Were a family that use to eat out a couple times a week. As you all know, being gluten free and eating out is much more difficult. I like to cook and I try to freeze things so I can have food in advance. However, I would love to find some gluten free frozen foods that I could have in the freezer to use in a pinch. For example, our church is having a last minute pizza party and I would like to take a pizza my daughter can enjoy. Does anyone have an ideas?

I have had some good luck with Amy's. They are a bit expensive but the macaroni and cheese is good.

Somebody has posted about some good frozen dinners but I haven't been able to find that post. If anyone has any ideas.........

Amy's has some great frozen dinners. Their cheese enchiladas even come in a family serving (like 9 or 10 enchiladas in a pan). They have a great rice crust pizza, I just add my own toppings to it because it's a cheese pizza.

Also Kraft has a new line of south beach diet meals. I have found 2 of those that are ok for us. Kraft will not hide any gluten ingredients. Just read the labels.

Ian's has allergy free chicken nuggets and fish sticks. They are pretty good, but a little expensive.

Hope that helps a little.

Thanks so much Jessica and Angel! I've seen Amy's in the grocery store and I can't wait to try them. I didn't even know that they had south beach frozen meals. We've never eaten frozen meals very much but I'm looking for healthy alternatvies to eating out!

      Fermentation breaks down some of the gluten in wheat. Nowhere enough for a wheat dough to become gluten free, but the gluten may be significantly reduced. I think some pizzerias make the dough the day before and leave it overnight. The longer the microbes are acting on the flour, the better.

      And the fact is, no two celiacs will necessarily respond the same to gluten exposure. Some are "silent" celiacs and don't experience obvious symptoms. But that doesn't mean no harm is being done to their gut. It just means it is subclinical.

      Thank you, Trents.  I appreciate your helpful and friendly reply. It seems more likely to be a bug.  It has been a pretty severe bought. I feel that I don’t have enough experience to know what signs my little one shows after exposure to gluten.

      Hannah24, be aware that if you are on a gluten free diet, you will invalidate any further testing for celiac disease (except genetics) and would need to go back to eating significant amounts of gluten for weeks or months to qualify for valid testing.
