Something with chicken and potatoes....I haven't decided yet! I'm trying to clean out my cupboards and cabinets for a move so we will also have some canned pineapple or canned manderine oranges. I also need to cook some dried pinto beans but we just had red beans and rice last night so I'm trying to space out my beans... :P

Mmmmm...pineapple and mandarin oranges spell out ambrosia (if you like coconut, etc.). When do you move again?

End of this month. I thought of Ambrosia but I'm not sure how to make it dairy and soy free. We often do just mix up canned fruit with fresh or frozen though and make fruit salad. I also have frozen strawberries and frozen blueberries to eat down. hmmm...maybe I'll just skip the chicken tonight and make mixed berry pancakes...Then again I need at least one more day of leftovers to send with hubby to work tommorrow. Some type of Hawaiian chicken with the pineapple is a possibility too. Sometimes I have so many ideas rolling around in my head and everything sounds good to me I can't decide! :D

Oh, yes. I had forgotten about dairy/soy free in ambrosia. I know what you mean about so many ideas rolling around in your mind! Hawaiian chicken sounds delicious, too. When I cook I also plan ahead for leftovers to send with my husband to work. Sometimes his lunches are better than mine! :D

We are in a tiny apartment in the city moving to a townhouse (still in the city but a step up and a better location). We will be allowed to have a grill there and we even bought one already (shh! don't tell my landlord--we didn't buy a propane tank and are keeping it in the box until the move ) since they were on sale for the fourth of July here. I'm very excited about grilling things all throughout August and September (and probably even in October and November since we don't have a heavy winter here in the South) once we move. Anyway, I'm trying to clear out my pantry and my chest freezer especially to make the move easier. My pantry is a stand alone cabinet that I have also been using for a microwave stand since I have a tiny galley kitchen in this little apartment. I want to get rid of the cabinet before the move since my new place has a pantry closet and nowhere to put the cabinet. So I'm trying to eat it down as much as possible. Sometime around next week I will list it on craigslist as free to whoever can come get it. It's in good condition but it is particle board and has some scratches. I just want to get as as much out of it as possible. I have a bunch of canned goods that I keep for the hurricane season emergency stash. I find I hardly ever eat canned stuff however. I prefer fresh or frozen if it has to be preserved. So we'll be eating a lot of canned fruit, canned green beans, canned corn, tuna, toamtoes, chickpeas, and beans just to eat them up. I have a bunch of corn tortillas in my freezer too so we will probably have several interesting nacho/taco meals with the beans. I like to make corn chips in the oven from the corn tortillas and bean dips/hummus to dip it in. A lot of our meals will be snacks it looks like.

Well I decided to do Strawberry Buckwheat pancakes with blueberry maple syrup, turkey bacon and eggs. Looked in the fridge and saw that we had a half package of un-cooked turkey bacon from the weekend and I don't want it to go bad. We also have about 4 dozen eggs so I might as well use those up. The perfect excuse to make Strawberry pancakes. :) <---We really need a drooling or yummy emoticon.

I just got home and smelled fish. Turns out my partner had just eaten sardines. I thought I'd try some and had the whole can, oh, and some fresh strawberries. I don't feel at all like I missed dinner :P

(I did have a stir-fry with duck and broccoli earlier, though)

This turned out great! It makes A LOT of sweet and sour chicken, however. We've been eating the leftovers for two days. I served mine with steamed broccoli instead of bell peppers. Really any stir fried or steamed veggies and rice would be good with it.

I'm glad you liked it too! I LOVE Asian food and I'm always trying new recipes. If you like orange chicken you have to try this recipe: http://crockpot365.blogspot.com/2009/09/slow-cooker-orange-chicken-recipe.html

It's my favorite! So good! The only thing I do differently from her recipe is I add lots of red pepper flakes at the end of cooking. I like my orange chicken a little spicey.

Leftover spicy rubbed pork baby back ribs with homemade apple butter sauce. With our leftover black garlic wild mushroom risotto I am making arancini. Grilled butternut squash with vanilla bean vinaigrette and goat cheese.

