Wonderful hot soup to warm a person up in the morning or for a light lunch. Provides the vegetables, vitamins, proteins, and is a quick make in the kitchen. Honestly this egg drop soup could use a little gluten free soy sauce to top it off.
Start with washing and chopping: bok choy stalk, 1.5 cups cabbage, 1/3 to 1/2 cup bean sprouts, 1/2 cup mushrooms, 1/4 jalapeno pepper, 1/2 cup cauliflower.
Heat about a 3 cups of drinking water on the stove med. high heat, when boiling toss in vegetables. Crack and drop in two or three eggs. Turn down heat after two minutes to med. low heat until eggs are cook to preference. Scoup and pour soup into bowl and add a dolop of rice if you'd like.
Good meal to tupperware, heats up quick and easy to make.
Enjoy!
