You can all come over for some! ^_^ My husband was poking fun at me because they didn't have "nooks and crannies" when I split them. But they're light and fluffy and ohmygawd! I don't know if it's that it's been so long or that they're simply wonderful but he even said they were really good so I'm going with option B. Better hurry if you're gonna get here before they're all gone!

Aren't these the most beautiful thing in the world? Maybe not having an english muffin in 3 years has simply made me crazy, but the 20 minute wait to pop one open after taking them out of the oven is KILLING ME!

There are frozen English Muffins at my grocery store--I can't remember the brand off hand.  Have you tried them?  I'm hesitant to spend $8 on them if they are awful.  I used to eat English Muffins for breakfast frequently.  

 

I wonder if you can make English Muffin bread with your recipe as well?

Who pays $8 for english muffins? I still haven't talked myself into the baguette that everyone says is awesome and it's "only" $7. One day. Maybe. $7? GAH!

J and I made english muffins more than once and I thought they just tasted like any other homemade G F bread product...like a fluffy roll. 

 

Did you think they were "English muffins" for "reals"? ^_^ .

I do. I pay $8 for them--- because my hubs really  likes them and all the ones we made (using up all that flour and starch that costs just as much) tastes like a roll. He doesn't want a roll. He wants an English muffin. ^_^

And he should have one that's as close to the real deal as it gets.

Yes. I am just blazing through the book! I went last week and bought 5 more pounds of rice flour and I'll probably need more again next month. :ph34r:

 

My husband says that they didn't taste like and english muffin to him. For me? It's been 3 years. I'm not sure I remember exactly what they're supposed to taste like. They were bready, light, fluffy, they split like a frickin' dream with a fork. Toast beautifully and are melt in your mouth perfect. English muffin? I can't say because it's been too long. But it's delicious and perfect and I'll for sure be making them again and again and again.... They'll also hold up really well for breakfast sandwiches. I just wish I wasn't so awful at making them into actual circles. Some of them were rather oblong. :lol:

j/k, but i have been busier than a one legged man in an ass kicking contest.  this weekend i had so many things to do ANYWAY but after we got daughter, grandsons and their 2 cats and dog out of the house, they left me a wonderful gift:  flea infestation.  (we don't have any pets anymore) so, have been vacuuming, vacuuming, trying this and that to NOT have to bomb the house.  i think we are losing.......   :blink:   didn't want to poison the whole place, but it looks like it is inevitable.  going to buy bombs today.  even when we had dogs, we have *never* had a problem.  i hate everybody.

 

and that's why dinner is macaroni and cheese, because it's comfort food.  and it goes well with tears of frustration.   :mellow:  (and bacon)  ^_^

I haven't made the English muffins from ATK yet...but the biscuits were awesome. Thanks again Irish....think I'm going to make a batch to top a chicken pot pie type casserole for tonight...if a can stop snuggly my little Sandie doggie long enough to cook ;)

I'll check my cookbook later when I'm in the kitchen, but my guess is there is something in the front of the book about how you're not allowed to post their crap on the interwebz. But even if I can, I can't recommend enough getting that book! There are just too many awesome things in it.

 

I think tonight we're going to have some chile and garlic chicken and mac & cheese and some whatever veggie I find in the freezer first. I'm far too lazy to put effort into food right now. I'm in high gear getting food ready for comic con so the daily stuff is gonna have to just take a hit.

 

I'm thinking it's pedi day!

I don't often say this about a gluten-free cookbook as I generally cook from regular recipes and just make necessary subs for gluten, but the ATK gluten-free book is worth purchasing.

I'm the same way. I look up recipes online, use an AP flour as a sub in my regular recipes and generally get along just fine. This is my first gluten-free cookbook and it was a gift. Honestly, I don't know how I survived the last 2 1/2 years without it. I'd rescue it if the house was burning down!

I own this ATK cookbook, I gave it to 2 friends as gifts and I admit I have not made a single thing from it yet.

:D but that's only because my thighs do not need any of those things right now.

 

I also own several other cookbooks, several gluten-free ones too and I love to recipe search, adapt and create. Even though I am a decent cook and baker, we never stop learning and playing with our food. One of the ways to get over fearing food and being intimidated by the G F life is to embrace cooking and baking once more. 

 

For the relatively fair price and the information presented in the book, I'd suggest buying it as well, icelandgirl.

All this cook book talk! It's making me want to get out of bed and cook something, but alas, it's 1am and I don't wanna get up and shouldn't eat this late. But I did kill it at Aldi's today! I was able to buy some fresh fruits and veggies (first time in a while), and tomorrow I'm gonna hit them up for some fresh meats (forgot my "stays cold" bag at home today

I totally agree with everyone on this!

