Burgers with mushrooms and onions

Avocado halves with bacon crumbles and balsamic glaze (thank you, Sora for that recipe)

Green beans or asparagus--have to see what they look like at the market.

Day 2 ....and fortheloveofmike, I swear I am having w/d from sugar and cheese ...and this is not fun at all

So happy you are getting excited about Thai chicken! I have never, ever used curry powder in Thai dishes but instead make all my pastes from scratch with kaffir lime leaves, lemongrass, chiles, etc. Curry powder to Thai chicken is as authentic as Spam is to bacon. Who needs curry powder? I LAUGH in the face of curry powder. :lol:

I know what you mean. Both are equally good, actually, and completely different from one another. Let us know what you decide! Short ribs should be its own food group, as bacon should be. :)

Luck! and if it is edible, please share? thanks, toots. I am not crazy about the overwhelming taste of curry powder (I think it tastes like soap) , although I love Thai dishes....go figure...Nice superman. :)

I have never, ever used curry powder in Thai dishes but instead make all my pastes from scratch with kaffir lime leaves, lemongrass, chiles, etc. Curry powder to Thai chicken is as authentic as Spam is to bacon. Who needs curry powder? I LAUGH in the face of curry powder. :lol:

Definitely not around here but when my husband takes me to the nearest city (three hours away) every two months on culinary escapes (as we call these trips) we find the lime leaves (fresh and frozen) at an Asian market. We stay in a tiny boutique hotel that is so charming. It only has about 12 rooms I think and each time you get a different one. They are all plush but very different from one another as the building is old (for our standards) and all higgledy piggledy. It is a treat, that is for sure. So, we book the sweet hotel, make dinner reservations at amazing restaurants and go food shopping. We hit the Asian market, the Latino shop, the huge Italian Centre, large indoor Farmer's Market, and gluten-free shop. We usually come home with an enormous haul but this is what we love to do. This is our entertainment. Anyway, we are going next weekend and I cannot wait. Though I'm in lots of pain we are going. As you know, I always lie down in the Jeep en route, but nothing will keep me away from those stores.

How do you like that for a short concise answer? :lol:

You are sure to love it. It will grow on you and then you will become addicted like me. Heck - once we had something similar only with blue cheese added! FANTASTIC. So, if cheese causes migraines as it used to me, go all out...

L2T and Irish (Irish knows) in one of my past lives ;) I lived in Thailand and it was an all day process to make our curries. Shopping for ingredients, sitting on the floor and pounding the spices and cooking it. Then eating it, the best part.

I can actually smell it right now. Must make curry soon.

This looks soooooooooooo darned good. Sometimes you've just got to have a great burger. And I know yours will be no ordinary burger.

Anyway, there is something so gratifying and therapeutic about making curries from scratch, isn't there? I made one last week. I don't know which I like better - red or green. I'd have to say both.

We always had red when there but now days I prefer green. We used to make red with those giant lovely Thai scampi and fresh pineapple chunks. So delicious, try it if you can get some scampi on your shopping trip.

We always had red when there but now days I prefer green. We used to make red with those giant lovely Thai scampi and fresh pineapple chunks. So delicious, try it if you can get some scampi on your shopping trip.

MMMMMM! On our culinary trips we take along our coolers, of course, so will be on the lookout for scampi (which will not be the freshest as the nearest sea is about 2,500 miles away). But the combination with pineapple sounds wonderful.

Menu change -- the recipe I had called for lime zest -- my curiosity has spiked for some ingredients L2T has posted -- so a field trip to the asian market is now on my to do in the morning list.

Tonight will be enchiladas with cream/green sauce -- need to make an extra cassorole for a neighbor and this will do nicely.

zu-noodles and cilantro "pesto" for me

Sinful Choc Cake for men and neighbor.

Choc "Mousse" for me :)

I felt as if I were right there with you shopping. Sounds like fun.

and by the way, only you can use the term " higgledy piggledy" and get away with it.

:huh:( now, if I had said that, Adalaide and/or Karen would have been all over it like a cheap suit.)

Your expeditions are much like our trips to NYC..I like to hit .the wine shops in particular..then, pack up the car and haul it all back home.

