When I make soup I cook the noodles separate and add when ready to serve.  If you aren't going to have leftovers you can cook in the soup pot, but usually they will puff way up and be gross when you reheat them.

depends on the noodle.

I dunno....but I have never met a rice/corn noodle that didn't puff up so big it wanted to take over the room.  :D  

 

What brand doesn't suck up all the broth?

I use Thai Rice Noodles when I make Fettuccini.  In the beginning its nice and creamy...Yummers.  I go back to the dish five minutes later and its dried up and stuck to the pot.  The joys of gluten free cooking!

I always have cooked the noodles separately and then added them in before serving.  With the leftovers, I can add rice and change it up!

I was a lazy panda , I made my favourite easy corned beef hash with cherry tomatos

and a crunchy waldorf salad but with pecans because I had no walnuts, and a lovely ripe mango to follow,

I also made some cinder toffee to sprinkle over my mango,

I think I used too much bicarbonate of soda "gluten free" as it kind of tripled in size and then exploded all over the kitchen counter , I ended up with with a small flat piece which I crushed up and ate with my mango,

it never had many bubbles left in it after scooping it off the work top ,

It still tasted very yummy tho,

but if anyone has a decent recipe for cinder toffee I would really appreciate it thank you :)

hmm...the go-to girl for this sort of thing (love2travel) is in Croatia at the moment, but I can shoot her an email and ask her.

I see your 5 lazies and admit to sheer lethargy. Already cooked shrimp from the fish market, pre-triple-washed organic bagged hearts of romaine from the produce section and GASP! bottled caesar dressing. :lol: .

The most laborious part of that prep was opening up the bag of shaved  parmesan for the top. 

And a few cut up peaches for dessert (hubs did that part)

 

I was exhausted from all that bag-opening.

hmm... I will try and raise your sheer lethargys and Irish hearts Shrimps and bagged lettuce with some more sleepy sloth day dinners,

Thanks Irish for that cinder toffee recipe,

But tonight was a cooked dinner , so tired now, but I just had to try my new vintage mincer , it's a small cast iron one that you screw to the work top ,

I bought it because it's so hard to get minced meats in our local shops which always means a car journey to find some ,

and hubby wanted a Sheperds pie so I bought some lamb and minced it up and it worked a treat ,

I spent ages chopping and dicing onions and veggies then frying them, and boiling carrots and turnips and mashing potatoes to top it all,

hubs was waiting patiently with his knife and fork and his chopped beetroots piled on his plate ,

but as I don't trust myself with hot dishes I asked hubs to bring it to the table ,

which he did but just as he was setting it down , swoosh the pie dish slid off the baking tray plonk right on the floor :o .... we just looked at each other , erm yes we still ate it ,

we sort of scooped off the top parts which hadn't touched the floor ,

must say It was still very yummy tho :)

don't worry you bums - i'm cooking enough for a nuclear holocaust - got 25 lbs of tomatoes cooking down on the stove and that's not even for dinner...........  damb garden!!  stop making tomatoes and peppers!!!!

 

jiggles - my husband did something similar on thanksgiving one year, we had put the sweet potatoes out on the grill to keep them warm and he was hurrying to get them onto the table and *whoops* the whole tray landed in the back yard.  my dog had a feast on them, immediately or we might have salvaged some of it - lolz - stuff happens  ^_^

 

edited to add:  WHAT'S FOR DINNER (durrrr)

 

ahi tuna (marinated in soy sauce, sesame oil, garlic juice and pickled ginger/green onions that i put up in the spring - well, at least all this canning sh!t is paying off finally!!!)

roasted brussels sprouts :)  <craving those <_< jonesing real bad for some - i gots the sprout monkey on my back........... :P

I guess this is technically about my lunch... but you can't kick me off for it!  :P

 

I had a  cold quinoa salad I picked up yesterday at this cute gluten-free tea/juicing café.  It was a Mexican style?  corn, black beans, tomatoes, pepper, etc.  And I LOVED it !  I thought I didn't like quinoa but I was going to give it another shot.  Now I just have to try to make quinoa again and see if I like it.

I am making enchiladas on Friday.  When I make them I do a double recipe, and put together one in a cheap foil pan and freeze it for my own frozen convenience meal.  I make my own enchilada sauce because I dislike the tinny, flavorless kind in a can. Here is my recipe.  To make enchiladas just roll up prepared taco meat (I add black beans in the middle too) in corn tortillas, lay them out in a pan, and pour the sauce over them.  Top with cheese and bake until hot all the way through.

 

Note: You really cannot screw up enchiladas, just put things in there you think are tasty and enjoy!

