Starting The Diet :o

I've been gluten free for TWO WHOLE DAYS! Such a long time!

I have CONSTANT HUNGER OMGGGG. I *did* use the search function and it seems the feeling hungry all the time is normal, and that increasing protein and decreasing sugar is helpful. Also, small meals frequently. I'm thinking about keeping a food diary, but I don't typically have dedication for these things. But I'll try. I hope the hunger is a sign!

A few questions:

What are some good high-calorie gluten-free (and, ideally, dairy free too) foods? Meat is one, right (and I know some are easier to digest than others)? Is there anything else?

Are there any nutrients I'll really need to take extra care to make sure I get enough of in my diet?

I'm so glad this forum is here. :)

Welcome to gluten free. Lara Bars are great to have with you, as are nuts for snacking. Cheese is great if you can handle the dairy. Lot of fruits and vegetables. There really isn't a big difference in diet between gluten-free and gluten-full, except most processed foods are off limits. People with celiac are sometimes low in vitamin D and water-soluble vitamins, like B-12. A multivitamin it good to take. When I went gluten-free last year I initially felt hungry, but it went away after a week. CC can result in the hunger pangs, too. Hardest part of gluten-free is eating out (I'm very sensitive to cc).

I craved beef and avocados for a few months- probably due to iron/B vitamin deficiencies and fat malabsorption. The cravings and intense hunger did wane as my gut healed and was able to start actually absorbing nutrition from food.

I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.

"her stool study showed she had extreme reactions to everything achievement on it long course of microbials to treat that." The wording of this part of the sentence does not make any sense at all. I don't mean to insult you, but is English your first language? This part of the sentence sounds like it was generated by translation software.

What kind of stool test was done? Can you be more specific?

Perhaps I should also have said that in addition to showing a very high response to gluten, her stool study showed that she had extreme reactions to everything achievement on it long course of microbials to treat that.

My daughter has celiac disease and has had for a long time. She fell loses strictly gluten-free diet and recently got rid of all cutting boards in any gluten in her house at all. She just had a stool test and it came back showing of gigantic response to gluten in her diet. What could be going on since she doesn't eat any gluten and is very careful about any kind of hidden glue? Help!
