Last night I made a meal direct from my childhood. I made salmon patties: 2 large cans pink salmon mashed with 3 eggs, 1/4 cup corn meal, salt, pepper and a sprinkle of onion powder. Used butter flavored spray and a bit of my dairy free margarine - Smart Balance and fried until brown and crispy on both sides. Served with some canned creamed corn. Yummo!

OMG, this sounds good. I can so relate to this meal from my childhood, too. I've been eyeing the can of salmon I have and wondered what to use for the "filler" part. I used to use saltines :ph34r: and figured I'd probably have to get some bread out of my freezer to use for crumbs or possibly use Rice Chex. Never would have thought of using corn meal.

Tonite we had scrambled bbq beef with chopped green pepper in it and boiled potatoes. Nothing fancy. I'm thinking to get out my frozen chucky vegetarian chili for dinner tmrw night.

Lasagna! What more can I say... it had spinach, carrot, broccoli, peppers, cottage cheese, ..and then the other usual stuff. mmmmmmmmmmmmmmmmmmmmmmmmmmmmm :)

I just made another huge batch of salmon patties using my recipe above. I am going in for surgery on Wednesday (total knee replacement) and I have been making food for DH to bring to the hospital. They will not provide gluten or dairy free items. My patties are individually wrapped right next to my frozen Katz and Udi bread. All he has to do is grab a couple and some bread and I can eat. Today I also cooked some haddock fillets that were in the freezer and cut them up and froze them.

This time I cooked the patties on an electric grill rather than a large frying pan. They came out smoother and more even and I used less dairy free margarine. Did you know that the little crispy bits around each patty are just delicious enough to munch on during the cooking time?

My friend told me she makes her salmon patties with mashed potato... That might be good too although I do love the corn meal in this recipe and it is so safe for me.

Actually I used bread crumbs (from a loaf that bombed...lol). I was going to try your corn meal and will do so in the future. Leftover mashed potato sounds good, too (wonder if you could just use instant)?

Be careful with the Lipton's onion soup. They have changed the recipe and the last box I looked at had barley.

...yes, the barley will get you if the msg doesn't :)

Chicken Marsala for us tonight (dusted in Bob's Red Mill Flour Mix). Server over rice and spring asparagus.

Going to the beach to the In-Laws for Easter Dinner/Lunch. Bringing Blazing Saddle Stew. It's a classic and remind me to post the recipe.

We had some lovely local plump gluten-free pork Cumberland sausages with garlic and buttermilk mashed potatoes and brown butter herb roasted carrots. Bangers and Mash it is called. Oh, and caramelized onion red wine sauce as is traditionally served with it. gluten-free brownies for dessert.

We had penne carbonara (pasta, sauce made of white wine, parmesean, garlic, red pepper flakes, crispy bits of BACON!), banana bread, and ice cream. Easter brunch will be cheddar frittata, ham, rosemary potatoes, and oj carrots. (My son is trying to gain some weight....)

We had cheeseless gluten-free pizza with Muir Glen pizza sauce and heavy turkey pepperoni. Turned out great! I recently tried the vegan cheese at Zpizza to see if I liked it and the taste made me ill--No offense to anyone that loves it but I had to scape all the fake cheese off and eat the gluten-free crust. Even then I was burping up the taste of the vegan cheese all night long. So that's when I decided to just do cheeseless pizza at home (my homemade gluten-free crust is better than Zpizza's anyway) and just make a good crust and go heavy on the toppings. The turkey pepperoni crisps up nicely just like cheese would and I harldy missed the cheese at all.

Grilled chicken breasts with a rub of brown sugar and paprika, cooked rice and steamed carrots. Great dipping sauce made with Chun's sweet chili asian marinade mixed with soy sauce and a dash of sesame oil.

Tonight was turkey burgers with caramelized onions and a tomato salsa (diced tomatoes, cilantro, lime juice, sugar, salt) & rice.

Tomorrow night will be a big salad (lettuce, tomatoes, green beans, orange slices, citrus vinaigrette) with green-tea poached chicken breast on top.

Had my favorite "go to" fish meal when I am hurting. Easy MW Lemon Fish. 1 1/2 lb. fish fillets (I defrosted 2 large pieces haddock, 1/2 cup dairy free margarine, 1 TBSP. cornstarch, 1 1/2 TBSP lemon juice. Melt the marg in a MW safe dish and mix in the cornstarch and lemon juice. Add the serving size fish pieces and flip flop them in the sauce and arrange them with the thickest portion towards the edge of the dish. Cover tightly with plastic wrap and cook 6 -8 minutes until fish is done and flakes. You can add some parsley and toasted almonds before cooking if you can eat them. This fish is soft and tender and very moist and the sauce is delicious spooned over cooked rice.

I was just going to say "Bread" - specifically freshly-baked Multigrain Sandwich Bread (Annalise Roberts' recipe) . But then I decided I had better turn it into a ham sandwich and chips since it's getting late to eat here.

    • Oh, Trish at the GlutenFreeWatchDog tested Planter's honey roasted peanuts three years ago.  The can did not state gluten-free, but showed no gluten ingrediants (per Kraft policy).  Test result: less than 5 part per million which is pretty much gluten-free.  
    • What if it were something else that glutened you?  Maybe you ate too much of a good thing?  I once (three months post dx) ate too much gluten-free fried chicken, vomited, passed out and fractured my back (osteoporosis) in the process.  Paramedics, ER doc and Cardio all thought I was having a heart attack.   No.  It was sheer gluttony and bad bones.  Not good to overload with a damaged gut.    Maybe you did get some contaminated nuts.  Afterall, anything processed is suspect.  What might be well tolerated by some, might be too much for others.  We all have our various levels of gluten intolerance.   The old 20 parts per million is just a guideline, but science does not really know (lack of funding......doe anyone really care enough to find out?)  My hubby has been gluten-free for 15 years.  When I was first diagnosed, I tried to eat the gluten-free foods that I normally gave him.   Problem was he was healed and I was not.  Things like Xanthan Gum in commercial processed gluten-free breads make me feel like I have been glutened, but it is just (and still is) an intolerance.  So no bread for me unless I make it myself using a different gum.   Too lazy, so I do without.   so, ask your doctor if you really want to know or lay off the cashews and test them again in a month using a certified gluten-free nut.  I wish this was easier!    
    • I have intolerances to a few foods now, so I was wondering about that.. I love cashews though, and a month or two ago I was eating them all the time with no problems at all. I mean, could I really have developed an intolerance to them since then? I don't know if they're made on shared lines (it didn't say on the package so I assumed they weren't), but I'll give them a call. I'm really, really sensitive to cross contamination. Even if something is just made in the same facility (but not on shared lines) it will make me sick. If that's not it, then I'm not really sure
    • Research with KP and find a celiac-savvy GI in your area ( read the biographies). and ask your PCP/GP for a referral to that specific GI (not his buddy).  Ask the GI for the rest  of the celiac panel or proceed with an endoscopy/biopsies -- 4 to six.  Keep eating gluten daily until all testing is complete.  Document and request in writing.  Do not worry about symptoms.  There are over 300 of them and some celiacs have none!   Research all that you can about celiac disease.  The University of Chicago has a great celiac website that has testing Information etc.   Poet me know how it works out.  Hope you feel better soon!  
    • I react to both wheat and barley.  I've opted to just go completely gluten free, for the sake of simplicity and my sanity.  I don't have a diagnosis of celiac disease, but I strongly suspect it.  Unfortunately, I'm not willing to endure the misery of staying on gluten long enough to pursue further testing.  I just know I need to avoid the gluten grains, so I do.
