Wow! Nice to be missed. When I am out at the acreage, I bring about 20,906,452 books and read my face off. Just me, Snowflake the cat and Cooper the dog, a stunning log house, trillions of birds and gazillions of trees. Oh, and 452,009,785,478 mosquitoes happily buzzing around my face and prancing around my eyeballs.

They really are adorable. I am blessed, but so are they to have me! Insert cute laughing emoticon here...

Actually, I missed a mosquito when I was counting. I was too busy drooling over my Bolognese to count properly. At least several drowned in my saliva. That helped a bit.

Does it really even get warm enough for mosquitoes there? :P

 

I just wandered in the door from working all afternoon, evening and night. Screw chicken whatever for dinner. I'm eating that pig because I have about as much energy as a half dead slug and cooking is not on my list of crap to do. Beyond that, I am mentally exhausted. Ugh!

Hoping a good night sleep restored you -- that sounded peppy -- lol -- I am not -- long week and this gal is not used to doing so much in the evening -- was in bed by 7pm last night and today is starting creaky -- but will get better -- a little birdie told me more of the dinner crowd is hurting pretty badly today -- let's all get better -- after all it is....

 

Happy Friday!?!?!??  maybe  -- there now I steal more than smileys -- got that 'little' whispering trick from MW :)

Eight am phone calls from clients in panic to wake me up? Yeah, sure, why the hell not? Vet at 11 for sick cat. Dentist at 12:30 for pain. I should have been to the dentist on Wednesday but I blocked off most of the week for this huge project due.

 

Tomorrow is the GIG gluten free fair in Utah, and lucky me it is in my city. I don't think I would have the stamina at this point to bother with it if it were more than half an hour away. I'm supposed to meet up with my best friend at some point tomorrow afternoon after that. Then there is the city carnival to go to tomorrow night too. I wanted to go tonight but my husband is working until 9 and won't get home until they're packing it in for the night.

 

Today I am feeding my husband leftover ham again. I may very well end up with a burger, fries and shake. :ph34r:

Not sure what is for dinner...but know what one item will be on Sunday -- my Dad loves crabcakes -- found this on my FunnyPage this morning -- someone copied and pasted so not sure to whom to give credit....

 

"FOR ALL YOU CRAB CAKE LOVERS!! HERE YA GO!! YES!
MARYLAND CRAB CAKES:

INGREDIENTS:
1 large egg
2½ tablespoons mayonnaise (I like Hellman’s Real)
1½ teaspoons Dijon mustard (I like Maille brand)
1 teaspoon Worcestershire sauce
1 teaspoon Old Bay seasoning
¼ teaspoon salt
¼ cup finely diced celery (you’ll need one stalk)
2 tablespoons finely chopped fresh parsley
1 pound lump crab meat*
½ cup panko (I like the Whole Foods 365 brand for this recipe)
Canola oil

DIRECTIONS:
1. Line a baking sheet with aluminum foil.

2. Combine the egg, mayonnaise, Dijon mustard, Worcestershire, Old Bay, salt, celery, and parsley in a large bowl and mix well. Add the crab meat (be sure to check the meat for any hard and sharp cartilage) and panko; gently fold mixture together until just combined, being careful not to shred the crab meat. Shape into 6 crab cakes (about ½ cup each) and place on prepared baking sheet. Cover and refrigerate for at least 1 hour.

3. Preheat a large nonstick pan to medium heat and coat with canola oil. When oil is hot, place crab cakes in pan and cook until golden brown, about 3-5 minutes per side. Be careful as oil may splatter. Serve immediately with tartar sauce or a squeeze of lemon.

Quick Tartar Sauce

Ingredients:
1 cup mayonnaise
1½ tablespoons sweet pickle relish
1 teaspoon Dijon mustard
1 tablespoon minced red onion
1-2 tablespoons lemon juice, to taste
Salt and freshly ground black pepper, to taste

Directions:
Mix all ingredients together in a small bowl. Cover and chill until ready to serve.

I had to make a difficult decision this afternoon. I could frivolously spend money on either In N Out or I could blow it on a pedi. Guess who is making her own burgers with killer awesome pink toenails? :D

So, today is Summerfest. This means that there is a huge carnival on Center Street in the middle of the city making driving a horrible nightmare. Lucky me I only live 8 blocks away. Woohoo! So, off to that this afternoon sometime for tornado fries and who knows what else that I shouldn't be eating/drinking.

 

Then a late evening dinner at Wallaby's I think. Hubs got a gift card for there from the gluten free fair today. I drive past there pretty often but always think gee, I wish I had stopped in back when it mattered... but whats the point now? I can't go out to a BBQ joint gluten free. So we get home and I look them up to see a 95% gluten free menu! I called and can't have the sauce cause of MSG and soy but so what? I'm still dying to go! I'll have the meat with the dry rub which I'm sure is still amazingly delicious.

 

I've worn myself to a thread this week. I'm nursing the beginning edge of a summer cold, and possibly an ear infection to go with it. (joy <_< ) I got my period yesterday, cause I'm sure everyone cares.  I'm sure that the histamines in the samples I tried this morning are near to hitting me soon, plus I'm going to be out in the sun this afternoon. And yet, I just am on top of the world.

