Last night our burgers had filled us up too much so I am making the homemade gnocchi today instead.  Going to serve it with broccoli and a simple tomato and cheese sauce.

My gnocchi turned out great.  I made a royal mess in the kitchen, though.  Had a poofy spill of xanthan gum, and like an idiot I applied water to the dust to help clean it off.  Oh boy....

Whew....kids and kidlets off.  Daughter and grands flew to their new home in Ohio yesterday.  My youngest man just headed out with his brother-in-law for a 2400 mile adventure from California to Ohio :)

 

I see I have some catching up to do:

 

Fudge freezes -- when I make -- I wrap half of the double batch in foil then put in a ziploc -- freezes great and so much easier than making it twice ;)

 

Yet another week I want to move in with Irish -- yum!

 

Arlene -- so sorry to hear this sad news -- losses of those so young is a very tough thing on any community - hugs.  But loving the fancy cucumber sauce idea...I'm all about the sauces lately.

 

I think dinner is something very similar to Anna's post -- I can eat all of that :D

 

also need to check out the gnocchi idea for the men -- once the youngest gets back -- welcome home dinner next week -- yep, missing him already!

Tonight we're having breakfast for dinner. Pancakes and bacon. I'm sulking and want comfort food. Yesterday I had what should have been my first stellate ganglion block, unfortunately it failed which means that my CRPS is too advanced for them to ever be successful so it will also be my last. So now I'm exploring other options, none of which are appealing. Of course, there isn't anything appealing about having a needle shoved in your neck past your jugular vain either. They sedated me for that crap, no way in hell I was letting someone do that to me completely aware. :ph34r:

I haven't decided yet- But I wanted to try and make some gluten free bread rolls tonight. I made some last night with no yeast and they came out a little too flat. Delicious, but flat. I forgot what fresh baked bread smelled and tasted like.

The cherry tree needed picking, I think that by the time they were ready half went to the birds. <_< We still got way more than any two, or even four people could possibly eat. My husband thought he wanted to make maraschino cherries until I told him that they take booze. :lol: I'm going to price it tomorrow, but we don't want to experiment with something we may not like by spending more than we want to. We're also going to just go for the sugary, "gross" version also. And maybe I'll even manage a pie. The birds were kind enough to leave all the pits from what they were eating, so I'm saving all the pits to try a heating pad for myself from them. I've heard that cherry pit heating pads are epic, but for the work they take it isn't something I'll likely ever do for others. :ph34r:

I love cherries!  They freeze really well, too.  They add really good sweetness to smoothies by just adding a few.

 

Today we had grilled chicken, green beans, and potatoes.  (Those bacon au gratin steakhouse potatoes from a box.... one of the few box things I can/will make, lol!)

 

I prepared a pot roast for the crock pot so all I have to do is turn it on tomorrow when I go to IVIG, and then well eat off that the next few days.  I also made banana nut muffins today that turned out pretty good.  No better way to use up brown bananas.

Hubs birthday ... Unfortunately he is one sick pup for the past five days...doc sent him to ER yesterday to rule out meningitis ... They ruled out bacterial, but think viral is likely....thankfully viral is the type you want IF you ever have to get either.

Birthday dinner and cake will be postponed...hopefully he'll be able to enjoy by Father's Day.

I've been eating simply chicken and veggies for past several days to make sure I avoid as many reactions as possible to take care of my sweetie.

Off for a short walk....have a great day folks!

Laura, I noticed you mentioned IVIG. I am new to this Celiac forum so there is much I do not know about this disease. I hope I am not being too personal but is the IVIG ever used for Celiac or is this another disorder. I also have ITP and my hematologist has suggested that IVIG may be in my future. Would love to hear your experience with it.

HBD to D. My dad would have been 90 today.  ^_^ good day for a Bday.

 

Sorry about him not feeling well still...... I *think* I am over what I had...and the neck pain was miserable. Ah, this is a never-ending fun ride some days.

lol

 

Off for a short walk and some errands myself. Cheers all. 

 

I am going with a turkey burger tonight with a side of zoodles as my gut is still wondering 'what the hell happened last week"?

happy bday to your hubby :)  and hope he is on the mend!!!  

