Hello

I'm new to this so hope this is the correct forum for this kind of question. Apologies if not!

I have been gluten free for quite a while and so have many good recepies for things to make food more interesting, however one thing that I really miss is Mexican Food, especially Fajitas!

Although there are corn tortilas that you can buy, these still contain wheat flour and so are useless.

I wonder if anyone knows where you can buy gluten free soft tortilla wraps of if anyone has a recipe to make plain ones?

I would really appreciate it!

I have not tried them, but members of my Gluten-Intolerance group say that French Meadow Bakery has the best gluten free tortillas around. Their gluten-free tortilla is This product is casein-Free, Gluten-Free, Gluten-Free, Lactose Free, Peanut Free.

If you Google French Meadow Bakery, you'll find the link to their webpage. I've had their gluten-free brownies (sold on their web page -- I had them at Disney World), and they are excellent.

While we're on the subject: Does anyone know of a good ABSOLUTELY GLUTEN-FREE comercially produced corn tortilla?

You guys are making me paranoid! I buy corn tortillas all the time. So I just went to my fridge to re-read the ingredients on my corn tortillas. I have a pkg of El Maizal tortillas and the ingredients say "ground corn treated with lime water, sodium propionate (to preserve freshness), cellulose gum, fumaric acid, propionate acid and sodium phosphate (to preserve freshness). Is there gluten in any of that??? I haven't noticed it ever bothering me. I did just pick up a pkg of Azteca corn tortillas because they didn't seem to have my usual El Maizal brand. I'm looking at the ingredients on it and it says "stone ground corn flour (processed with Lim), water, fumaric acid, cellulose gum, guar gum, potassium sorbate and calcium propionate (preservatives). I am usually a little suspicious of any brands that I know also have other products, as I know Azteca also does flour tortillas, but there's no disclaimers on this about facilities or anything. Any thoughts on my brands??

French Meadow "flour" tortilas are deicious. They're just tiny, so you have to make lots of burritios :P Sonoma brand Ivory Teff Wraps are a close approximation of flour tortillas, and they're BIG.

Mission brand corn tortillas have corn and water, and we eat them all the time without issue.

La Tortilla Factory makes wonderful gluten free tortillas. Try the Ivory Teff wraps, they are made from teff and millet flours. They are the size of a flour tortilla, smell and taste similar, and go well for use as a wrap or in making enchiladas. They can be a little dry. To fix that, microwave them for a few seconds with a damp paper towel. I find mine at Hy-Vee, but Whole Foods is also listed as a retailer.

All of the corn tortillas I see at my store are nothing more than corn, lime, and water. Mission even say "gluten free" on the package.

You might try looking around more at different brands, or making your own (they aren't that complicated, really, and taste 100 times better).

I buy the gluten free rice tortilla shells (the sell them in the freezer section at Superstore in Canada). They are the same size as the regular soft tortillas and are great for burritos and enchiladas as they are softer than the corn varieties.

Mission Corn Tortilla's are gluten free.. They even say so on the bag!

Do they still say it on the bag? I read that the statement no longer appears.

"Gluten-free" still appear on the tortilla chips at COSTCO -- they are made by Mission. That, I know, because I just bought some. :)

Unfortunately, I reacted to them. :(

I'm okay with corn products only if they are not procesed in a plant that also processes wheat.

I'm going to try Bob's Red Mill gluten-free masa. Regular, store bought masa has given me problems so far, alas. Has anyone tried Bob's Masa?

I buy Food for Life gluten-free soft shell tortillas. They are available in the health food section of Superstores in Atlantic Canada. I see they are also available on line at the Gluten Free Mall.

Perhaps it is the corn that is bothering you, not gluten contamination?

Good point, tarnalberry. I thought that, too . . . but I kept experimenting, and I am happy to post that I am fine with organic, non-GMO corn. I am also fine with organic, non-GMO polenta, cornmeal, etc. I also do well with Corn Thins (they are also organic, non-GMO).

So, maybe in addition to gluten, I also have a sensitivity to genetically modified corn. Tarnalberry, thank you SO MUCH for sparking my realization of this possibility! I wonder if people who have reactions to corn have them because they are eating genetically modified corn, and their bodies cannot handle it. So many of us become sensitive to other foods--it might be true?

Has anyone else here found they can eat organic, non-GMO corn but not genetically modified corn? I'd love to know! (For those new to non-GMO: If a product isn't marked as being non-GMO, it is most probably is genetically modified--especially if manufactured in the United States.)

As memory serves, Bob's Red Mill masa is also non-GMO, which is why I'm excited to try it.

I NEED MY CORN TORTILLAS!

