Chocolate Fig Cake with Betty Crocker Gluten Free Cake Mix Rate Topic: -----

First, let me say that I'm not much of a baker. In fact, if it's doesn't come out of a box, it doesn't happen in my home.

I used Betty Crocker Gluten Free Chocolate Cake Mix

Added, in addition to directions on the box (with a touch of less water):

I cup of fig jam
1 tsp. cinnamon
1 tsp. all spice
1 tsp. nutmeg
1 T rum extract

Serve with fresh whipped cream and you will certainly think you're in heaven. Super for the holidays

BUT, it settled a little dense on the bottom, but still divine!

This sounds good.
1960s-had symptoms-could have been before but don't remember
1970s-told had colitis or nervous stomach-was given phenobarbital, felt great but still had symptoms
Me, dd and ds diagnosed with Lactose Intolerance
2000-osteopenia
2001-had stroke because of medications I was given
June 2003-saw Chiropractor who specialized in nutrition: Celiac Disease not Lactose Intolerance, went gluten free with once in awhile cheating, off soy and dairy for about 6 months
June 2003-found excellent doctor for fibromyalgia (who has found out she has Celiac Disease)
May 2006-went gluten free with NO cheating-excellent! Made all the difference in the world

Betty Crocker made me happy since they came out with the gluten free stuff. My local Food Lion FINALLY has chocolae chip cookies, brownies, yellow cake mix and chocolate cake mix.

HOWEVER to make a two-layer cake, which is a must...two boxes is needed. For that price I can buy one bag of Namaste cake mix and still save a few cents.

Still more convenient though since the Food Lion is two miles from my house :D
-Self-diagnosed gluten/wheat intolerance 2007. Negative (basic) blood test for celiac disease March 2009.
-Diagnosed positive for Celiac 5/11/2010!!
-Vitamin D low (last year was deficient), Iodine low, Protein S low. Balance/dizziness not related to Celiac.
-Elimination diet 11-4-2009 and ended 02-28-2010. Tolerating dairy again. Highly intolerant to soy, sensitive to green peas and corn kernels.
