1 can Mexi Corn (I couldn't find so used Southwestern Corn)
1 can Creamed Corn
1 pound ground beef
1 small onion, chopped
Prepared mashed potatoes (4 or more servings)
Nucoa Margarine (or butter or whatever you use)
Salt and pepper to taste
Brown the ground beef and the onion and put in a casserole. I used a fairly large rectangular one because daughter really likes potatoes so I figured I could get more on there that way.
Mix in both cans of corn. If there is a lot of liquid on your Mexi Corn (there wasn't on mine) you'll want to drain it first.
Add salt and pepper.
Top with potatoes. I used 4 large Russet Potatoes from Costco. Peeled and boiled until tender then drained off most of the water and mashed, adding plenty of Nucoa. I can't have dairy. Salt and pepper to taste.
Just before baking, dot with a bit more margarine (or butter), cover (I used foil) and bake until heated through. I suppose you could heat this in the microwave as well. I did that with the leftovers.
This made about 4 servings. I think it would also be good with chicken.
