That's a really cool idea, I just wish it wasn't glass. I have one glass cutting board I bought on the premise that it couldn't get CC'd and I can't stand the sound of cutting on it.  :ph34r: It's beautiful though, and a great gift for people who like glass cutting boards, shared house or not.  :)

Last night we had - grilled pork chops, black rice with some parm on top, seasoned with a little garlic and onion powder and basil olive oil, salad, homemade applesauce, brownies with ganache and raspberries and champagne.

I am still seriously considering a cutting board at that price. Just... not for me. My Grammy's kitchen has always been blue everything and our family has always been quite proud of our name. So a blue monogrammed cutting board sounds like a splendid gift if I can check my Christmas budget and see what's what. I just honestly hadn't thought much about Christmas yet.  :ph34r:

 

Sounds like last night was pork night and apple night. We're having the rest of our pork roast tonight, at least that's my plan. I'm not home to see if my husband gets into it for lunch or not. If he does I'm sure I'll manage to come up with something else.

I made Thai Chicken soup today, very spicy.  It was total yum..  Snuck in a lot of veggies that the  Irish sidekick wouldn't normally eat, like bok choy and peppers, peas besides the normal veggies.  Had it with Wally World rice.

Not much time to cook anything extravagant tonight so I made spicy roasted butternut squash, carrot and poblano soup with a drizzle of pumpkinseed oil. That's it!

We scored some bogo Malibu pre-seasoned chicken breasts at the store last night. Baked those with garlic taters. I also got some Udi's blueberry muffins on sale after I went out to vote today so that's dessert with a cup of milk.

Last night I made grilled pork chops, green beans, and red potatoes sliced up and baked with some parmesean and garlic on them.  Yummm!

 

Tonight I heated up my chicken broccoli rice cheesy casserole I made and froze last time I made it.  I love making my own frozen "stouffers meals" for when I need them!

Had a need for Junk Food.  Prepared Cincinnati Style  frozen ( S K Y L I N E) chili from Publix over corn pasta with an obscene amount of chopped onions and melted cheese.  Just  what the junk food dr. ordered.

Remember you mentioned Maple Butter the other day?  I would really love the know how to make it.  And I have my new waffle iron in hand, now I'm all ready for when Irish gets back and I get her recipe for waffles.

I wrote alfredo on my dinner planner. (I'm trying out ways to be responsible, not sure if I'm a fan.) I don't do alfredo for a variety of reasons, so I'm going to do plain old spaghetti. It's easy since I'll be cooking pasta anyway and tomatoes just don't do me in the way a huge hit of parmesan will.

 

I'm about ready to crash for the day and it's only 4:30! I still have to do dishes (because I was skipped yesterday, caught up in housework) and find energy to actually cook dinner. Life has been about 1000% more hectic than usual and I've just been running myself ragged and I need to stop. Hopefully Friday is the last day of eventfulness and life can return to the mundane that I'm more accustomed to.

Hi! You are going to have such fun with your waffle maker. I believe it is the little things that can really elevate a dish. All you do is blend soft butter with a glug or generous drizzle of maple syrup and blend well (or even do it in a mixer). Then add some ground chipotle chile or just buy it already ground. Just a shake or two. Or leave it out and just use the maple butter which, by the way, is lovely with a vanilla bean. I make all sorts of butters and sauces for pancakes such as butter rum which is yum. For your tum. Just don't use gum. Dumb, dumb, dumb.

Yes, I'm learning that these smaller details make a big difference.  I'm excited to make the butter.  Does it matter if the butter is salted or not salted?  And will a drop of vanilla extract work instead of a bean?

Ooh! I'm in the market for a waffle iron. What brand did you get? Is it Belgian style or regular?

Abbs,

 

I got a Rival.  I chose regular as opposed to Belgium because I like waffles a bit firmer, crisper instead of doughy.  If you get one ask Irish for her waffle recipe.  She told me I would love it.