 

Oh, and btw... it isn't just pink toenails. I have fancy nail art too. B)

oh, yeah, dinner:

 

italian sausage w/tomato 'gravy' in the crockpot

green salad (for him, lettuce is being mean to me :(  )

RAVIOLI (my sister loves me - brought me a bag from nj - elisa <? tested and all!)

 

last night was ruebens, pot cheese, pickles

 

night before:  more oysters -  seriously i got to quit this, ahi tuna w/pickled ginger, green onions & wasaaaaaaaaabi <tried for the first time in years and IT'S GOOD!  i have finally perfected my oysters - pancetta, shallots, garlic, pernod, oyster liquid, heavy cream, and spinach.  top with breadcrumbs mixed with olive oil and asiago cheese - i swear i am gonna stop !  tomorrow!   ^_^

Great news, I  can almost use my right hand again. Turns out the rapidly spreading horrid pain I developed on Thursday started spreading to my arm, neck, then my foot and up my leg. Then, my right lower back/near buttock was burny..so, I use a hand mirror to look backwards at myself in the mirror--not easy checking your self out back there...and I've got a good sized tick bite Bullseye rash going.

 

Aha..... that explains the creeping paralysis and throbbing digits....country living whoohoo!

Have to take the dreaded antibiotics for 14 days (no choice) and so my appetite is off. Plus, I feel kind of weird.

Doh.....was all set to hop back in my lil pool to float but thot I'd check what's for dinner and now I am drooling over oysters being served 3000 miles away and swatting my poor kindle!!! Actually thought a bug got under the glass Cuz I'm outside and feeling a bit of the ebbys all day thanks one tick that bit my buddy and bedbugs discovered in the apt next to sis today while I was on a MoveOut preinspection....creepy crawlys go away!

So this morning started off shitty when happy hubs woke up with a severe case of the grumps -- so I rode his/my bike a bit longer as I knew his primary bike is in the shop -- gave him time to understand he woke in a bad mood....all good now.

Last night we had spaghetti with some yummy crockpot sauce I let simmer all day --- it had herbs from my patio that I have not killed yet - in fact they are thriving!

Tonight is bbq chicken with baked beans - the simple bushes/maple syrup/red onion topped with bacon ones and corn for the guys...zucchini for me.

Almost talked myself outran the crab cakes....as I was being grumpy as I cannot do crab....buy picked up the ingrediants today...hope mine turn out close to that picture -- should make the three dads over here tomorrow happy :)

Edited....damn kindle turned shitty to shifty.

    • Congratuations!   You and 30% of the population carries the genes to potentially develop celiac disease.  A gene test just excludes celiac disease but can not diagnose it.   Have you been on a gluten free diet?  Is that why you were not able to take the standard celiac blood test?  
    • Back to Dr. Google for you!   A histamine intolerance is not a true IGE mediated allergic reaction.  Read up!  It does often (like many intolerances) occur with celiac disease because the small intestine is damaged.  It can resolve once the gut has healed.   celiac disease antibodies can take time to build up (in your blood stream for the test or skin).   That's why the gluten challenge is 8 to 12 weeks.  In the case of DH, you can eat something and days or weeks later, the DH rash will appear and you'll go crazy trying to figure out when you got "glutened" (but don't take any serious gluten advice from me because I don't have it).   You can have several things wrong with you and a wheat allergy and celiac disease can occur at the same time.  Add on something like Mast Cell Activation, Autoimmune Hives, Histamine Intolerance.......the list can be endless (at least that is how some of us feel.)  Of course your high school could be making you ill.  Think of all that stress!  Who knows what lurks in your building, but let's face it, you ate some gluten.  Best of luck to you on your challenge!

    • Ugh!  So, you have early stages of celiac disease and that was after being gluten light?  It is a shame that your doctor is not comfortable about giving you a formal diagnosis because you don't have enough damage!  Time for a new GI.  You can also as for another pathologist to read your biopsies, but seriously....... Have a conversation with your current doctor about the reasons why he is hesitating.  He would rather you continue to become more ill or improve your health?   Are you going to be scarred for life with a celiac disease diagnosis? Maybe he is one of those people who think it is impossible to live with wheat, rye or barley!   I don't get it! 
    • Thanks for the comments. With Dr. Google, I have seen mast cell disorder pop up.  It seems like I need to eliminate some basics before heading in that direction. So, another question...is it possible that symptoms of celiac need time to "build up" over time? For instance,  I started reintroducing gluten and coffee last week to prepare for my GI appt.  However, nothing really seemed to happen except a little knee crankyness (which I can easily attribute to hiking).  Yet, yesterday I had a huge bagel at work, had itchy forearms, and then had two huge hives appear later.  Today, I had another bagel and in a few hours I had a few red fingers that were itchy and numb feeling in the tips.   I know histamine intolerance is a possibility, but wouldn't that show up as an extremely large hive with my allergy skin test? Also, I had to go into work today and yesterday. I'm wondering if that environment could contribute to the issue (I'm a high school teacher).