Gotta keep our kitchens and pantries stocked!

eew, no! and let me tell you why:

our son goes out with us to shows (most times at bars) so last saturday night, we are out seeing a local band reunion and (YES they stock redbridge for me!!) some woman, younger than me, but not tooo much younger, is dancing beside me and making motions at harry (son, 26 - yeah, he's a hottie, lolz) who is standing in front of me close to the stage. i made a face at her and she hollers in my ear: don't you just want to put him in your pocket and save him for later? i said: NO! at that point harry turned around and tells her: that's my mom......

now. the guy who plays 'brady black' on "days" - he looks like he can wield a shovel while fixing a mai-tai...... ;) oh, hell, he doesn't hafta do anything. except get naked :D1047132-T800600.jpg

    • Hi everyone, I've been reading this forum sporadically and have some questions of my own. I'm in my 40s and was diagnosed with celiac last December by biopsy and blood work after months of tests by my primary and then a gastro. My husband, around the same age as me, was dx'd with stage 4 cancer a month later, so admittedly it's took me longer than I'd have liked to learn about celiac. Now I feel pretty on top of my diet. I mostly make my own food - proteins and veggies, with some certified gluten-free snacks in the mix - and am pretty strict about what I will/won't eat at friend's houses or in restaurants (I prefer to go to dedicated gluten-free kitchens whenever possible). I'm doing okay on the diet, but still getting glutened every so often, usually when I let me guard down outside the home. I also periodically see my primary and a naturopath (who happens to have celiac!), but still, I have many questions if anyone would care to answer:

      -FATIGUE. I'm still so tired, fatigued so much of the time. My doctors blame this on the stress of my husband's diagnosis and my periodic trouble sleeping. But even during weeks where I'm sleeping enough (8-10 hrs a day), eating right, exercising as I can, trying to keep stress at bay, I'm still so bleeping tired. Maybe not when I wake up, but by late afternoon. Often my legs even feel weak/wooden. Has anyone else experienced greater fatigue early on after being diagnosed? This will pass, yes? I know I could cut out the sweets and that could help, but also, being a caregiver is hard and sometimes it's nice to eat your feelings between therapy sessions.  

      -SYMPTOMS CAUSED BY FATIGUE? Sometimes I'll have other "feels like I've been glutened" symptoms if I haven't gotten enough sleep, though I'm trying so hard to sleep at least 8 hours a night these days. Hasn't happened in a while thankfully, but there was a point this summer where my insomnia was bad and my arms were achy and I had some crazy flank/back pain I'd never experienced before. For weeks. Doctor ordered me to sleep sleep sleep, taking Benedryl if needed. I did, and the symptoms went away, but weird, yes? Has this happened to you? I ask because I want to make sure I'm getting all strange pains tested to the full extent if there's a chance it's something other than celiac. I do sometimes still feel that strange side stitch after a CC incident.

      -SKIN PROBLEMS. I have had a smidge of eczema since I was a teen and it - and the dermatitis herpetiformis I've acquired with my dx - are out of control right now. I recognize the connection with stress, but also, has anyone found any great natural remedies for DH to stop the itching? I've tried so many useless ointments and medicated creams, a number of them given to my by a dermo months ago. I see my naturopath this week, but thought I'd ask here too.

      -MOSTLY gluten-free KITCHEN GOOD ENOUGH? My husband is supportive of my diet and mostly eats gluten free meals with me, but we still keep a gluten-y toaster for him and the gluten-y dog food in a corner of the kitchen and he still makes the occasional meal with gluten for himself on his own cookware (ravioli, pizza, mac n cheese, etc). Or sometimes I make eggs/toast and the like for him when he's too sick to move. Otherwise, we're militant about how we cook, which cookware we use, etc. He even has a kitchen nook off our den where he makes sandwiches. But sometimes I wonder if having two separate sponges in our shared-ish main kitchen is enough and I should just banish all gluten whatsoever from the kitchen. I can't be the only one with a mixed kitchen, right? How do you do it if you have a mixed-eating family?

    • Hang in there!  Count your blessings.  Do something you like to do and relax. I know that is hard to do as a young mother (as I sit here in the kitchen sipping coffee quietly as my teenager is sleeping in after a late football game last night where she marched in 90 degree plus weather in full uniform).   But seriously, take a few minutes to relax!  
    • Meredith, this is very true. A colonoscopy is for diagnosis of the lower intestine, endoscopy for the upper intestine.  How did your doctor interpret the tests? I suggest you read the link Cycling Lady gave you because it contains a lot of good information. 
    • Sorry, but this product (supplement) is not even certified gluten free.   Seems odd that a product geared to Non-Celiac Gluten Intolerance would not take the extra step of getting certified.   I guess I am a Nervous Nellie, especially after the reports that several probiotics were contaminated with gluten.   https://celiac.org/blog/2015/06/probiotics-your-friend-or-foe/
