipe serve as the "thickener" instead of cream of....soup. Good idea!

Thank you for the Progresso info. I had read it in the past, but I didn't see it at my local grocery (they may have just been out). I'll look again.

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep searching for a cause?

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.
