Easy Lemon Tart

gluten free cookies, sweetened condensed milk and lemons.
Child's play, you've got to try it.
Diagnosed in Nov 2005 after Biopsy and Blood Tests
Cannot tolerate Codex Wheat Starch.
Self Taught Baker.
Bake everything from scratch using naturally gluten-free ingredients.

200g Gluten Free cookies
70g butter, melted
400g tin sweetened condensed milk
3 lemons, Grated zest and juiced
Preheat the oven to 180 degrees C.
Crush the gluten-free biscuits then add the melted butter and mix.
Line the bottom of a pie dish by pressing the mixture onto the dish with the palm of your hand.
Pour the condensed milk into a bowl then add the eggs and mix well.
Add the lemon juice and lemon zest.
Pour the lemon mixture into the tart shell.
Bake in the preheated oven for 10 minutes.
Cool and refrigerate before serving.
Yummy!!! I love lemon.