Yes, vanilla extract would be fine. If you want, you can drizzle in agave syrup instead of maple. The only limit is your imagination! Orange juice and zest is lovely, too. Heck - whip in some pumpkin puree with a bit of cinnamon. You can also infuse honeys with flavour. Salted butter may be a touch salty BUT in this case, a bit of salt would be nice. I sprinkle my chocolate chip cookies and fudge brownies with salt. Soooooooo good.

      And I’m anaemic, however I’m also female and vegetarian. I had an iron trans a couple of years ago however it’s starting to dwindle and taking supplements doesn’t seem to work. I can’t seem to absorb it.

      Hi, I attended a neurologist appt last Tuesday, which I nearly cancelled, due to ongoing numbness and tingling in toes to mid foot. One of the first things he asked was ‘are you celiac’. I’m not. He thought all reflexes were ok but at the last minute decided on nerve conduction tests which were low normal. He was a little confused as he felt they should be better and tried a new set of probs, all the time, giving me multiple shocks which were not enjoyable lol. Anyway, he’s now ordered tests for myeloma, and all the vitaminy things that so many of you mention on here, also tests looking for autoimmune responses. I already have Hashimotos. Interestingly, to me, but maybe someone out there can relate or knows more than i do, although I was a nurse, but ED not ‘weird symptoms’  nurse. Anyway back to the interesting thing, I took duramine in 2013 to lose weight which caused a massive panic attack when I stopped taking it and half my hair fell out. I only took it for a week but it was horrible and I regret it. It triggered ongoing panic attacks which are horrendous. So I feel like I’m a bit crazy. Then in 2020 I had this sudden onset of horrible pain when trying to eat a cinnamon roll. It continued and I lost around 20 kgs. I had two gastroscopes and a colonoscopy and they were all normal. I scored a barium swallow and CT angiogram. All normal. The pain subsided a little but I was left with reflux and an awful feeling that I couldn’t get air when I ate some foods. This was not anxiety.  The anxiety was separate and I still maintain this. This was something to do with eating. It was like the air was thick but I wasn’t short of breath. I just had the sensation I was, then it triggered anxiety. Anyway, I had other weird things- couldn’t bend knees to shave legs in shower lol. Knees felt stiff and swollen but they weren’t. Knee WOUld swell up randomly but mri showed minimal issues. A bit of a meniscus degeneration but insignificant. Then the buzzing sensations in my head, the feeling like someone was stabbing me with something sharp. So now, I pre empted his tests, although I don’t think I’m celiac because it should have come up on gastroscopy, I’ve gone off gluten. Since Tuesday last week so 9 days. Since then I don’t appear to be as constipated, I realised I got through today without a nap and I’m not tired, maybe it’s just today and not related but I get very tired normally and sleep straight after work often, I can bend my knees and shave my legs lol, the buzzing vibrating has gone from my head, I had to call and ambulance as my heart decided we were off on a run, but we weren’t running and I’ve been a bit twitchy at bed time when trying to sleep, reflux is improving, I did get the weird suffocating feeling a bit when eating today but not as bad normall. Tingling and numbness still present and I felt like it moved up my legs a bit today but I’m a bit jittery. So I don’t know if it’s celiac disease or a gluten intolerance but I think, and it may be wishful thinking because my symptoms do make life a bit challenging, but maybe I’m feeling better. I don’t feel as cloudy. My thinking feels crisper. Like there’s no buzzing and I’m not fighting to break through the cloudiness now. I hope so much that this may help me feel a bit better moving forward. It would be a miracle as I really have struggled to work and parent and keep the house clean and I’m always anxious and exhausted.  If you get this far, please tell me if you you can relate to any of the above. Oh and tonsils out 5 years ago but before that antibiotics multiple times a year, sometimes intramuscular because they were so bad.  Op was meant to take 30 mins, it took 1.5 hours due to size of them.

      Im still not gaining weight I’m on a gluten free diet . And still having issues with constapation started priobiocs figured it would help been over two weeks . I guess it’s going to be a long road for me .

      Enlarged lymph nodes in neck and groin with celiac are not uncommon. They can take time to reduce even after going gluten-free. Monitoring is key.

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep searching for a cause?