 

Enchilada Sauce

 

1/8 C vegetable Oil

2 Tbsp. flour (for thickening I use half corn starch, half brown rice flour)

2 Tbsp. chili powder

8 oz. tomato sauce

1 C chicken/beef stock (or water)

½ tsp. cumin

½ tsp. garlic powder

½ tsp. onion powder

1 Tbsp. brown sugar

Salt to taste

1 tsp. oregano

Pepper to taste

Red pepper to taste

 

Heat oil over medium high heat.  Add flour and chili powder, and whisk together.  When it starts to bubble, reduce heat to low and cook for about 2 minutes when it starts to smell nice and toasty, whisking periodically.  Add liquid and seasonings, simmer a few minutes until done.  If you want to be fancy you can use actual onion/garlic and sautee it in the oil before making the roux.

 

Makes enough for an 8x12 pan of enchiladas.

Indoor (George F) grilled veggies:, tater, cauliflower, carrot, zucchini, onion and pea pods with lemon juice and sweet curry powder.  I had a piece of bacon in there, but my part time dog managed to snag that from me.  He looks like a baby seal when he pins his ears back and asks me if he can please, please, please have just a wee little bit of bacon, pretty please.

I made ZA tonight (as we call it) too.  My friend Sherry Lynn owns a dedicated gluten-free bakery

and she sent me a "care package" the other day--so sweet.

(I have recently moved to Fla---1300 miles away from her  :( ) and so, I used her flour mix to make my shell (and the rest of the dough made awesome hamburger rolls!) 

 

For toppings, I like to wash the pizza crust with a garlic olive oil bath, oregano, basil, add  BACON (Vermont maple-cured, no extras, no antibiotics, no crap in it ), sauteed shallots or red onion,  diced plum toms, sliced portabella mushrooms, and 5 cheeses: mozzarella, provolone, asiago, pecorino romano and grated parmesan-reggiano.

 

The hubs has declared it delicious. :D 

 

Now, If I only had a chocolate chip cookie.....

oh that sounds delish! well the Pamela's mix makes 2 crusts so I'm thinking a plain cheese for the kids and I think I'm going to try your recipe yum. I have cherry tomatoes, that will suffice. please post how to make a hamburger bun. I'm so tired of eating lettuce wrapped burgers!

Ok I used what I had on hand and made it similar to yours. Olive oil and fresh garlic, shredded mozzerella and parm cheeses, cherry tomatoes, and bacon. Oh it was so good! And I have leftovers for lunch tomorrow yippee

I used my friend's mix and I have no clue what her trade secret blend is.  :D

However, I have made burger buns using Bette Hagman's recipe and they turned out fabulous.

Bette was the first real G F baker and the "mother" of G F baking.

      Checkouts gluten-free recipes at twww.redstaryeast.com We tried a bread machine years ago and weren’t happy with results. Bread machines have pre-set rise & bake times.  Unfortunately, the program doesn’t adjust to slight differences when measuring, relative humidity or temperature of ingredients & in kitchens.  Lots of efforts for ONE odd- sized loaf that hard to cut into useable slices.  College-aged son found best use for bread machine was as heavy duty mixer that ‘kept dust in the box.’  He would pre-measure ingredients for 2-3 loaves & use machine mix up individual batches.      Since gluten-free bread needs  to rise only once, each recipe of dough went into a loaf pan. Pans sat counter to rise—time dependent of temp in kitchen. Then, baked in oven until he, not machine, decided it was done.     Took ~10 min extra up front to measure & mix additions but adds nothing to rise & bake times.     Loaves are great for slicing (Slice extra before freezing!). One mess to clean up, saves time & energy since you need to bake  as is half as often (If  you plan to bake lots more than bread, opt for KitchenAid/ heavy duty mixer instead.  Cover with dish towel to capture dust!)     Personally, I’m sure I had as a kid since I’ve never been a fan  of bread. .  Have been wrapping corn tortillas around things for 40+ years.  Can still get a dozen 12-pks of tortillas for same or less than price as 1 load of gluten-free bread. PLUS. the tortillas have more nutrients!

But it is a good idea to confirm with the restaurant workers for safety reasons. Regarding certain locations, I enjoy going to places such as Plant in Seoul and Sprout in Busan. Moreover, using applications like HappyCow or TripAdvisor can assist you to discover additional choices in the regions you plan to visit. One big tip: it is good to know some important Korean sentences, for example 'I cannot eat gluten' (geulluteuneul meogeul su eopseoyo)  or 'Does this have gluten?' (igeoe neun geulluteuni deureo innayo?) because they can be very helpful.       Undiagnosed (and thus untreated) celiac disease is associated with a higher chance of miscarriage. The downside of continuing to eat gluten now is increased chance of miscarriage. The downside of stopping gluten now and having to restart later to get a clear, official diagnosis is that you might have worse symptoms eating gluten after being gluten free, but it wouldn’t affect your baby. I know which one I would choose!