 

mine is back on the road.  he was home long enough to finish putting our veggies into the garden (yah.  i can't run that rototiller - can you imagine, lolz, 119 lb me trying to hold the beast back.... ^_^ )  now, as it continues to storm and rain today, i feel better about the purpose of the crappy weather:  God sent it to water my veggies  ;)  not to just have the grandson drive me bonkers all day  :lol:

 

i am having the unservable (as in i dare not make this and serve it to mr. meat and potatoes)  

fried goat cheese w/honey

yellow squash 'noodles'

bacon.  <yup.  just bacon.  because............  wait a minute.  i forgot where i was for a second.  i do not have to justify bacon here  :lol:  :lol:  :P

Maybe I should make some of that sauce for my zoodles? .

No real recipe....just throw big bunch of cilantro OR basil in the blender with a couple cloves of garlic or some scallions with some salt and sugar (sometimes I use sugar, sometimes agave) to taste....makes all those same foods taste different ;)

Used to use olive oil in it....sometimes still do, sometimes I just thin with a little water or cream.

Clear as chocolate mousse???

I have put a beef chuck roast in the crockpot with onions and a bit of BBQ sauce.  It sat all night with a "rub" on it.  Hoping to shred it and add more BBQ sauce for sandwiches.  Making a non-mayo coleslaw, too.

I have a pork loin to roast tonight and some chicken breasts to grill. I'm getting a little tired of my normal routine. Anyone have a good spice rub for the pork? Aherm.. I see Karen you have a rub mentioned in your post???

The rub was just salt, pepper, smoked paprika & garlic powder.  Haven't eaten it yet, so we will see.    For pork, we like to marinate in Worcestershire sauce, garlic and black pepper.

When I do my own rub for a pork loin or tenderloin I usually do rosemary, fresh chopped garlic, salt (a lot) and fresh ground pepper. It gets a beautiful crispy crust in the rotisserie but I'm sure would also be delicious just roasted or in a crockpot.

Hi Patti!  IVIG is not used for Celiac.  I have common variable immunodeficiency with low IgG and IgA and reduced vaccine response.  So I get a 40 gram IVIG infusion every 4 weeks.  I also have lupus.  

IVIG can be utilized in a lot of different conditions other than hypogammaglobulinemia (low immunoglobulins) and usually those uses are rare, but there is a lot of new research.  Cost is a big hurdle, as one infusion usually is around 15 thousand dollars (us).  Other than that you just sit there and get an infusion, most people get moderate headache afterwards but that can be reduced with benadryl, tylenol, and drinking as much water as you can.  Hopefully if you need IVIG infusions for your ITP it will be a temporary thing.

 

If they decide to start you on IVIG send me a private message if you'd like, I wouldn't mind a good chat :)

Tonight we're having steak fajitas and homemade horchata. One of my very favorite things.

 

A neighbor had some herbs taking over her garden so wanted some friendly souls to come take away some of them. As soon as I have a little shade I'll be out transplanting some chives, cilantro and parsley. I just keep adding to my garden completely by accident. B) For now I'm getting a break from those damned cherries. I don't think I ever realized what a pain in the butt they are to get cleaned and pitted so I can get on with actually DOING something with them. <_<

Thank you both for your rub/marinade ideas! I tried a rub that was a little too peppery (as in chili peppery) last time. It was good but it struck me as imbalanced.

I use a number of different rubs, bastes and marinades, but if you have not checked out Leite's Culinaria, yet...please do.

 

There are a lot of rubs and spice blends on there and our very own Love2Travel likes that site.

 

She recently sent me an email, BTW everyone and she and her hubs are in their home in Croatia and acclimating to life. She is doing great--so very happy! ( out of that damn cold weather in Alberta, for starters. ) She sends xx and oo

 

And I love this site too and I have his Portuguese cook book...good stuff :)

      I walk fast for fitness, 4 to 6 km per day. I am also 74 years old. Apart from the Celiac challenge, my lifestyle is healthy. I had a sciatiac nerve pinching under my one foot, with inflamation in my whole shin. It was almost cured, when the other shin started paining and burning. I do stretches, use a natural cooling gel and rest my feet. Can Celiac cause muscle pains/inflamation, or is it just over-excercising?

I must admit their low prices are also quite tempting. However, I am curious as to the labeling on all their packages. While none of their products are certified as gluten-free, many are identified as 'GLUTEN FREE' on the packaging. Are these items safe for celiacs? Has anyone tried Trader Joe's products and have there been any adverse reactions?