I wasn't at all happy with the additional information this company asks you to provide at the end of the order -- weird, specific credit card info. I left the site because I was unsure. I was very sorry to do this because I wanted to take advantage of the 2 for 1 Monday offer, but frankly, it really creeped me out.

Please convince me I am wrong. Thanks.

We've ordered from them twice, I'm not sure why they ask for the additional info, as other sites don't, but it's supposed to be for verification of your card. We've done it twice with no problems, though! You could email to get some more info. They have a contact form on their site. I was a little unsure about it, too, but we've had no problems with billing! :)

We tried some kind of Teff wrap but didn't like it at all. Daughter sometimes likes the rice tortillas, but sometimes not. I have yet to see corn tortillas with wheat in them.

If they're asking for the security code on the back of the card, that's pretty common, even among major online retailers. It's to verify that you have the card in your possession, and that the number wasn't read off of something else. (Not sure how useful it is, 'cause it needs security too, but that's the goal.)

I'm used to the security code thing. This was a page of info after I put in my credit card number -- never had that happen before now.

Hello, everyone,

I think, this is my first or second posting on this forum - it is nice to see so many posts related to glutein free diet. I have a question. Say, you have bought a glutein free meal /bread/item from the grocery store and you have reacted to it. What symptoms would prime you to think that you have digested some glutein?

I am very curious... What are the IMMEDIATE sypmtoms of your glutein contamination?

That sounds like a really good deal, except I live by myself ... my folks and my bf sometimes eat the gluten-free foods with me, but that's still a lot. Do they do ok in the freezer?

    • I figured I would update those who were wondering.  I have gotten the appt. so far moved up to August 30. I am waiting to have gene testing done via swab for all 3 of my kiddos tomorrow. My daughters celiac antibodies came up negative but her IgA is low which the ped said could cause false negative antibodies for celiac so she will need to see a GI dr. also. The pediatrician is going to call the GI to try to get them in sooner. I am keeping them all on a gluten diet until the GI dr. decides what to do. I am on the cancellation list already for my son, however I am not going to be persistent with my phone calls to them until I have the results of the gene test. I really want that result in my hand before going to the GI dr if I can. Maybe if he is positive, along with his bloodwork and my history they can forgo the endoscopy. But he will eat gluten till then.  My husband and I have been very honest and upfront with him as to what is going on and the possibility of the endoscopy and what that entails and although scared in general he seems ok after assuring him that since I have it he has me to help him every step of the way.  Going through his current diet with him I realized that he is truly on such a low gluten diet that I am actually surprised his bloodwork shows antibodies at all!  So I told him to make a list of allllll the gluten he could possibly think of eating and he needs to pound it until the GI visit or endoscopy. Funny thing is everything he keeps thinking of to want to eat...is already gluten free!  The other night we were at a friends and he asked if he could be done with his hotdog. I made him finish just the bread 😂 Thanks for your help and advise and I will keep y'all posted on both kids!  My oldest is a ok as far as all his antibodies. Just actually had a follow up for other immune issues and all his levels are now normal!
    • I like your plan Cara, I may have to include it in my sons.    Poor little guy is still very very sick. I think he is resisting and cheating, despite having the support of two other siblings and a 100% gluten-free home. 
    • Despite it being a nightmare, I did wait for my kids to get biopsies. At one point I had one severely ill child gluten-free and two more waiting having to eat it. It was worth the wait though and I think long term a biopsy may be worthwhile, especially for school. I have already had issues with schools and camps so having a firm diagnosis has been helpful. 
    • Knowing that the reaction to gluten in celiacs is an uncalled for immune system reaction, I was thinking of how a cure would be possible. Maybe a medicine that somehow turns off the immune system. The only thing that i've heard do that... HIV.  obviously that's way worse than celiac. Just some food for thought.
    • Well, you can probably get an apple or something.  You might be able to get someone to boil you some eggs.  But be careful of things like nuts that should be naturally gluten free.  They have almost always been soaked in a flavor solution that usually containes caramel coloring, "soy" (wheat) sauce and other aditives.  If I am really hungry and must eat in a Chinese restaurant, I order plain white rice and steamed vegetables.  But even so, you must monitor it carefully.  The rice sometimes has other substances added to give it a better texture, and very often the vegetables have in fact had "just a little bit" of soy sauce added.  To be fair, celiac disease is hardly ever found in East Asians, so understandably people are not tuned it to it.  Also, culturally, with the exception of fruits, it is generally thought that the flavor of foods needs to be enhanced, so it is had to find anything natural even in the "western" gorceries. Even in the western restaurants, be careful.  Fish and meat and often vegetables are usually pre-marinated. I will not even attempt to address the issue of cross-comtamination, since that is a whole higher order of things. I do know what I am talking about; I have celiac and have worked here for nearly 7 years.
