Well I didn't want to cook and I needed to get out of the house. So hubby and I had a date night. We packed a little picnic lunch of sandwiches on Rudi's and some salad and went to the beach. Picked up some chips and salsa on the way there because hubby was really hungry.

Vegetable pasta!

dice up pumpkin, carrot and sweet potato and bake

chop up onion, capsicum, mushrooms, snow peas and green beans then stir-fry

in a pot pour in 2 tins of coconut cream, some garlic and chives then let simmer

when the stir-fried veges are cooked, and other veges are roasted, add them to the cream and leave to simmer

boil up some fettucini (san remo is what we use)

YUMMY!!!

Brat pattie (Johnsonville) and sweet potato fries. I don't feel like cooking either.

What brand sweet potato fries do you buy? I got some today at Wal Mart. Didn't say gluten-free, but read the ingredients and didn't see any. Here's hoping for the best.

I like Johsonville. Their brats don't have enough msg to bother me unless I eat them several days in a row.

I like Johsonville. Their brats don't have enough msg to bother me unless I eat them several days in a row.

I bought OreIda fries...the package is marked gluten-free but it's really hidden way down on the side (like almost at the bottom). Nothing like announcing it clearly, huh? I've bought them at Wal-Mart before but yesterday I got them at Food Lion.

The brat patties were just okay...at least fast and easy to fix. I prefer their Italian sausages though.

Mmm, I just finished prepping dinner so it'll be quick to throw together when my fiance comes home.

I made steak with a marinade of tamari, ketchup, olive oil, basil, garlic, and a bit of honey. The other-half will grill it for me.

Bought some good-looking semi-locally grown green beans to steam, along with brown rice.

They had really ripe plums at Whole Foods that I couldn't resist, so I mixed up some homemade whipped cream with mascarpone cheese, vanilla, and honey.

I feel gourmet- it's been a long time since I've been well enough to cook a big meal like this. Good thing someone else does the dishes, though!

A bowl of butter with a few potatoes in it.

That sounds really good.

My husband teases me about hoarding butter. It's cheapest at Costco so whenever we are there I'll grab a few pounds whether I need them or not. Right now I probably have 9 or 10 pounds of butter scattered in our 3 freezers and 2 fridges.

I like butter :D

We like butter a little too much at our house. Last time butter went on sale from $5.99/lb to $3.99/lb we bought 25 lb of the stuff. Thankfully we have two large freezes in addition to our two fridge freezers! A lot for only two of us, I know. We can be gluttons at times... :P

Corn on the cob (grilling first for the char then creaming it with roasted red peppers, etc.)

Fresh sheep cheese from a local farm drizzled with our best olive oil from Croatia scattered with fresh herbs from the garden

Grilled nectarines with peppered creme fraiche

(He didn't starve...had left-over pork and chicken and potatos. I'm tired and need to whip up somthing for lunch tomorrow... I can do it! B)

I've been nursing a broken heart so, this was dinner some nights lately. Tonight I am managing baked chicken with avocados. I actually ate a Nathans hotdog on a Udi bun last night and it was awesome. Since I've been eating whole food, I was kinda scared to eat it, but not too much problems today. I sprinkled alittle water on top of the bun and warmed it in foil. It was good! First time hotdog in a year.

No cooking here. I am worn out and it was warm here. Not hot but uncomfortable. For daughter there was leftover Mexican rice with veggies and chicken and some good Mexican cheese sprinkled over. Also corn tortillas and black olives. I just had bean tacos with cheese and olives. Should have had veggies, I know. But I didn't.

Leftovers from last night - goat stew and rice but this time with a salad of arugula, mustard greens, endive, baby beet leaves; grilled pears; toasted pecans and fresh sheep's cheese with a grapefruit tarragon vinaigrette.

Today is my birthday, and our original plans had to be scrapped due to car problems, so ordered pizza from Chicago Connection for lunch, and had leftovers for dinner :). I got a gluten-free Hawiian(sp?) pizza... yum. And they also gave me a free gluten- free (pre- packaged) brownie--- i didn't even know they had them there! And a coupon for another free one the next time I order a gluten-free pizza :) the brownie was good!

Used Gluten- Free Pantry decadent chocolate cake mix to make my birthday cake. And coconut/ pecan frosting--- works for a german choc cake for me! :)

I wanted a 2- layer cake (love the frosting between the layers), but it's just me & DH here, didn't want a whole ton of left- over cake. So just baked one layer in a round cake pan, let it cool, cut it in half, frosted the bottom half, then put the top on & frosted it :). It may not have been super perfect, but I liked how it turned out!

And from what I've tasted of the cake (waiting till desert time for my big piece of the day. and of course, i will have ice cream, too!) it was yummy... would never have been able to tell it is gluten-free!!

On the back of the box is also a recipe for cupcakes (using the mix, of course) I think it would be a good idea to make up a batch of those & have in the freezer to grab to take to picnics, ect.

Nachos. Too %#@$%^( hot too cook or eat anything. Of course, I was baking half the day, so my kitchen was hot anyway, but still... :ph34r:

      @Shireen32,  Take some deep breaths.  Your labs are fine!  Your tTg IgA is so low!  Well done!  Your endomysial IgA is fine.  There's not a level on the endomysial test.  It's just "yes or no" for if you have celiac disease.   No, it's too early to call it refractory. What are you eating?  Please tell us more than meat and veg. Do you consume dairy? Do you consume processed gluten free foods?   Are you taking any prescription medications, herbal supplements, vitamins and minerals?

      thank you knitty kitty I don't have a vitamin deficiency and I supplement omegas.  Are there other more mild symptoms that co-occur with your joint pain as well @Moodiefoodie? I am suspicious my own joint pain could be related to another autoimmune issue. I am wondering if it is Crohn's or something similar because I've continued to experience some issues despite having normal celiac antibody levels. What have you considered?

      Yes, it could be. Anti histamines help with the symptoms but I don't really like to take them long term.

      There is a product call Quinoa Flakes that might be a good substitute for oats.
