I found this great recipe for a new twist on beef. I loved it and so did my gluten-free husband. P.S. The cucumber dressing needs to be prepared according to your taste buds.

Ingredients

1lb of lean ground beef

1/2 bell pepper, cut into strips

6 mushrooms, quartered

2 green onions, diagnonally cut into 1-inch pieces

1 clove of garlic

1 tablespoon of seasoned rice vinegar-(I substituted apple cider vinegar for the rice vinegar)

1 teaspoon of soy sauce

salt and pepper to taste

12 cherry tomatoes, halved

Cucumber Dressing

1 medium cucumber

1/4-1/2 cup coarsely chopped onion

1/4-1/2 cup of loosely packed cilantro leaves

1 clove of garlic, minced

1 tablespoon of diced jalapeno-I omitted this

1 tsp - 1/2 cup of seasoned rice vinegar

Place cucumber, onion, cilantro, garlic and jalapeno into food processor:process for 1 minute. Spoon mixture into a small bowl and stir in vinegar

Brown beef, drain, add peppers, mushrooms, green onions, and garlic; cook until tender. Stir in vinegar and soy sauce; season with salt and pepper

Place cucumber dressing onto the cooked beef and serve.

Try it over a bed of lettuce or rice.

ENJOY!

:) I just saw your recipe, and just wanted to mention that some may not realize that many types of soy sauce contain wheat. The only one I can find in my area that doea not is La Choy. Check the labels. Thanks for the recipe.

      Enlarged lymph nodes in neck and groin with celiac are not uncommon. They can take time to reduce even after going gluten-free. Monitoring is key.

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep searching for a cause?

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.