 

Today we went out to a local italian place and I had chicken marsala with sauteed spinach.  Was pretty good!  About to make nachos for a late dinner.

Make you some nachos!!!!!!  I know you cook for one, if you make your taco meat moist, like put some tomato sauce in there, it freezes really well.  I will make a pound at a time and that is 2 meals for the hubby and I, I just put the rest in ziplocs or a tupperware thing and freeze it.  Meat, cheese, chips.  Refried beans (bush's are gluten-free) are really good smeared on the chip first, too.  Pile it on!  I like the tostitos restaurant style chips because they are big, flat, and sturdy.  Frito lay and says gluten-free on the back.

 

When I first was told I needed to go gluten-free (When they forgot to tell me I had celiac yet) the first meal I made was nachos.  I was like, oh, this isn't gonna be THAT bad!  Memories...  One time newly diagnosed we made a late night trip to walmart and my husband wanted to get himself some taco bell.  We had gotten a bag of cheetos and I ate nearly the whole thing out of sadness.  Never was a huge fan of taco bell since there are much better Mexican fast food places in TX, but its the whole mourning my ability to eat what I want kind of thing.  

 

Speaking of Taco Bell, I read on a food blog that someone is coming out with nacho cheese taco shells in the grocery store.  I want to say it was old el paso, I hope they turn out to be gluten-free because I will scarf that down for sure!!!

The nacho cheese taco shells are Old El Paso. They are gluten free. They are okay, but not awesome. I was not impressed. My husband brought them home instead of the usual white corn ones for me this last week. I'm glad we tried them, but I won't be eating them again. I'll stick to my white corn hard shells when I do hard shells.

I'm making a pork roast with oven browned potatoes tonight.  I haven't had this in a long, long time.  You need a fatty roast to make it work and they just trim too much fat off meat these days.  I got a larger pork steak that was well marbled so I'm hoping it works.  The juices/fat from the roast caramelize the potatoes and they are oh so yummy..oh so not good for you but who cares :D.

      Do you have online access to your celiac panel test results such that you could post them? tTG-IGG is kind of a secondary test. A weak positive in that one could indicate celiac disease but since it isn't as specific a marker as the tTG-IGA it is not real convincing. You could also have NCGS (Non Celiac Gluten Sensitivity) for which there is no test. Celiac disease must first be ruled out. It is 10x more common than celiac disease and shares many of the same symptoms. Some experts believe it can be a precursor to celiac disease. The antidote for both is the same: total avoidance of gluten.

      I haven't been on this forum for a long time, but it was absolutely wonderful during the diagnostic process!  My path for celiac disease diagnosis was the following: -Had normal IgA level, and my only serology positive test was the DGP IgG -Deficiencies in both Vitamins D and K that did not increase at first despite massive supplementation -Diagnosis of fat malabsorption both total and neutral -Diagnosis of severe exocrine pancreatic insufficiency (EPI) -Testing was completed to rule out causes of EPI, and the only one not ruled out was celiac. -Both traditional endoscopy and pill capsule endoscopy yielded negative results for biopsy confirmation, but my GI doctor said that both procedures simply could have missed the damaged spots. -EPI and fat malabsorption resolved after taking Creon for 6 months since my EPI was caused by celiac -23 and Me said I don't have either of the two prominent genes for celiac disease   Remember that you might not have 'textbook' symptoms, but you still may have celiac disease.   Also, I am SO incredibly grateful for this site for all the learning it has allowed me to do. I have a senior dog, and these last few weeks with her were very scary! After two hospital stays, she finally received an IBD diagnosis after having gastroenteritis and pancreatitis. I know that celiac disease is not IBD, however, through reading this site, I learned more about it. I was relieved when I found out she had IBD and not cancer this past Wednesday. I know IBD can be managed thanks to what I've learned here!  So celiac.com, not only did you help me, but you helped my pup too! Thank you ❤️

      It was tTG IGG that was flagged high. I'm not sure about the other stuff. I'm still eating my normal stuff.

      Thank you for your post, @Nedast, and welcome to the forum. It is interesting to read of your experiences. Although I've not had TMJ, from time to time I have had a bit of mild pain in my jaw, sharp stabbing pains and tingling in my face which appears to have been caused by issues with my trigeminal nerve.  I read that sometimes a damaged trigeminal nerve in coeliacs can heal after adopting a gluten free diet.  I try to keep out of cold winds or wear a scarf over my face when it is cold and windy, those conditions tend to be my 'trigger' but I do think that staying clear of gluten has helped.  Also, sleeping with a rolled up towel under my neck is a tip I picked up online, again, that seems to bring benefits. Thank you again for your input - living with this sort of pain can be very hard, so it is good to be able to share advice.