      I'm also a nurse, but one who has worked in chronic care, and to some extent, it is more satisfying to see patients through to a diagnosis (as opposed to working in the ED), but an accurate diagnosis does not occur not as often as it should! Your posting presents a lot of information. But a couple of things I can respond to. One, celiac disease is diagnosed by endoscopy and biopsy of the duodenum. So, pathology will need to weigh in. It's not diagnosed on gastroscopy. (At least, not as far as I know). Two, did you get blood tests for celiac disease? You will need to be eating gluten in order for those to be accurate. Three, where was the CT angiogram (of what)? I could go on and on, but thought I'd start there.

      Was a biopsy done when you had your gastroscopy? Concerning your anemia, are you B12 deficient? It's nearly impossible to get sufficient B12 if you are a vegetarian unless you take supplements.

      And I’m anaemic, however I’m also female and vegetarian. I had an iron trans a couple of years ago however it’s starting to dwindle and taking supplements doesn’t seem to work. I can’t seem to absorb it.

      Hi, I attended a neurologist appt last Tuesday, which I nearly cancelled, due to ongoing numbness and tingling in toes to mid foot. One of the first things he asked was ‘are you celiac’. I’m not. He thought all reflexes were ok but at the last minute decided on nerve conduction tests which were low normal. He was a little confused as he felt they should be better and tried a new set of probs, all the time, giving me multiple shocks which were not enjoyable lol. Anyway, he’s now ordered tests for myeloma, and all the vitaminy things that so many of you mention on here, also tests looking for autoimmune responses. I already have Hashimotos. Interestingly, to me, but maybe someone out there can relate or knows more than i do, although I was a nurse, but ED not ‘weird symptoms’  nurse. Anyway back to the interesting thing, I took duramine in 2013 to lose weight which caused a massive panic attack when I stopped taking it and half my hair fell out. I only took it for a week but it was horrible and I regret it. It triggered ongoing panic attacks which are horrendous. So I feel like I’m a bit crazy. Then in 2020 I had this sudden onset of horrible pain when trying to eat a cinnamon roll. It continued and I lost around 20 kgs. I had two gastroscopes and a colonoscopy and they were all normal. I scored a barium swallow and CT angiogram. All normal. The pain subsided a little but I was left with reflux and an awful feeling that I couldn’t get air when I ate some foods. This was not anxiety.  The anxiety was separate and I still maintain this. This was something to do with eating. It was like the air was thick but I wasn’t short of breath. I just had the sensation I was, then it triggered anxiety. Anyway, I had other weird things- couldn’t bend knees to shave legs in shower lol. Knees felt stiff and swollen but they weren’t. Knee WOUld swell up randomly but mri showed minimal issues. A bit of a meniscus degeneration but insignificant. Then the buzzing sensations in my head, the feeling like someone was stabbing me with something sharp. So now, I pre empted his tests, although I don’t think I’m celiac because it should have come up on gastroscopy, I’ve gone off gluten. Since Tuesday last week so 9 days. Since then I don’t appear to be as constipated, I realised I got through today without a nap and I’m not tired, maybe it’s just today and not related but I get very tired normally and sleep straight after work often, I can bend my knees and shave my legs lol, the buzzing vibrating has gone from my head, I had to call and ambulance as my heart decided we were off on a run, but we weren’t running and I’ve been a bit twitchy at bed time when trying to sleep, reflux is improving, I did get the weird suffocating feeling a bit when eating today but not as bad normall. Tingling and numbness still present and I felt like it moved up my legs a bit today but I’m a bit jittery. So I don’t know if it’s celiac disease or a gluten intolerance but I think, and it may be wishful thinking because my symptoms do make life a bit challenging, but maybe I’m feeling better. I don’t feel as cloudy. My thinking feels crisper. Like there’s no buzzing and I’m not fighting to break through the cloudiness now. I hope so much that this may help me feel a bit better moving forward. It would be a miracle as I really have struggled to work and parent and keep the house clean and I’m always anxious and exhausted.  If you get this far, please tell me if you you can relate to any of the above. Oh and tonsils out 5 years ago but before that antibiotics multiple times a year, sometimes intramuscular because they were so bad.  Op was meant to take 30 mins, it took 1.5 hours due to size of them.

      Im still not gaining weight I’m on a gluten free diet . And still having issues with constapation started priobiocs figured it would help been over two weeks . I guess it’s going to be a long road for me .
