Speaking of applesauce, when I make it I like to infuse it with fresh rosemary or thyme and I roast my apples first. I just love the roasted flavour! :)

Change of plans. Not Thai tonight. I found some double-cut bone-in pork chops just begging to be used. So, we are having:

Smoked Chipotle and Sweet Garlic Wet Rubbed Double-Cut Grilled Chops

Twice-Baked Yukon Golds with Pancetta, Wilted Arugula, Mascarpone and Chive Oil

Melted Leeks (braised with white wine)

Chewy Chocolate Chip and Praline Cookies

Good question! There are subtle differences. I bake a cake but roast carrots. I think this article describes it better than I could!

I'll be good until I run out of that little packet from the indian grocer! It's either dried cardamon pods or tamarind pods (husk removed), I think. :D

Tonight we're having stuffed peppers again. Peppers are .25 each now, so I stuffed them with chopped onion, leftover chicken, asiago cheese, mexican quesa cheeese and Udi's crummbs. And I had finally had my corn challenge with gluten-free corn chips and salsa.

It's five hours later and so far so good, except my fingers are burning.

That could be due to cutting and stuffing the pablano peppers bare handed, but it never bothered me to stuff pablanos without gloves before.

Keep your fingers crossed for me! :o

For a cold rainy day: Hormel Turkey Chili, I was so happy to find some canned chili that is gluten and soy free, wonder of wonders! Mixed with some canned corn and rotel tomatoes, with some tortilla chips on top. Bob's cornbread on the side.

Some poblanos are pretty warm. They do that to me even if they don't taste hot. Hope you don't wear contacts...

I'm cooking babi ketjap tonight: crispy pork in a sticky-sweet sauce. A side dish is nasi: baked rice with leek, onions, scrambled egg and diced ham.

Oh, and I'm also going to bake kruidnoten :) Sinterklaas is tomorrow, and you can't have that without kruidnoten. Those are very small spiced cookies: http://www.de-chef.nl/foto/1036863854.webp I'll put the recipe in the "Going Dutch" topic for Dutch recipes.

I am thinking greens sauteed in bacon grease over red quinoa. I've never tried the red quinoa so I figured I'd need the bacon flavor as a support device. :P

THANK YOU I am so happy too--it's been trial and error for the last couple of months figuring out what I can eat, yesterday was more of a "trial" day and I'm happy to say I feel fantastic this morning. I am DEFINITELY counting my blessings that everything I ate yesterday was successful!!! :D

Thank you prickly, I'm pretty happy about that. Funny thing is, I've been postponing a challenge for ages. DP wanted me to get him a 12 pack of beer when I went to the grocery yesterday. I was looking at the corn chips, found one without soy and ta da.

Tonight we're having smoked pork butt with mashed potatoes and steamed green beans. DP is still all over his smoker with football season on. I'm pretty tired of smoked meat, but he's put up with my many food ordeals, so I'm hanging with the smoker.

Yep, corn is a tough one to eliminate from the diet and H&B products. Truth is, I'm still kind of scared of it.

Hope your pasta was good! :)

(I can't trade him, he saved me when times got really dark.) But if you ever want some smoked meat, holler, I've got it in the refrigerater and freezer. I stick it in soups and beans, stuff peppers and mushroooms with it, keep trying to come up with ideas for using it up.

We can do shredded pork nachos now! :o Ha! I know what we're having for dinner tomorrow.

Their mother never prepared anything fresh, literally everything was from cans and boxes and often way overcooked. I'm on a mission to show them the taste of freshly-cooked things. So far there are several dishes they used to dislike that have been promoted to: "I guess this is fine..." :P

      It sounds like you're dealing with a complex situation, and I can understand how frustrating it must be not to have a clear answer. Gut health can indeed play a significant role in various aspects of our well-being, including hair health.

      I have found similar benefits from thiamine. I was diagnosed with celiac at 16 and never really recovered despite strict gluten and dairy free diet and no detectable antibodies on checkup bloodworks. I’ve tried stopping the b1 but start to feel bad again- I wanted my doctors to do more extensive testing for the different thiamine transporters and enzymes which would be a better indication if I was deficient or dependent on it but everyone dismisses it (there are know genetic mutations where you need to take it daily for life). I have looked into Thiamine Responsive Megablast Anemia and I have a lot of the more mild symptoms of the disease that manifest when thiamine isn’t given to the patient such as optic neuritis… I just find the parallels interesting. i think that celiacs could be a side issue of inflammation that resulted from vitamin deficiencies. I was eating a lot of sugar leading up to my diagnosis and since eating gluten free didn’t make me feel much better, I’m wondering if this was more the underlying issue (sugar heavily depletes b1). I usually take 1.5g thiamine a day.

      Thank you for your welcome and reply.  Yes I've been carefully reading labels looking for everything in bold and have been amazed by what I have seen. However Heinz tomato and basil soup is wheat free so I m thinking I already have ulcers?  The acid could be causing the pain . My pain always starts in one place then follows the same route through me . GP confirmed that is the route of our digestive system.  So much pain from stabbing to tearing. If I throw in milk with lactose it's horrific.  Many years of it now, won't go into details but been seeing a consultant for a supposedly different problem . Wondering what damage has been done over the years. Many thanks for your reply. Wishing you the very best.

      Welcome to the forum community, @Fluka66! Did you realize that the vast majority of all canned soups use wheat starch as a thickener, including such common commodities as Campbell's tomato soup?

      Hello. Any help would really steady my nerves right now. I realised recently that certain food left me in agonising pain so eliminated from my diet. I also have a swollen lymph node. My very caring Dr did some blood tests and I went back the other day to see another equally caring Dr . She looked at the test results one result has come back with something wrong. It came very fast so I'm afraid I didn't catch what it was. Anyway the urgent referral to ENT. She did say as I had already eliminated gluten it wouldn't say anything on the results and neither Drs nor I were prepared to reintroduce gluten . I've just had some tomato soup and again in agony only thinking this must have aggravated maybe existing problems. Does anyone know what I'm facing now ? My swollen lymph node , pain when eating gluten and lactose and I'm assuming the acidity of tomatoes triggering pain.  I'm trying to stay calm and to be honest I've been in intolerable pain at times rendering me unable to stand up straight but I've always just got on with it . Guess I'm reaching out and would really appreciate any wise or unwise words at this stage. Wishing you all the very best as you live with this illness. Fluka66
